Categories     Thanksgiving     main dish     side dish

Time 45m

Yield 8 servings

Number Of Ingredients 9

1 head Cabbage, Cut Into 6 Or 8 Wedges
2 tbsp. Butter, Plus More For Greasing The Pan
2 tbsp. Flour
1 1/2 c. Milk
1 whole Container Cheez Wiz
Salt And Pepper, to taste
1 c. Grated Pepper Jack Cheese
1 whole Jalapeno Pepper, Sliced Into Rounds, Seeds Removed
Paprika For Sprinkling

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch-by-9-inch baking pan. Bring a medium pot of lightly salted water to a boil. Parboil the wedges of cabbage for 1 - 2 minutes. Drain very well, slice off the cores, then arrange in the prepared baking dish. In a nonstick skillet over medium heat, melt the butter. Whisk in the flour and cook for a minute or two. Whisk in the milk and cook until beginning to thicken. Turn off the heat and stir in the Cheez Wiz. Sprinkle in salt and pepper, then stir in the grated pepper jack. Pour over the cabbage. CABBAGE WEDGES WITH CHEESE SAUCE

Cabbage Wedges With Cheese Sauce image

We celebrate St Patrick's Day with a big meal each year and cabbage usually plays some part in the feast. One year, a guest brought this cabbage dish to share and it was a big hit. She originally found the recipe in an issue of Taste of Home magazine. The chili sauce called for in this recipe is not particularly spicy (although hot versions are also sold) and is usually sold in a bottle in the ketchup aisle in US supermarkets. The brand I most often have used is Heinz.

  • Place oven racks in upper third and middle of oven; preheat to 350°. Place cabbage on a rimmed baking sheet and drizzle with oil; season lightly with salt and pepper. Roast until tender and edges are golden, 40–45 minutes. (This is an essential first step: It draws out the excess moisture, ensuring that the cream mixture doesn’t get watery.)
  • Meanwhile, bring shallots, garlic, cream, 1 Tbsp. thyme, 1½ tsp. salt, and 1 tsp. pepper to a simmer in a small saucepan over low heat. Cook, stirring occasionally, until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.
  • Rub the inside of a 3-qt. shallow baking dish with butter. Arrange cabbage in dish so wedges are lying on a cut side; pour cream mixture over. Bake on middle rack, uncovered, until cream thickens, 30–40 minutes. Let cool 30 minutes.
  • Heat broiler. Sprinkle Gruyère and Parmesan evenly over cabbage. Broil until cheese is bubbling and gratin is deeply browned, about 4 minutes. Top with more thyme.

  • Pulse garlic, goat cheese, yogurt, 1 cup mint, 1 cup parsley, 2 Tbsp. oil, and 1 Tbsp. lemon juice in a food processor until smooth and pale green. Transfer raita to a medium bowl; season with salt.
  • Prepare a grill for medium heat. Cut cabbage in half through core. Cut each half into 3 wedges, keeping core intact. Drizzle wedges with oil to coat and season all over with salt. Grill until deeply charred on all sides (pretty much blackened) and a paring knife easily slips through the center, 8–10 minutes per side. Transfer to a cutting board and let cool 5 minutes (this also allows the cabbage to steam and become tender on the inside). Cut each wedge in half crosswise.
  • Toss cucumbers, remaining 1 cup mint, remaining 1 cup parsley, and remaining 1 Tbsp. lemon juice in a medium bowl. Season salad with a big pinch of salt and toss again.
  • Spread raita over plates; place a few pieces of cabbage on each. Top with salad and Corn Nuts. Sprinkle with Aleppo-style pepper; drizzle with more oil.

  • Heat a grill, grill pan, griddle, or cast iron pan until hot. While it heats, prepare the cabbage: remove and discard any damaged exterior leave, trim the stem end but don’t cut out the core, and cut the cabbage into 8 even wedges, making sure each gets a section of the core to help hold it together.
