THAI-STYLE PEANUT CABBAGE SALAD

Thai-Style Peanut Cabbage Salad image

A spicy, crunchy salad with peanuts not peanut butter. If you are like me and don't like raw garlic, you can saute it for 30 seconds to a minute before using. It just seems to get too intense for my taste if allowed to sit for any amount of time.

Categories     Greens

Time 10m

Yield 6 serving(s)

Number Of Ingredients 17

1/3 cup brown sugar
2 tablespoons water
4 garlic cloves, peeled and chopped (not pressed)
1/2 teaspoon red pepper flakes
2 tablespoons soy sauce
1/4 cup lime juice
2 tablespoons peanut oil
1 teaspoon fresh ginger, grated
1/4 teaspoon salt
1/4 lb green beans, blanched
4 cups Baby Spinach
2 cups green cabbage, thinly sliced
3 green onions, sliced
1/2 red pepper, slivered
2/3 cup dry roasted peanuts, rough chopped
1/4 cup basil, chopped (optional)
1 (1 ounce) package roasted vegetable chips (such as Terra) or 1 (1 ounce) package sweet potato chips, lightly crushed (such as Terra)

Steps:

  • To make the dressing, combine brown sugar, water, garlic and pepper flakes in a jar with a lid. Add remaining dressing ingredients. Shake well. Or you can whisk the ingredients in a medium bowl.
  • To make the salad, toss together all salad ingredients except peanuts, basil, and vegetable chips.
  • Immediately before serving, drizzle about two-thirds of dressing over salad. Toss well. Sprinkle with roasted peanuts, herbs and vegetable chips. Pass remaining dressing at the table.

CABBAGE SALAD WITH PEANUT DRESSING (VEGAN)

Cabbage Salad With Peanut Dressing (Vegan) image

From Veg Times, this recipe calls for Napa cabbage (aka Chinese cabbage). Nice change from lettuce, and for those who don't care for the usual coleslaw, this one has a distinct Asian flavour with the sesame oil, ginger and soy. Lots of room to add more veggies as you wish! UPDATE: I was able to make this in advance for a party by mixing up the dressing a few days in advance and storing in a tightly sealed jar in the fridge. The night before, I cut up all the veg, including the cilantro and put it all in a plastic bag. A few hours before we were due to eat, I tossed it all together. It worked out really nicely. I also used regular cabbage and it was still great. If you like dressing I suggest doubling that part, you can always keep extra for another meal if you don't use it all.

Spicy Cabbage Salad with Turkey and Peanuts image

After a heavy meal, we look for recipes that double as a palate cleanser, with spice, zing, and freshness. With some vegetables that, you know, still have some crunch.

Yield 4 servings

Number Of Ingredients 17

1/2 medium head of green or savoy cabbage, cut into 1-inch pieces
1/2 teaspoon kosher salt, plus more
4 oil-packed anchovy fillets, coarsely chopped
1 teaspoon finely grated lemon zest
3 tablespoons fresh lemon juice
2 tablespoons unseasoned rice vinegar
1 tablespoon light soy sauce
4 teaspoons white miso
1/4 teaspoon sugar
1 tablespoon vegetable oil
4 celery stalks, thinly sliced on a diagonal, plus 1/2 cup celery leaves
2 scallions, green parts only, thinly sliced on a diagonal
1 serrano chile, thinly sliced
1 cup cilantro leaves with tender stems
1 cup shredded cooked turkey meat
1/3 cup coarsely chopped salted, roasted skin-on peanuts
2 teaspoons black sesame seeds

Steps:

  • Toss cabbage and 1/2 tsp. salt in a large bowl. Massage vigorously with your hands until cabbage begins to release water and soften, about 2 minutes (this will both season and tenderize the leaves). Drain; set aside.
  • Mix anchovies, lemon zest, lemon juice, vinegar, soy sauce, miso, and sugar in a large bowl; whisk in oil. Add cabbage, celery and celery leaves, scallions, chile, cilantro, and turkey meat to bowl and toss to combine; season with salt.
  • Serve salad topped with peanuts and sesame seeds.
  • Do Ahead
  • Dressing can be made 1 day ahead. Cover and chill. Rewhisk before using.

ORIENTAL NOODLE SALAD WITH PEANUTS, SPINACH & CABBAGE

Oriental Noodle Salad With Peanuts, Spinach & Cabbage image

Texture and taste means so much to the visually impaired and visual appeal to the sighted. I have tried to accomplish all with this recipe. No almonds, onions or bok choy or napa cabbage--just green cabbage. Enjoy!

Provided by Montana Heart Song

Categories     Spinach

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 14

2 (3 ounce) packages oriental-flavor instant ramen noodles
1 1/2 cups unsalted Spanish peanuts, whole, with skins
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/4 cup margarine
3 cups green cabbage, coarsely shredded
3 cups fresh spinach, stemmed, chopped
5 -6 red radishes, sliced
2 stalks celery, thinly sliced, save leaves for garnish
3/4 cup evaporated milk
2/3 cup white vinegar
2/3 cup vegetable oil
2 tablespoons brown sugar or 2 tablespoons Splenda brown sugar blend
2 teaspoons kikomen soy sauce
1/2 teaspoon kraft creamy horseradish sauce (optional)

Steps:

  • In large frying pan melt margarine. Coarsely crush the ramen noodles in the package before opening. (Save the flavor packets).
  • Add the crushed noodles to the melted butter. Add the peanuts and sprinkle the salt and stir until lightly to dark brown.
  • Do not burn. Set aside.
  • Throw the shredded cabbage and spinach in large serving plates or bowl. Add radishes and celery. Lightly toss.
  • In blender add milk, vinegar, oil, brown sugar, soy sauce, seasoning packets and horseradish sauce if desired. Pulse a few times.
  • Spoon the peanut and noodles on the spinach/cabbage mixture and mix or leave on the top.
  • Drizzle or spoon the dressing on top.
  • Note: I wash all my fresh veges with ice cold water and a dab of bleach. Let them set for a few minutes. Drain the water, rinse the veges and put loose ones in a salad spinner. I have done this since 1963 when we were in another country and I have never stopped. It is safe.

  • Preheat the oven to 350 degrees F. Spread the nuts in a single layer on an ungreased rimmed baking sheet. Toast for 4 to 6 minutes, until fragrant and crisp. Toss once halfway through and do not walk away during the last few minutes of cooking (TRUST ME). Immediately remove to a small bowl or plate (or if your salad is ready to go, you can add them directly to the serving bowl).
  • In a medium mixing bowl or large liquid measuring cup, whisk together the dressing ingredients: rice vinegar, honey, soy sauce, peanut butter, and ginger. Pour enough over the salad to moisten it. Toss to coat. Assess the amount of dressing and add more as desired. Add the almonds and give the salad a final, light toss. If time allows, let marinade for 30 minutes prior to serving. Enjoy!
