3 shallots, halved lengthwise, then cut crosswise into 1/4-inch-thick slices (3/4 cup)
1 (1 3/4-lb) butternut squash, peeled, halved lengthwise, seeded, and cut into 1/2-inch cubes (4 cups)
1/2 cup reduced-sodium chicken broth or water
1 tablespoon packed brown sugar
1/2 teaspoon finely chopped fresh sage
1/2 teaspoon salt
1 teaspoon balsamic vinegar
1/4 teaspoon black pepper

Steps:

  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook shallots and squash, stirring, until shallots are softened, about 5 minutes.
  • Add broth, brown sugar, sage, and salt, stirring until sugar is dissolved. Simmer, covered, stirring occasionally, until squash is tender, 8 to 10 minutes. Remove from heat and stir in vinegar, pepper, and salt to taste.

1 medium butternut squash
2 tablespoon olive oil
1 egg
1 pound ricotta
1 cup to 1 1/2 cup grated Parmesan cheese
Pinch nutmeg, freshly grated
Salt and freshly ground pepper, to taste
13 ounce package fresh lasagna sheets
Sage Cream Sauce
3 tablespoon butter
1 shallot, finely chopped
Handful sage leaves, chopped
1/4 cup flour
1/4 cup wine
2 cups chicken stock
2 cups whipping cream
Salt and freshly ground pepper, to taste
Assembly
Butter, for greasing the pan
Grated Parmesan or pecorino cheese, for finishing the cannelloni
Handful chopped, toasted walnuts, for garnishing (optional)
1 tsp. chopped sage, for garnishing (optional)

Steps:

  • Preheat oven to 400 degrees F. Cut butternut squash in half and scrape out seeds with spoon. Add squash halves to baking sheet. Drizzle with olive oil and season with salt and pepper. Roast squash until tender, about 45 minutes to 60 minutes. Let cool completely. Spoon the butternut squash flesh from skin. Discard skins. Add roasted butternut squash, egg, ricotta, 1 cup grated Parmesan cheese, nutmeg, and salt and pepper to food processor. Pulse until smooth. If butternut squash filling feels loose, add 1/2 cup more grated Parmesan. Set aside. Make Sage Cream Sauce Add butter to saucepan over medium heat. When butter melts, add shallot and sage. Cook until shallot starts to soften, about 2 to 3 minutes. Add flour and stir to combine to make a roux. Continue to cook and stir the roux, about 2 to 3 minutes. Gradually whisk in wine, stock and whipping cream. Bring to a boil, whisking frequently. Reduce heat and simmer, whisking often, until sauce thickens, about 5 minutes. Season the sauce with salt and pepper. Sage Cream Sauce Preheat oven to 350 degrees F. Butter a large baking dish. Cut pasta sheets into 5 1/2-inch x 6-inch rectangles. (You'll need about 12 to 16 rectangles). Blanch pasta in boiling salted water until al dente. Transfer to baking sheet or tray lined with clean tea towels. Add sauce to baking dish. Add filling to cooked pasta rectangles and roll up. Add cannelloni seam side down to baking dish. Cover with grated Parmesan or pecorino cheese. Bake until sauce bubbles, filling is hot and cheese is golden brown, about 20 minutes. Garnish cannelloni with toasted walnuts and chopped sage, if desired.

1 large butternut squash (about 3 lb.), preferably one with a long thick neck
1 Tbsp. extra-virgin olive oil
2 Tbsp. unsalted butter, cut into pieces
6 sage leaves
2 garlic cloves, crushed
1 Tbsp. fresh lemon juice
Kosher salt, freshly ground pepper

Steps:

  • Cut the neck off of squash; reserve base for another use. Trim the stem off the neck then peel. Resting neck on cut base, cut in half lengthwise, creating two lobes. Trim off outer rounded side of each piece to create two 3/4"-thick steaks (about 6 oz. per steak); reserve trimmed off sides for another use.
  • Heat oil in a large heavy skillet over medium. Cook squash steaks, turning every 3 minutes, until deeply browned on both sides and fork-tender, about 15 minutes. Add butter, sage, and garlic to skillet, tilt pan toward you so that butter pools on one side, and use a large spoon to continually baste steaks with butter. Cook, basting, until butter is no longer bubbling, smells nutty, and is beginning to brown, about 1 minute. Remove from heat and stir in lemon juice; season with salt and pepper.
  • Transfer squash steaks to plates and spoon sauce over.

