MERRITT'S BUTTERNUT SQUASH GRATIN

Slightly sweet golden squash is topped with a savory herbed cheese-breadcrumb topping. It's been my signature dish every Thanksgiving for the last 12 years. It takes a bit of work, but it is so, so worth it. Your guests will ask you for the recipe, so be prepared.

3 tablespoons butter
1 yellow onion, diced
2 cloves garlic, minced
1 (2 1/2 pound) butternut squash - peeled, seeded, and cut into 3/4-inch chunks
1 teaspoon brown sugar
1 cup chicken broth
8 ounces shredded Gruyere cheese
8 ounces shredded extra-sharp Cheddar cheese
1 cup dry bread crumbs
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the butter in a large skillet over medium heat. Stir in the onions and garlic; cook until the onions soften and turn golden brown, about 10 minutes. Add the butternut squash and brown sugar. Continue cooking and stirring until the butternut squash begins to brown on the edges, but is still somewhat firm in the center, about 10 minutes more. Scrape the squash into the prepared baking dish, and pour in the chicken broth. Wrap tightly with aluminum foil.
  • Bake in the preheated oven until the liquid has been absorbed and the squash is tender, 45 to 50 minutes. Toss together the Gruyere cheese, Cheddar cheese, bread crumbs, thyme, and rosemary in a bowl until evenly combined. Remove the foil from the baking dish, and sprinkle the squash evenly with the cheese mixture. Sprinkle the Parmesan cheese on top. Return to the oven, and bake uncovered for 15 minutes more until the topping is lightly crunchy and brown.

1 tablespoon butter
1 tablespoon olive oil
2 large onions, cut into 1-inch squares
3 tablespoons chopped fresh sage
salt and freshly ground black pepper to taste
3 pounds butternut squash - peeled, seeded, and cut into 1/2-inch cubes
2 cloves garlic, minced
¾ teaspoon salt
10 tablespoons heavy whipping cream
1 cup fresh bread crumbs
1 ½ tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a gratin baking dish with butter.
  • Heat 1 tablespoon butter and olive oil in a large skillet over low heat; add onions and sage. Cover and cook, stirring occasionally, until onions are browned, about 25 minutes. Season with salt and black pepper.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash, cover, and steam until tender, 10 to 20 minutes. Transfer squash to prepared gratin dish; toss with garlic and 3/4 teaspoon salt. Add the caramelized onions to the pan and gently mix to combine.
  • Warm cream in a saucepan over low heat; pour over squash mixture. Stir to coat. Combine bread crumbs and 1 1/2 tablespoons melted butter together in a bowl; sprinkle over squash mixture.
  • Bake in the preheated oven until gratin is bubbling and breadcrumbs are browned, 20 to 25 minutes.

1 butternut squash
4 slices OSCAR MAYER Bacon, chopped
1 small sweet onion, thinly sliced
2 Tbsp. flour
1/4 tsp. pepper
1 cup fat-free reduced-sodium chicken broth
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided

Steps:

  • Heat oven to 350ºF.
  • Cut squash lengthwise in half; discard seeds. Cut each half crosswise into thin slices; remove peels. Place squash in large saucepan. Add enough water to cover squash. Bring to boil on high heat; simmer on medium-low heat 8 to 10 min. or until squash is tender.
  • Meanwhile, cook bacon in skillet until crisp, stirring occasionally. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add onions to reserved drippings; cook and stir 5 min. or until crisp-tender. Stir in flour and pepper; cook and stir 1 min. Gradually stir in broth; cook and stir 2 to 3 min. or until thickened. Remove from heat. Stir in 1 cup cheese.
  • Drain squash. Arrange half in 8- or 9-inch square baking dish; cover with half the sauce. Repeat layers; top with bacon and remaining cheese.
  • Bake 25 to 30 min. or until squash mixture is heated through and cheese is melted.

2 lb butternut squash, peeled, sliced to 1/8 inch disks.
2 tablespoons olive oil or butter
2 medium leeks, thinly sliced
4 garlic cloves, rough chopped
15 sage leaves, chopped(8 more for crispy sage leaf garnish- optional)
--
1 cup heavy cream (or sub coconut milk)
1/2 teaspoon salt and pepper
1/2 teaspoon nutmeg
1/2 teaspoon onion powder, optional
---
1/4 cup water
3 ounces gruyere cheese (or sub parmesan or vegan parmesan)
1/2 cup walnuts, chopped

Steps:

  • Peel and thinly slice the butternut squash into 18 -inch thick rounds. When you get to the seeds, scoop them out and continue slicing. Set aside 12-15 of the "prettiest" slices for the top of the gratin. ( There will be 3 layers of butternut - so you could divide into 3, placing any misshapen pieces in the middle layer)
  • Slice and rinse the leeks- the moisture here will help them soften. Heat oil or butter in a large skillet over medium heat. Saute the leeks, for 8-10 minutes, covering part way through so they soften. Add the garlic, sage and a pinch of salt, cook 2-3 more minutes. Turn heat off.
  • the cream with the salt, pepper, nutmeg and onion powder in a medium bowl.
  • Grease a large 9 x 13-inch baking dish or 11-12 inch round baking dish. A big shallow pan is BEST here ensuring even cooking. Grease the pan, add 1/4 cup water to the bottom of the pan. Layer with Butternut squash overlapping slightly. Sprinkle with half of the sauteed leeks. Drizzle with 1/3 cup cream mixture. Sprinkle with one ounce of Gruyere (about 3-4 tablespoons grated). Add the 2nd layer of butternut- using up any misshapen pieces here. Scatter with the remaining leeks. Drizzle with 1/3 cup cream mixture and sprinkle with grated gruyere cheese. Add the final layer of butternut, overlapping and pressing down so not domed in the middle. Drizzle the remaining cream mixture over top, lightly sprinkle with cheese and the walnuts. Give the pan a little shake, press down in the center again so gratin is level, not domed. Cover, using parchment first as a barrier, under the foil if the foil touches the top of the gratin.
  • . Uncover, confirming the butternut is tender using the tip of a knife, then bake at 400 F uncovered, 15 minutes until beautifully golden.
  • To make the crispy sage leaf garnish, heat 1-2 tablespoons oil or butter in a pan over medium heat, add 8 whole sage leaves, saute each side 30 seconds or so until crisp (try a tester first) and place on a paper towel to cool for a couple of minutes. Arrange over the gratin.

2 small (about 2 pounds each) butternut squashes, peeled and cut into 1/2-inch dice (about 8 cups)
1 red onion, peeled and thinly sliced
3/4 cup heavy cream
1 1/2 cups grated fontina cheese
2 teaspoons kosher salt
1/2 teaspoon black pepper
4 tablespoons chopped parsley
6 strips smoked bacon, diced
1 cup chopped black walnuts
1 cup bread crumbs

Steps:

  • Preheat the oven to 375 degrees. In a large bowl, toss the squashes, onion, cream, cheese, salt, pepper and 2 tablespoons of the parsley. Scrape into a gratin dish or a medium-size baking dish. Set aside.
  • In a skillet set over medium heat, cook the bacon, stirring, until it is browned and crisp. Add the walnuts and cook, stirring, until they are lightly toasted. Add the bread crumbs and cook for another minute. Remove from the heat and stir in the remaining 2 tablespoons of parsley. Sprinkle the mixture evenly over the squash in the gratin dish. Bake until the squash is very tender and the topping is browned, about 40 minutes. Allow to cool slightly before serving.

Nonstick cooking spray, for the baking dish
1/4 cup all-purpose flour
2 tablespoons light brown sugar
Pinch kosher salt
1/4 cup (4 tablespoons) unsalted butter, cut into cubes and kept cold
1/4 cup rolled oats
1 pound butternut squash, cut into 3/4-inch chunks
2 apples, cut into 1-inch chunks
1/4 cup dried cranberries
1/2 cup granulated sugar
3 teaspoons cornstarch
2 teaspoons pumpkin pie spice
Pinch kosher salt

Steps:

  • For the crisp: Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with nonstick cooking spray.
  • Mix the flour, brown sugar and salt in a bowl. Use a pastry blender, two knives, or a food processor to cut in the butter until the size of peas. Add the oats and combine, taking care to not break up the oats too much. Set aside.
  • For the filling: In a bowl, combine the squash, apples and cranberries and toss with the granulated sugar, cornstarch, pumpkin pie spice and salt. Transfer to the prepared baking dish. Top with the crisp mixture. Bake until the top is golden brown and crispy, 50 to 55 minutes.

1 large butternut squash (3 1/4 pounds), peeled and seeded (2 1/2 pounds)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups heavy cream
3 tablespoons grated Parmesan cheese

Steps:

  • Cut off and discard the stem of the squash, then cut the squash into two pieces by cutting through it horizontally at the bottom of the neck. This will make it easier to peel.
  • Peel the cylindrical neck lengthwise, removing enough skin so that the orange flesh underneath is revealed. (Under the outer skin there is a layer of green, which should be removed.) Peel the round part of the squash by cutting around it in a spiral fashion with a sharp knife; it is easier to peel a round object in this manner.
  • Cut the rounded part in half lengthwise, and, using a spoon, scoop out the seeds. Then cut the squash into 1/8-to-1/4-inch slices, either with a knife or in a food processor fitted with the slicing blade.
  • Preheat the oven to 400 degrees. Place the squash slices in a large saucepan, cover them with water, and bring to a boil. Boil over high heat for 1 1/2 to 2 minutes, then drain in a colander. The pieces will break a little in cooking. Arrange pieces in a gratin dish, and sprinkle with the salt and pepper. Pour on the cream, and stir gently with a fork to distribute the additions properly. Cover with the cheese, and bake for about 30 minutes.
  • At serving time, brown the top of the gratin by heating it under a hot broiler for 4 to 5 minutes. Serve immediately.

