3 slices raisin bread
2 teaspoons softened butter
1 cup firmly packed light brown sugar
3 eggs
1 cup evaporated milk
1 pinch salt
1/2 teaspoon vanilla

Steps:

  • Trim the crusts from the bread and spread slices with the butter.
  • Cut the buttered bread into 1/2 inch pieces.
  • Butter the upper part of a 1 quart double boiler.
  • Spread the brown sugar into it and place the bread cubes on top.
  • In a medium sized bowl beat together the eggs, milk, salt and vanilla with a rotary beater.
  • Pour over the bread cubes and DO NOT STIR.
  • Place over boiling water in the bottom of the double boiler and cook COVERED for 1 hour or until a sliver knife comes out clean.
  • If necessary add additional hot water to the base during cooking.
  • As the pudding cooks it will separate into a custard portion on top and the sauce on the bottom.
  • Spoon some of the sauce over the pudding and serve.

1 (10.75 ounce) loaf day-old bread, torn into small pieces
4 cups milk
2 cups brown sugar
½ cup butter, melted
3 eggs, beaten
2 teaspoons vanilla extract
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a large bowl, combine bread, milk, sugar, butter, eggs, vanilla and butterscotch chips; mixture should be the consistency of oatmeal. Pour into prepared pan.
  • Bake in preheated oven 1 hour, until nearly set. (It should have a "thigh wiggle" or wiggle as much as a well endowed thigh.) Serve warm or cold.

1 1/4 cups heavy cream
3/4 stick (6 tablespoons) unsalted butter
1 1/2 cups packed dark brown sugar
2 1/4 cups whole milk
4 large egg yolks
1/4 cup cornstarch
3/4 teaspoon salt
Accompaniment: whipped cream sprinkled with freshly grated nutmeg

Steps:

  • In a saucepan heat cream over moderately low heat until warm. While cream is heating, in a 3-quart heavy saucepan melt butter over moderate heat and stir in brown sugar. Cook sugar mixture, stirring occasionally, until mixture is bubbling all over and appears smooth, about 5 minutes. Carefully add warm cream (mixture will bubble and steam) and cook over moderately low heat, stirring, until sugar mixture is dissolved, about 1 minute. Remove pan from heat.
  • In a large metal bowl or top of a double boiler whisk together milk, yolks, cornstarch, and salt. Add warm butterscotch mixture in a slow stream, whisking constantly, and set bowl or top of double boiler over a saucepan of simmering water. Cook pudding, whisking constantly, 10 minutes, or until it begins to thicken. Cover bowl or top of double boiler and cook pudding, whisking occasionally, 10 minutes more.
  • Remove bowl or top of double boiler from pan and cool pudding 5 minutes, whisking occasionally. Divide hot pudding among six 1-cup ramekins or other heatproof dishes. Chill puddings, covered (if you don't want skins to form) or uncovered (if you do want skins to form), until cold, at least 3 hours, and up to 2 days. Serve puddings topped with whipped cream.

We really like bread pudding but this one is different as it cooks on top of the stove instead of in the oven, which is great when you want a comfort food dessert but don't want to heat up the kitchen with the oven on. Recipe source: Bon Appetit (March 1985)

2 tablespoons butter, room temperature
3/4 cup brown sugar
4 slices bread, crusts trimmed, buttered and cubed (stale bread or heels work fine)
1/2 cup raisins
2 eggs
2 cups half-and-half
1 teaspoon vanilla
1/8 teaspoon salt
whipped cream, garnish

Steps:

  • Coat a 2-quart double boiler (or saucepan) with the butter (2 tablespoons). Pat the brown sugar over the butter.
  • Arrange 1/3 of the bread cubes in a single layer on top of the sugar. Sprinkle with 1/3 of the raisins. Repeat with the layering with the remaining bread and raisins.
  • In a small bowl beat together the eggs and half and half, vanilla and salt. Pour mixture over the bread/raisins.
  • Cover pan and set over boiling water. Cook for 1 1/2 hours or until set, you will probably need to add boiling water at least once.
  • Remove from heat and remove top pan from the boiling water. Let cool for 10 minutes or so and then invert onto a serving platter. Serve with whipped cream if desired.

1 cup brown sugar
6 tablespoons flour
1 teaspoon salt
2 cups milk
2 tablespoons butter
2 eggs, separated
1 teaspoon vanilla
1 9-inch baked pie crust
1/4 cup white sugar
1/4 teaspoon cream of tartar

Steps:

  • Mix the brown sugar, flour and salt in the top of a double boiler.
  • Stir in the milk, add the butter and cook over simmering water, stirring, until thickened.
  • Let cook 20 minutes, stirring occasionally.
  • Beat 2 egg yolks.
  • Temper them with a little of the hot mixture, then stir them into the pudding.
  • Cook 5 minutes longer.
  • Remove from heat.
  • Add the vanilla, then pour into the prepared pie shell.
  • Beat the egg whites and cream of tartar until stiff, beating in the sugar a little at a time to make a meringue.
  • Spread on top of pudding and brown in a 350*F oven for about 10 minutes or until golden.

1/4 cup cornstarch
2 1/2 cups milk

Steps:

  • In medium double boiler, cook sugar, cornstarch, milk and salt. When mixture begins to thicken, add part of mixture to egg yolks; mix well, then pour egg mixture back into mixture in double boiler.
  • Cook until thick; take off stove, then add butter and vanilla.
  • You can use as pudding and top with Cool Whip or use pudding with bananas for banana pudding You can also add 2 unsweetened chocolate squares at the beginning and make a chocolate pie or pudding.
  • For butterscotch pie or pudding, use 3/4 cup light brown sugar firmly packed and 1/4 cup sugar instead of 3/4 cup sugar, then cook as directed.
  • You can also make a banana plate pie with the vanilla mixture, just cook as directed.
  • In baked pie shell, line bottom with bananas; pour a layer of pudding, then a layer of ba nanas, then pudding.
  • You can top with Cool Whip or meringue.