1 large butternut squash - halved lengthwise, peeled and seeded
2 teaspoons butter
salt and ground black pepper to taste
½ teaspoon allspice
½ teaspoon ground nutmeg
2 teaspoons ground cinnamon
½ cup Parmesan cheese
50 wonton wrappers
1 teaspoon egg white, lightly beaten
¼ cup unsalted butter
¼ cup chopped fresh sage leaves
salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the squash cut side up on a baking sheet. Place 1 tablespoon butter in the hollow of each half. Sprinkle with salt and pepper to taste. Cover the squash with a sheet of aluminum foil tucking in the edges.
  • Bake squash in preheated oven until tender and easily pierced with a fork, 45 to 65 minutes.
  • Scoop the cooked squash into a bowl, and mash until smooth. Mix in the allspice, nutmeg, cinnamon, and Parmesan cheese until well blended. Season to taste with salt and pepper.
  • Fill a deep pot with lightly salted water and bring to a boil.
  • To make the ravioli, place a wonton wrapper on a clean, flat surface. Brush edges with the egg white. Place about 1 tablespoon of the squash mixture in the middle of the wonton. Cover with a second wonton wrapper. Repeat with remaining wonton wrappers and squash mixture until all have been used.
  • Drop the ravioli into the boiling water, and cook for 3 to 5 minutes, or until tender. Remove, drain, and keep warm until sauce is prepared.
  • To make the sauce, melt the butter in a skillet over medium heat. Stir in the sage. Continue to cook and stir until the sage is crispy but not browned. Add salt and pepper to taste. Place 6 to 8 raviolis on serving plates, and drizzle with sauce.

1/4 cup olive oil
3 lbs butternut squash
6 garlic cloves, unpeeled
2 large Spanish onions, peeled and quartered
1/4 cup water
3 cups apple juice or 3 cups vegetable stock
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1 teaspoon salt
pepper
2 teaspoons butter
20 fresh sage leaves, sliced on the diagonal

Steps:

  • Preheat the oven to 400°F.
  • Brush the bottom of a baking pan with olive oil and set aside. Cut the squash through the stem ends into halves, prick the skin in several places with a knife, and scoop out the seeds with a spoon.
  • Brush the cut surfaces with about a tablespoon of the olive oil.
  • Put the garlic inside the squash cavities and place halves in the pan cut side down.
  • Add the onions to the pan and brush with remaining olive oil. Pour the water into the bottom of the pan, cover with aluminum foil, and bake for 50 minutes.
  • Uncover and bake for 5-10 minutes more or until the squash is tender and the onions are soft.
  • When the squash is cooled enough to handle, scoop out the flesh.
  • Squeeze the garlic cloves out of their skins and discard the skins.
  • In batches in a blender, combine the baked vegetables, apple juice or stock, thyme, nutmeg, salt and pepper and puree until it is smooth. (If you are making this ahead - chill here - and when ready go to the next direction).
  • Pour the soup into a pot and heat gently.
  • In a small skillet, melt the butter and saute the sage leaves until dark and curled.
  • Garnish each bowl of soup with the sage leaves.

A satisfying veggie supper that gives a basic risotto recipe an autumnal twist

1kg butternut squash, peeled and cut into bite-size chunks
3 tbsp olive oil
bunch of sage, leaves picked, half roughly chopped, half left whole
1½l vegetable stock
50g butter
1 onion, finely chopped
300g risotto rice (we used arborio)
1 small glass white wine
50g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Toss the squash in 1 tbsp oil together with the chopped sage. Scatter into a shallow roasting tin and roast for 30 mins until brown and soft.
  • While the squash is roasting, prepare the risotto. Bring the stock to the boil and keep on a low simmer. In a separate pan, melt half the butter over a medium heat. Stir in the onions and cook gently for 8-10 mins until soft but not coloured, stirring occasionally. Stir the rice into the onions until completely coated in the butter, then stir continuously until the rice is shiny and the edges of the grain start to look transparent.
  • Pour in the wine and simmer until completely evaporated. Add the stock, a ladleful at a time, and stirring the rice over a low heat for 25-30 mins, until the rice is cooked al dente (with a slightly firm, starchy bite in the middle). The risotto should be creamy and slightly soupy.
  • At the same time, gently fry the whole sage leaves in a little olive oil until crisp, then set aside on kitchen paper. When the squash is cooked, mash half of it to a rough purée and leave half whole. When the risotto is just done, stir through the purée, then add the cheese and remaining butter and leave to rest for a few minutes. Serve the risotto scattered with the whole chunks of squash and the crisp sage leaves.

