MEDITERRANEAN CABBAGE SALAD (NO MAYO COLESLAW)



Mediterranean Cabbage Salad (No Mayo Coleslaw) image

You'll love this extra crunchy and bright Mediterranean Cabbage Salad, a no-mayo coleslaw with loads of fresh veggies, herbs, toasted almonds, and a zippy Dijon vinaigrette! This is the perfect make-ahead salad, and it comes together in 20 minutes!

2 tablespoons Dijon mustard
2 garlic cloves, minced
2 limes, juiced
1/3 cup extra virgin olive oil
1/2 teaspoon sumac
pinch of salt and pepper
1/2 teaspoon crushed red pepper flakes, optional
4 cups shredded green cabbage
2 cups shredded red cabbage
1 cup shredded carrots
2 green onions, trimmed, chopped (both white and green parts)
1 red bell pepper, cored and cut into thin sticks
4 large radishes, halved and thinly sliced
1 cup chopped parsley
1/2 cup chopped fresh dill
1 teaspoon sumac
kosher salt
1 cup toasted sliced almonds

Steps:

  • Make the mustard vinaigrette. In a small bowl, whisk together the Dijon mustard, lime juice, garlic, olive oil, and spices.
  • Make the salad. In a large mixing bowl, combine the cabbage, carrots, onions, red bell pepper, radishes, parsley and dill. Season with salt. Add the sumac. Add the toasted almonds. Toss gently to combine.
  • Pour the vinaigrette all over and toss to combine.
  • If you have the time, give the salad 30 minutes to 1 hour for the flavors to meld.

I tried this recipe at a church potluck. I stood guard over the salad bowl until I flushed out it's owner and scored the recipe. Hooray for me. Stalking pays.

3 (10 ounce) bags shredded cabbage
4 tablespoons toasted sesame seeds
1 (9 ounce) can hickory smoked almonds
4 green onions
1 (3 ounce) package dry Top Ramen noodles, broken
2 tablespoons sugar
1/2 cup salad oil
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons flavored vinegar

Steps:

  • Whisk together all the ingredients for the dressing.
  • Toss the cabbage, green onions and nuts. Pour the dressing over top. Mix in the ramen noodles and sesame seeds right before serving. Don't let sit too long, or else it looses it's crispy.

"MILLION DOLLAR" CHINESE CABBAGE SALAD



This recipe is always a hit...with kids too! I used to call it my 'Million Dollar Salad' because buying the sesame seeds was so expensive. Now I buy the sesame seeds in bulk at a health food store and it's much more affordable.

½ cup vegetable oil
½ cup white sugar
¼ cup wine vinegar
1 tablespoon soy sauce
2 (3 ounce) packages ramen noodles (without flavor packets), lightly crushed
½ cup slivered almonds
1 cup sesame seeds
1 head napa cabbage, chopped
1 bunch green onions, chopped

Steps:

  • In a bowl, whisk together vegetable oil, sugar, wine vinegar, and soy sauce until the sugar has dissolved. Refrigerate the dressing while preparing the salad.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the broken ramen noodles, almonds, and sesame seeds onto a baking sheet.
  • Bake the ramen noodle mixture until lightly browned, about 15 minutes, stirring often. Watch carefully to prevent burning. Allow mixture to cool.
  • Just before serving, mix together the napa cabbage and green onions with toasted ramen mixture in a salad bowl until thoroughly combined; toss with the dressing.

3/4 cup shredded cabbage
3/4 cup shredded romaine
2 tablespoons sliced green onion
2 teaspoons slivered almonds, toasted
2 teaspoons sesame seeds, toasted
1 tablespoon rice vinegar
1-1/2 teaspoons sugar
1-1/2 teaspoons canola oil
1 teaspoon water
1/2 teaspoon sesame oil
1/4 teaspoon reduced-sodium soy sauce
Dash salt
Dash pepper

Steps:

  • Split ramen noodles in half (save the seasoning and half of the noodles for another use). Break apart remaining noodles; place in a bowl. Add the cabbage, romaine, onion, almonds and sesame seeds. , For dressing, in a jar with a tight-fitting lid, combine the vinegar, sugar, canola oil, water, sesame oil, soy sauce, salt and pepper; shake well. Add dressing to salad and toss to coat. Serve immediately.

1 Savoy cabbage , finely sliced
25g butter
1 tbsp olive oil
1 garlic clove , sliced
1 rosemary sprig, leaves finely chopped
100g blanched almond

Steps:

  • Steam or microwave the cabbage until just cooked. Melt the butter with the oil in a large frying pan or wok, then add the garlic, rosemary and almonds. Cook, stirring the almonds for about 2 mins or until they start to brown. Tip onto a plate. Add the cabbage to the pan, stir in the leftover buttery juices, then return the almond mixture to the pan. Season well and tip into a serving dish.
