Broccoli and Bow Ties image

Provided by Ina Garten

Categories     main-dish

Time 23m

Yield 6 to 8 servings

Number Of Ingredients 11

Kosher salt
8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 teaspoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1/4 cup toasted pignoli (pine) nuts
Freshly grated Parmesan, optional

Steps:

  • Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  • In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  • Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
  • To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

AWESOME BROCCOLI MARINARA

Awesome Broccoli Marinara image

This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!

Categories     Side Dish     Vegetables     Tomatoes

Time 25m

Yield 4

Number Of Ingredients 5

2 tablespoons olive oil
1 (14.5 ounce) can diced tomatoes with balsamic vinegar, basil and olive oil
1 pound broccoli florets
2 cloves garlic, chopped
salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

(Buttons=black olives- a --Tasty Dish-- addition) Another winning recipe from Gooseberry Patch and Sun-Maid Raisins. Original recipe specifies bow tie pasta, but we tried and enjoyed gemelli pasta. Serve with a crisp tossed salad and garlic bread. Perfect for an easy weeknight meal.

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 tablespoon olive oil
1 cup yellow onion, diced
1 tablespoon honey
28 ounces diced tomatoes, undrained
1/3 cup currants (reduced from 1/2 cup)
2 -4 tablespoons red wine, divided
1 1/2 teaspoons fresh rosemary, finely minced
12 ounces bow tie pasta, uncooked
4 cups broccoli florets
fresh cracked black pepper
1/4 cup black olives, sliced (optional)
freshly grated parmesan cheese (I like a combination of myzithra and Parmesan)
fresh cracked black pepper

Steps:

  • Heat oil in a skillet over medium heat; add onion.
  • Cook for 10 minutes, stirring often, until onion is very soft and golden. (If time allows, cook the onion longer. I cooked them close to 20 minutes until they were quite caramelized.).
  • Stir in honey; add tomatoes with juice, currants, 2 tablespoons wine and rosemary. Bring to a boil. Reduce heat and simmer covered, approximately 10 minutes, or until sauce has thickened. Uncover pot if necessary to reduce liquid.
  • Add remaining wine for flavor, if desired.
  • Meanwhile, cook pasta according to package directions, adding broccoli during last 2 minutes of cooking time. Do not overcook the broccoli. Drain.
  • Serve sauce over pasta and broccoli, garnish with cracked black pepper, olives if using and sprinkle with Parmesan cheese.