1 medium butternut squash (about 1 pound)
About 24 sage leaves
Coarse sea salt and freshly ground pepper to taste
7 to 8 cups chicken stock
1 medium onion
5 1/2 tablespoons unsalted butter
2 cups Arborio rice
1/2 cup dry white wine
1/2 cup grated Reggiano Parmesan, plus extra for garnish

Steps:

  • Peel, clean and dice the squash. Put the squash into a heavy-bottom pot and cook it with a few whole leaves of sage, salt, pepper and one cup of chicken stock. Cook 5 to 10 minutes, until tender but not too soft. Meanwhile, chop six sage leaves fine and dice the onion.
  • Heat the rest of the chicken stock and hold at a low simmer. In a heavy-bottom saucepan, heat three tablespoons of the butter, add the chopped sage and cook a minute or two. Add the onion and continue to cook over medium heat until it is translucent, about five minutes.
  • Add the rice and a pinch of salt and cook over low heat about three minutes, stirring often, until the rice has turned slightly opaque. Turn up the heat and pour in the white wine. When the wine has been absorbed, add just enough stock to cover the rice, stir well and reduce the heat.
  • Keep the rice at a gentle simmer and continue to add more stock, a ladle or two at a time, letting each addition become absorbed by the rice. While the rice is cooking, saute the remaining sage leaves in butter until crisp. Drain on paper towels.
  • After 15 minutes, the rice will be nearly cooked. Stir in the cooked squash, the rest of the butter and the cheese. Continue cooking three to five minutes. Taste for texture and consistency, adding a little more of the stock as needed. Adjust the seasoning. When the rice is done, serve it in a warm bowl and garnish with extra cheese and sauteed sage leaves.

1 medium butternut squash, about 2 pounds
1 large sweet onion (coarsely chopped)
1 scant teaspoon kosher salt , plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
3 to 4 tablespoons extra-virgin olive oil
8 ounces rombi, farfalle, or other pasta
1/4 cup (1/2 stick) unsalted butter
2 dozen fresh sage leaves
2 medium cloves garlic (minced)
1/2 cup shredded Parmesan, plus more for garnish

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 375 F. Peel and halve the squash, scoop out the seeds, and cut into 1/2- to 1-inch cubes.
  • Combine the squash, onion, 1 teaspoon salt, pepper, and oil on a large rimmed sheet pan. Toss to coat. Spread evenly on the pan. Roast until tender and brown in places, turning about halfway through roasting time, 40 to 45 minutes total.
  • Meanwhile, bring a large pot of well-salted water to a boil. Cook the pasta according to package directions to al dente. Drain and set aside.

2 lb butternut squash, peeled, sliced to 1/8 inch disks.
2 tablespoons olive oil or butter
2 medium leeks, thinly sliced
4 garlic cloves, rough chopped
15 sage leaves, chopped(8 more for crispy sage leaf garnish- optional)

1 cup heavy cream (or sub coconut milk)
1/2 teaspoon salt and pepper
1/2 teaspoon nutmeg
1/2 teaspoon onion powder, optional
---
1/4 cup water
3 ounces gruyere cheese (or sub parmesan or vegan parmesan)
1/2 cup walnuts, chopped

Steps:

  • Peel and thinly slice the butternut squash into 18 -inch thick rounds. When you get to the seeds, scoop them out and continue slicing. Set aside 12-15 of the "prettiest" slices for the top of the gratin. ( There will be 3 layers of butternut - so you could divide into 3, placing any misshapen pieces in the middle layer)
  • Slice and rinse the leeks- the moisture here will help them soften. Heat oil or butter in a large skillet over medium heat. Saute the leeks, for 8-10 minutes, covering part way through so they soften. Add the garlic, sage and a pinch of salt, cook 2-3 more minutes. Turn heat off.
  • the cream with the salt, pepper, nutmeg and onion powder in a medium bowl.
  • Grease a large 9 x 13-inch baking dish or 11-12 inch round baking dish. A big shallow pan is BEST here ensuring even cooking. Grease the pan, add 1/4 cup water to the bottom of the pan. Layer with Butternut squash overlapping slightly. Sprinkle with half of the sauteed leeks. Drizzle with 1/3 cup cream mixture. Sprinkle with one ounce of Gruyere (about 3-4 tablespoons grated). Add the 2nd layer of butternut- using up any misshapen pieces here. Scatter with the remaining leeks. Drizzle with 1/3 cup cream mixture and sprinkle with grated gruyere cheese. Add the final layer of butternut, overlapping and pressing down so not domed in the middle. Drizzle the remaining cream mixture over top, lightly sprinkle with cheese and the walnuts. Give the pan a little shake, press down in the center again so gratin is level, not domed. Cover, using parchment first as a barrier, under the foil if the foil touches the top of the gratin.
  • . Uncover, confirming the butternut is tender using the tip of a knife, then bake at 400 F uncovered, 15 minutes until beautifully golden.
  • To make the crispy sage leaf garnish, heat 1-2 tablespoons oil or butter in a pan over medium heat, add 8 whole sage leaves, saute each side 30 seconds or so until crisp (try a tester first) and place on a paper towel to cool for a couple of minutes. Arrange over the gratin.

