CABBAGE AND CARROT THORAN-STYLE SALAD (INDIAN SALAD)
A surprising flavour combination that's knock-your-socks-off-good: Finely shredded cabbage and carrot are tossed with a spiced coconut Indian "sambal" of sorts. Based on the traditional Indian Thoran dry curry, this Indian Salad ridiculously delicious!Note: Pictured salad is a double batch of the recipe written below

Steps:
- Melt oil in a large non-stick skillet over medium high heat.
- Add black mustard seeds and cook for 30 seconds - they will pop and sizzle
- Add cumin seeds and cook for 30 seconds.
- Add eschalot and onion, cook for 3 minutes until translucent but not coloured.
- Add garlic and green chilli, cook for 2 minutes until softened but not golden.
- Add turmeric and curry leaves, cook for 30 seconds.
- Add coconut, water and salt. Cook until water mostly evaporates - about 3 minutes.
- Place carrot and cabbage in a large bowl. Add hot coconut mixture. Toss well - the cabbage should wilt from the heat.
- Taste and check if it needs more salt for your taste.
- Toss through coriander. Serve warm or at room temperature. Best eaten on the day of making. See Note 7 regarding reheating/making ahead.

- In large skillet over medium heat, sauté minced onion in butter until translucent.
- Add shredded cabbage and continually toss for several minutes to partially cook.
- Sprinkle curry powder and white pepper over the cabbage and mix well.
- Pour in heavy cream and allow 1 to 2 minutes for it to reduce.
- Add salt and stir in shredded carrots and continue cooking until the carrots are heated through (do not overcook).

Steps:
- Cut the cabbage into small pieces.
- In a separate container cut carrots into thin rounds.
- Peel onions and cut into small pieces.
- In a medium-sized pan saute the onion with butter or margarine.
- When onions feel soft, add mustard seeds.
- 30 seconds after that add cumin powder, coriander powder, and turmeric powder.
- Mix the spices.
- Drop carrots in pan and saute.
- Put the lid on for 5 minutes.
- Now add cabbage.
- Mix all the vegetables together.
- Add cinnamon powder, salt, and chile powder.
- Put the lid on.
- Wait for 5 minutes.
- Turn over mixture in pan.
- Make sure the spices don't stick to the bottom of the pan.
- Put the lid back on and leave it another 8 minutes.
- If you want curry to be softer, keep the lid on longer after cooking.
- Serve hot or warm.

- Stir in salt, pepper and broth.

My mother-in-law taught me this simple, yet delicious dish. It works well with many different types of cuisines, and currently is the only way I can get my husband to eat cabbage.

Steps:
- Prepare chopped red onion and green chili, and set aside.
- Over medium-high heat, heat the oil in a large pan. Once oil is hot, put in cumin seeds -these will start to sizzle and pop immediately. When they do, give them a stir and then add in the onion and green chili. Reduce heat to medium and cook mixture until slightly browned.
- Add tumeric to onion mixture and incorporate well.
- Add carrots, and stir well to coat. Reduce heat to medium-low and cook covered for 5 minutes, stirring occasionally.
- Add cabbage and salt, carefully folding it in so that as much as possible has come in contact with the carrot mixture. Cover, and cook for 10-15 minutes, stirring occasionally until cabbage is soft and everything is incorporated. Serve.

- Heat canola oil in a saucepan over medium heat. Add onion and cook until soft. Add ginger and garlic, cook for about 1 minute, stirring frequently. - Place a large skillet or wok over high heat. Heat the oil and butter until smoking. Stir fry the onion, carrot, and garlic until the onion begins to soften, about 1 minute. Add the cabbage, coconut, and curry powder; stir fry for 2 more minutes.
- Reduce heat to medium-low; pour in the coconut milk, and season to taste with salt and pepper. Cover, and cook to desired doneness. To serve, sprinkle with tomato, green onions, and cilantro.

- Prepare the vegetables before you begin, so they're ready to go when you need them. Mince the garlic, and grate the ginger. Slice the onion, and peel and slice the carrots. Remove the core from the cabbage and slice it thinly.
- Add the olive oil, garlic, and ginger to a large pot. Sauté the garlic and ginger over medium heat for about one minute, then add the curry powder and sauté for one minute more.
- Add the sliced onions to the pot and sauté for 2-3 minutes, or just until the onions begin to soften.
- Finally, add the carrots, cabbage, a 1/4 cup water, and a pinch of salt. Stir to combine and dissolve any browned bits off the bottom of the pot. Continue to stir and cook the cabbage and vegetables over medium heat for about 15 minutes, or until the cabbage is tender. Add a tablespoon or two of water to the pot if it becomes too dry or the spices begin to stick to the bottom of the pot.
