MIXED NUT BARS

Steps:
- Preheat oven to 350°. In a small bowl, combine flour, brown sugar and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Press into a greased 13x9-in. baking pan. Bake for 10 minutes., Meanwhile, in a microwave, melt butterscotch chips and remaining butter; stir until smooth. Stir in corn syrup. , Sprinkle nuts over crust; top with butterscotch mixture. Bake until set, about 10 minutes. Cool on a wire rack. Cut into bars.

- Preheat oven to 350 degrees F.
- For the crust, combine all the ingredients, mixing until crumbly.
- Press firmly into a greased 13" x 9" pan.
- Bake for 15 to 18 minutes or until light golden.
- For the topping, beat together the eggs, sugar, corn syrup and butter until blended.
- Stir in the butterscotch chips and pecans.
- Pour evenly over the crust.
- Bake for 30 minutes or until set and golden.
- Cool completely and then cut into bars.

- Preheat oven to 350 degrees F.
- Line a 15 x 10-inch baking sheet with parchment paper.
- Combine all crust ingredients, and press into bottom of the pan.
- Bake for 10-12 minutes (do not over bake).
- Remove from oven then sprinkle the peanuts evenly over crust.
- In a saucepan combine the topping ingredients; bring to a boil then cook for about 2 minutes until smooth (stirring constantly).
- Pour the hot mixture over the nuts, and return to oven.
- Bake for 15 minutes or until until golden.
- Cool completely before cutting into bars.

- Preheat the oven to fan 160C/conventional 180C/gas 4. Melt the butter in a small bowl and leave to cool. Butter a shallow tin about 20 x 24cm. In another bowl, beat the eggs. Melt the butter, then add to eggs with the sugar and vanilla. Tip in the flour and stir in with the chocolate and three-quarters of the nuts. Don't over-beat.
- Spread the mixture in the tin, scatter over the rest of the nuts and bake for 25-30 minutes, then cut into 12 bars. Dust with icing sugar.

- Preheat oven to 350°F, line a 9 x 11 inch (28 x 18 cm) pan with parchment paper, or spray it with non-stick cooking spray.
- Melt the first four ingredients together in a saucepan, stirring occasionally. Wave the pot to cool.
- Combine the dry ingredients and then add the melted butter mixture (making sure it is not so hot that the chocolate chips will melt).
- Spread the batter in the prepared pan and press it into an even layer with a spoon. Bake until the top has a light golden colour (set but not solid as it will crisp as it cools), around 15-20 minutes.
- Remove from oven and let cool on the baking sheet until tepid, then cut into portions. Remove from sheet when cool and store in an airtight container.