This savory roasted butternut squash with onions and sage is a wonderful side dish to serve with any fall or winter meal.

1 medium butternut squash (around 3 pounds)
2 medium onions (cut into 1-inch chunks)
2 tablespoons extra-virgin olive oil
1/4 teaspoon freshly ground black pepper
2 teaspoons dried sage
Kosher salt (to taste)

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Line a large baking pan or roasting pan with aluminum foil. Lightly oil the foil or spray with nonstick cooking spray.
  • With a vegetable peeler or Y-peeler, remove the skin from the squash. Slice in half lengthwise and scoop out the seeds. Cut the squash into 1-inch cubes.
  • In a large bowl, toss the squash and onion chunks with the olive oil, pepper, and sage. Arrange on the prepared baking sheet. Sprinkle with salt to taste.
  • Roast for 30 to 40 minutes, turning occasionally, or until the squash is tender and lightly browned.
  • Check for seasoning and add salt and pepper if needed.
  • Serve hot and enjoy.

1 large butternut squash, about 1 1/2 pounds
2 tablespoons olive oil
2 shallots, minced
Salt and pepper
1 bay leaf
Pinch ground nutmeg
6 fresh sage leaves, cut in thin strips
1 cup chicken broth
1/2 cup freshly grated Pecorino Romano
Chopped chestnuts, for garnish

Steps:

  • Cut the butternut squash in half lengthwise to remove the seeds and strings. Peel the skin using a paring knife and cut the squash into small cubes.
  • Place the olive oil and shallots in a deep skillet over medium heat. When the shallots begin to color, add the squash and season with salt and pepper. Saute a few minutes to lightly caramelize the surface of the cubes. Add the bay leaf, nutmeg, sage, and chicken broth. Cover the pan and cook until the squash is tender but still holding its shape, about 8 minutes.
  • Puree the sauce with a standard or immersion blender and serve with potato gnocchi. Top with grated cheese and chopped chestnuts before serving. If desired, fry some sage and shallots in olive oil to garnish.

Steps:

  • Step 1
  • TOAST pine nuts in dry pan over medium heat, continually tossing until golden brown. Transfer to a cool dish. Step 2

This comforting Butternut Squash Risotto showcases a classic Italian flavor trio-brown butter, squash, and sage-in a creative, memorable way.

1 cup ½ in (1 cm) butternut squash cubes ((see note))
1 tbsp extra-virgin olive oil
Pinch kosher salt, (or fine sea salt)
Freshly ground black pepper
¼ cup unsalted butter
1 tbsp extra-virgin olive oil
About 6 fresh sage leaves
3 cups vegetable broth
2 fresh sage leaves, (minced)
1 tbsp extra-virgin olive oil
1 shallot, minced
5 oz risotto rice
½ cup dry white wine
½ cup freshly grated Pecorino Romano cheese
Finely grated zest and juice from ½ a lemon ((about 1 tsp / 5 ml zest and 2 tbsp / 30 ml juice))
¼ cup shelled pistachio nuts, (coarsely chopped)

Steps:

  • For the roasted butternut squash: Preheat the oven to 425°F (210°C). Line a baking sheet with parchment paper. Spread the cubes of butternut squash over the sheet, then drizzle with the olive oil and season with a pinch of salt and some freshly ground black pepper. Toss to coat evenly, then spread the cubes back over the sheet so they all sit in a single layer. Roast for 15 minutes, or until the squash cubes feel soft when you poke them with the tip of a knife. (Start checking around the 12-minute mark because you don't want the cubes to turn to mush!) Broil for 1-2 minutes to give color, if desired. Remove from the oven and set aside. (You can prepare the roasted butternut squash in advance, let it cool, then refrigerate it in an airtight container for up to 2 days.)
  • For the brown butter: Heat the butter in a small stainless steel saucepan set over medium heat. Stir until completely melted and simmering. Keep on cooking over low heat, swirling the pot from time to time. The butter will bubble up as the water evaporates, which will prevent you from watching closely over the color changing. When that happens, lift the pot off the heat for a few seconds, swirling it gently until the bubbles recede, then put back on the heat. The butter is ready when the milk solids at the bottom of the pot turn a light brown color and the concoction gives off a delicious hazelnut aroma.When the butter is browned, remove the pan from the heat, pour in a small bowl, and let cool completely for 10 minutes.
  • For the fried sage leaves: In a small nonstick skillet set over medium-high heat, heat the olive oil. When the oil shimmers, add the sage leaves, making sure they lay flat in the oil. Fry about a few seconds, keeping a close eye on the skillet, until the sage leaves shrink a bit. Carefully turn the leaves over and fry for a few seconds more, until they're dark and crisp. The leaves should not be burnt or black: lift the skillet off from the heat if the leaves seem to fry too quickly. Once done, transfer the leaves to paper towels to drain. Set aside.
  • For the butternut squash risotto: Pour the vegetable broth in a saucepan, then add the minced sage. Set over medium heat and warm up just until simmering. Lower the heat to the minimum just to keep warm.
  • In a large saute pan or a cast-iron braiser set over medium-low heat, add half of the brown butter (make sure to stir the brown butter before you spoon some to catch some of the browned bits), then stir in the olive oil. Add the shallot and cook, stirring, until soft, 3 to 4 minutes. Add the risotto rice and stir for 2 minutes, until the grains are translucent around the edges. Add the wine and stir vigorously while the wine is bubbling up, scraping down the bottom of the pan to loosen the caramelized bits. Simmer until the wine is fully absorbed. Add 1 ladleful of the broth and simmer, stirring from time to time, until the broth is almost completely absorbed. Continue adding broth, one ladleful at a time, allowing each ladle to be absorbed before adding more.
  • When there's about 1 cup (250 ml) of broth left, stir in the roasted butternut squash into the risotto. Add ½ cup (125 ml) broth, stir and keep cooking until the broth is almost fully absorbed. Stir in the grated Pecorino Romano cheese. Stir until the cheese is fully melted and incorporated. Stir in the lemon zest and juice. Season with black pepper, taste the risotto, and season with salt if needed. Stir in the remaining broth. The risotto should now be loose and super creamy. Cover and turn off the heat. The risotto can stand for about 5 minutes but should be served as soon as possible for the best texture.
  • SERVING: Serve the butternut squash risotto in warm bowls. Garnish each serving with some of the remaining brown butter, then garnish with chopped pistachio nuts and additional lemon zest, if desired. Finish with some freshly ground black pepper and serve immediately.
  • NOTE: You'll need about ¼ of a medium squash for this recipe. To prepare the squash, first peel it using a vegetable peeler. Then, slice the squash in half, and seed both halves using a spoon. Finally, dice the flesh until you have enough for this recipe. You can also dice the remaining flesh and freeze it in portions to use in future risotto or in other recipes.

3 lbs butternut squash, peeled, seeded and cubed into 1-inch pieces (about 5-6 cups)
3 tablespoons olive oil
3 teaspoons kosher salt
1 pinch fresh ground pepper
1 tablespoon butter
1 large yellow onion, diced (about 1 1/2 cups)
3 stalks celery, clopped (about 1 1/2 cups)
1 tablespoon chopped fresh sage
6 cups chicken broth
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • In a large bowl combine squash, 2 tablespoons olive oil, 2 teaspoons salt, and pepper.
  • Place on shallow baking sheet and roast for 15 minutes, then turn over and roast another 15 minutes, until squash is tender and caramelized, then set aside.
  • In a large soup pot, heat the remaining oil and butter over medium heat.
  • Add the onion, celery and sage and sauté until translucent and tender, about 10 minutes.
  • Add the squash, broth, and remaining salt and bring to a boil, lower heat and and simmer for 30 minutes, remove from heat.
  • Using a blender or food processor, remove the squash with a slotted spoon and puree until smooth.
  • Return to the pot, keep warm. Serve with grated parmesan.