1 butternut squash (about 3 pounds)
2 tablespoons olive oil
1 tablespoon unsalted butter
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons Parmesan cheese

Steps:

  • With a small sharp knife or vegetable peeler, carefully peel the squash, removing the yellow skin and green layer underneath. (The skin is difficult to remove, and you will have to peel the squash twice if you are using a vegetable peeler.) Cut the squash in half lengthwise and remove the seeds. Cut in half lengthwise again; then cut crosswise into 1/2-inch slices.
  • Put the squash slices in a large saucepan and cover with tepid tap water. Bring to a boil; reduce the heat and boil gently for 3 to 4 minutes, until tender. Drain in a colander and transfer to a gratin dish with the rest of the ingredients. Mix well.
  • If squash is prepared in advance, reheat in a 425-degree oven for 15 minutes, until hot and lightly browned on top. Serve.

Butternut Squash and (Sweet) Potato Gratin With Walnut Crust image

Terrific fall recipe. We loved this as a healthy vegetarian meal....lots of vitamins. It would be perfect on Thanksgiving--to take the place of the marshmallow and canned sweet potatoes usual side dish. I used my food processor to chop everything---doing it by hand would take longer than I've indicated here!

2 lbs butternut squash, peeled
1 1/4 lbs idaho potatoes, peeled (I used sweet potatoes)
salt & freshly ground black pepper
6 tablespoons grated parmesan cheese
1 cup heavy cream (I used fat free half and half...but on a special occasion would use the cream!)
1/2 cup finely chopped walnuts
1/2 cup fresh breadcrumb, combined with
2 tablespoons melted butter

Steps:

  • Heat oven to 350°F.
  • Grease an 8x8 inch (2 quart) glass or ceramic baking dish.
  • Cut the squash in half lengthwise and scrape out the seeds and fibers.
  • Slice the squash and potatoes about 1/8 inch thick (use a mandoline if you have one).
  • Line the bottom of the baking dish with a layer of squash (overlapping slightly), season lightly with salt and pepper, sprinkle with a little of the Parmesan, and drizzle with a little of the cream.
  • Cover with a layer of potato slices, season with salt, pepper, cheese, and cream.
  • Repeat with the remaining squash and potatoes until the dish is full, ending with a top layer of squash, seasoned and topped with any remaining cheese and cream. (You may have extra squash, and extra potatoes if you used sweet potatoes!).
  • Press down lightly to distribute the cream and compact the layers.
  • The last layer of squash should be just sitting in the cream, but not covered by it.
  • Cover the dish with foil and bake until the vegetables feel tender when poked with a thin, sharp knife (check the middle layer), about 1 hour, 10 minutes.
  • Combine the walnuts and buttered bread crumbs.
  • Remove the gratin from the oven, sprinkle with the breadcrumb-nut mixture, and bake until the top is lightly browned, 5 to 10 minutes.
  • Let sit in a warm place for 20 minutes before serving so that liquids will set and tighten the gratin.
  • Cut into 9 squares and serve.

1 (2 -3 lb) butternut squash
2 tablespoons unsalted butter
3 cups halved and sliced onions
salt
1/4 teaspoon black pepper
3 cups peeled peeled cored sliced apples
3 tablespoons flour
1 teaspoon brown sugar
1/4 teaspoon dried sage
1/2 teaspoon cinnamon
1/2 cup chicken broth
3/4 cup breadcrumbs
3/4 cup grated sharp cheddar cheese
1/2 lb bacon, crisp cooked, drained, and crumbled

Steps:

  • Peel squash and cut in half lengthwise. Remove center seeds and strings, and then slice thinly.
  • Heat butter in a skillet, over a medium flame. Add onions, salt and pepper and sauté for 10 minutes.
  • Comine flour, brown sugar and spices. Combine apples and flour mixture toss to coat well.
  • Place half of the squash into a buttered 9x13x2-inch baking dish.
  • Arrange half the apples in a layer on top of the squash place the remaining squash on top of the apples. Cover with the remaining apples. Top with the sautéed onions.
  • Pour stock over all.
  • Bake at 350 degrees for 45-50 minutes, until squash is tender combine breadcrumbs, cheese, and bacon-mix well. Spread mixture over the gratin. Bake for 15 minutes, until lightly browned remove from heat and allow to cool slightly before serving.

2/3 cup chopped parsley
1 tablespoon freshly grated lemon, rind of
3 cloves garlic
1 (3 lb) butternut squash, peeled,seeded,and cut into 3/8 inch slices (about 10 cups)

1/2 cup reduced-sodium chicken broth, warm
3/4 cup freshly grate parmesan cheese (3 oz.)

  • Meanwhile, in small bowl, mix together cheese, bread crumbs and oil.
  • Top gratin with cheese mixture.
  • Bake, uncovered, an additional 15 minutes or until squash is tender and top is golden.
