FLUFFY COTTAGE CHEESE PANCAKES



Fluffy Cottage Cheese Pancakes image

In these moist and tender pancakes, the cottage cheese adds quality calcium and protein. Serve with a bit of butter and maple syrup or, for a special treat, top with fig spread.

1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
2 tablespoons sugar
4 eggs
1 cup low-fat cottage cheese
1/2 cup low-fat (1%) milk
2 tablespoons canola oil
Canola spray oil

Steps:

  • In a large bowl, stir together flour, baking soda, salt and sugar.
  • In a separate bowl, whisk together eggs, cottage cheese, milk and oil.
  • Add flour mixture to egg mixture and whisk until just blended.
  • Lightly coat a large skillet or griddle with spray oil then heat over medium heat.
  • Working in batches, form each pancake by spooning about 1/4 cup of the batter onto the skillet.
  • Cook, flipping pancakes once, until golden brown on both sides and cooked through, about 5 minutes total. Transfer to plates and serve.

These come out very light and fluffy and are full of whole grain. My kids love them! If you like blueberries, throw a few on top before flipping the cake :)

2 cups whole wheat flour
2 tablespoons white sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 ¼ cups buttermilk
2 eggs
3 tablespoons vegetable oil

Steps:

  • Whisk whole wheat flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk buttermilk, eggs, and vegetable oil in a separate bowl; pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
  • Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto hot skillet and use a spoon to spread the pancake a bit. Cook until browned and bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.

2 tablespoons vegetable oil

Steps:

  • Combine cottage cheese, flour, oil, and eggs in a large bowl.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

I love cottage cheese pancakes and wanted to make a version that was a bit healthier and that my toddler would also love. This was a hit! (at least the two times I've made it so far!) You can use oil in place of the applesauce, white flour in place of the whole wheat, and regular milk for the soy, for a less healthier but yummy version. These also freeze well which is great for feeding a toddler.

1 cup low fat cottage cheese
4 eggs
3 tablespoons applesauce
1/2 cup soymilk
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup whole wheat flour
1/2 teaspoon baking soda
2 tablespoons sugar
1 pinch salt

Steps:

  • Blend the cottage cheese, eggs, applesauce, soy milk, and vanilla extract in a blender until thoroughly mixed.
  • Add the dry ingredients and pulse on and off until just blended.
  • Heat pan on medium. Coat with butter or oil spray. Pour by 1/8 cupfuls (nice small size for toddlers and kids, otherwise use 1/4 cup). Flip when nicely browned.
  • Serve with a sprinkle of powdered sugar, maple syrup, or jam.

1 cup flour
1 tsp vanilla extract
1 tbsp baking powder
2 tbsp sugar
1/4 cup canola oil

Steps:

  • Combine all ingredients in the following order - cheese, eggs, vanilla extract, sugar, baking powder and flour. Mix in each time you add an ingredient.
  • Preheat a skillet with canola oil on a medium heat. Fry the cottage cheese pancakes on each side until golden brown.
  • Serve with maple syrup or jam, while they are still hot and the cheese inside is melted.

1 cup 1% fat cottage cheese or 1 cup 2% fat cottage cheese
1 egg
2 egg whites
3 tablespoons wheat germ
1/3 cup whole wheat flour
1/2 teaspoon cinnamon
1/8 teaspoon salt
1 tablespoon margarine

Steps:

  • Process the cottage cheese, eggs and egg whites in a food processor or blender until smooth.
  • Combine the wheat germ, flour, cinnamon and salt in a medium-sized bowl; mix well.
  • Add to food processor bowl or blender and process until blended.
  • Heat margarine in a non-stick skillet over medium heat.
  • Drop 2 tablespoons of batter at a time into the skillet with a spoon.
  • Cook the pancakes on each side, for about 1 ½ minutes, or until golden brown.

Steps:

  • In a large bowl, stir together the cheese, eggs, butter, and milk.
  • Add the flour, baking powder, sugar, salt, and nutmeg, and blend lightly until just mixed.
  • Grease a griddle with cooking spray and place over medium heat.
  • Put a large scoop of batter on the griddle and use the back of a spoon to spread it out evenly.
  • The pancake is ready to flip when you begin to see small air bubbles form, about 3 to 4 minutes.
  • Flip and cook for another minute or 2.
