¼ cup brown sugar
1 cup all-purpose flour
½ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, mix together pecans, sugar, and flour. Stir in melted butter or margarine. Reserve 1/2 of the mixture for topping the pie, then press the rest evenly into a 9 inch pie pan.
  • Bake in preheated oven for 12 to 15 minutes, until golden brown. Allow crust to cool before filling.

1 cup butter, softened
Pinch of fine sea salt
3 ½ cups powdered sugar
1 teaspoon pure vanilla extract
½ teaspoon coconut extract
2 Tablespoons coconut cream (the fat from a can of full-fat coconut milk)

Steps:

  • Add the butter to the bowl of a stand mixer fitted with the paddle attachment and beat until smooth.
  • Add half of the powdered sugar and a pinch of sea salt and beat on low until the sugar is mostly incorporated. Add the remaining powdered sugar and beat on low until combined. Increase speed to medium and beat for 3 minutes.
  • Stop the mixer and scrape down the bowl. Add the vanilla extract, coconut extract, and coconut cream then beat for an additional minute on low, increasing the speed to medium once the cream and extract is incorporated.
  • Use for cakes, cupcakes, or your favorite baked goods!

BROILED COCONUT TOPPING

My husband does not like the gooey icing of German Chocolate cake, so I found this pretty slick alternative! It has all the flavors, but a very distinct "crunch", it almost caramelizes on top of the cake. Try it, I think you will be pleasantly surprised! I do not use the nuts as my husband does not like nuts in his cakes, only cookies! This is perfect for a 13x9 cake, I often use a Swiss Chocolate cake mix.

½ cup hi-ratio shortening (can substitute with solid vegetable shortening)
⅛ teaspoon salt
4 cups powdered sugar, sifted
¼ cup canned coconut milk (shake well before opening)*
1 teaspoon pure coconut extract

Steps:

  • In the bowl of a stand mixer fitted with a paddle attachment, or in a large mixing bowl using a handheld mixer, beat butter, shortening and salt until pale and creamy, about 5-6 minutes.
  • Add half of the powdered sugar and mix on low until combined. Add coconut milk and coconut extract and mix until well combined.
  • Gradually add remaining powdered sugar and beat until fully combined. Increase speed to high and beat until light and fluffy, 5-7 minutes.

3 egg whites

Steps:

  • Cream throughly the butter and sugar.
  • Add vanilla.
  • Add eggs, one at a time beating well after each addition.
  • Sift together flour, baking powder and salt and add to mixture, alternating with milk, ending with flour.
  • Pour into 3 greased and floured 9" cake pans.
  • Bake at 350 for 30-40 minutes.
  • Cool 10 minutes before removing from pans.
  • Cool before frosting.
  • Store in cool place or refrigerate.
  • Makes 1 cake.
  • For Frosting:.
  • Combine sugar, cream of tartar and boling water in 3 quart saucepan.
  • With the aid of a candy thermometer that doesn't touch bottom of the pan, cook until the mixture reaches 240 degrees and makes a long thread with a spoon.
  • Turn to a low heat when mixture begins to boil.
  • The longer the mixture cooks the less likely it is to be grainy.
  • Beat egg whites in a large bowl until stiff but not dry.
  • Slowly pour the hot syrup , in a fine stream, into the egg whites, beating constantly.
  • Add vanilla and almond flavoring and beat until frosting is cool enough to spread.
  • Spread on tops and sides of cake layers, sprinkling with coconut.
  • Join layers together.

1 cup chopped pecans
1 (14 ounce) bag flaked coconut, divided
Duncan Hines yellow cake mix
3 large eggs
1/3 cup dark rum, plus
2 tablespoons dark rum, divided
2 (16 ounce) containers vanilla frosting

Steps:

  • Preheat oven to 350°F Butter and flour 2 8-inch square cake pans.
  • In a pot over medium heat, cook 1/2 cup of butter until golden brown; cool. On an ungreased baking sheet, bake the pecans until toasted, about 5 minutes. Transfer to a cutting board. On the same baking sheet, bake 1 cup of coconut, stirring until golden, about 3-5 minutes. Transfer to a board with the pecans. When cool enough to handle, chop pecans and coconut.
  • In a large bowl with a mixer, beat the cake mix, 1 cup of water, browned butter, eggs, and 1/3 cup rum until just blended. Increase to medium and beat 2 minutes. Stir in toasted coconut and pecans.
  • Divide the batter between the two pans. Bake 30 minutes or until a toothpick comes out clean. Cool on racks 10 minutes. Remove from pans; cool completely.
  • For frosting, in bowl with mixer at medium speed, Beat remaining butter until smooth. Beat in frosting, one can at a time, until mixture is fluffy. Beat in remaining 2 tablespoons rum.
  • To assemble, cut each cake layer in half horizontally. Place one layer on a serving plate. Spread with about 2/3 cup. Repeat with remaining layers and frosting. Spread top and sides with remaining frosting. Press unbaked coconut into frosting.
