1 (3-pound) butternut squash, peeled, seeded and cut into 1-inch cubes
Salt and freshly ground black pepper, to taste
1/2 cup freshly grated Parmesan
1/4 cup purchased basil pesto
2 tablespoons unsalted butter, cut into 1/2-inch pieces, plus more for greasing

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly butter an 8-inch baking dish and set aside. Fill a large pot with enough water to come 2 inches up the sides of the pot. Set a steamer rack in the pot, cover, and bring the water to a boil over high heat. Add the squash and steam over medium heat until the squash is very tender, about 20 minutes. Transfer the squash to a food processor and blend until smooth and creamy. Season the squash to taste with salt and pepper.
  • Spoon half of the squash evenly over the prepared baking dish. Dollop half of the pesto all over the squash in the dish. Sprinkle half of the cheese over the squash. Repeat layering with the remaining squash, pesto, and cheese. Using a skewer, swirl the pesto decoratively into the squash. Dot the top with butter and bake until the gratin is heated through and golden brown around the edges, about 40 minutes.

2 tablespoons olive oil
2 medium onions, thinly sliced (14 oz. total)
2 cloves garlic, minced
1 1/4 lbs ripe tomatoes, cored and cut into 1/4 inch slices
3/4 lb zucchini or 3/4 lb other green summer squash, cut into 1/4 inch slices on the bias (about 2 small)
3/4 lb summer squash or 3/4 lb golden zucchini, cut into 1/4 inch slices on the bias (about 2 small)
3 tablespoons olive oil
2 tablespoons fresh thyme leaves
1 teaspoon coarse salt
1 1/4 cups freshly grated parmigiano-reggiano cheese
fresh ground black pepper

Steps:

  • Preheat oven to 375.
  • To cook the onions-- In a medium skillet, heat the olive oil over medium heat.
  • Add the onions and sauté, stirring frequently, until limp and golden brown, about 2 min.
  • Reduce the heat to medium-low if they're browning too quickly.
  • Add the garlic and sauté until soft and fragrant, 1 to 2 min.
  • Spread the onions and garlic evenly in the bottom of an oiled 2-qt. shallow gratin dish (preferably oval).
  • Let cool.
  • To assemble the gratin: Put the tomato slices on a shallow plate to drain for a few minutes and then discard the collected juices.
  • In a medium bowl, toss the zucchini and squash slices with 1-1/2 Tbs. of the olive oil, 2 Tbs.of the thyme, and 1/2 tsp.of the salt.
  • Reserve half of the cheese for the top of the gratin.
  • Sprinkle 1 Tbs.of the thyme over the onions in the gratin.
  • Starting at one end of the baking dish, lay a row of slightly overlapping tomato slices across the width of the dish and sprinkle with a little of the cheese.
  • Next, lay a row of zucchini, overlapping the tomatoes by two-thirds, and sprinkle with cheese.
  • Repeat with a row of squash, and then repeat rows, sprinkling each with cheese, until the gratin is full.
  • Season lightly with pepper and the remaining 1/2 tsp.salt.
  • Drizzle the remaining 1-1/2 Tbs.olive oil over all.
  • Combine the reserved cheese with the remaining 1 Tbs. thyme and sprinkle this over the whole gratin.
  • Cook until well-browned all over and the juices have bubbled for a while and reduced considerably, 65 to 70 min.
  • Let cool for at least 15 min.before serving.
  • NOTE: You can use any combination of summer squash for this dish.

1 1/2 lbs butternut squash
1 1/2 tablespoons butter, divided
1/2 cup shredded mozzarella cheese
1 medium onion, diced
3/4 cup dry breadcrumbs
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 teaspoon dried sage

Steps:

  • Peel the squash,cut into pieces and steam or boil until tender; mash with 1/2 T butter, there should be about 1 1/2 cups squash.
  • Spread squash evenly into a small oiled casserole; sprinkle with cheese.
  • Saute the onions in the remaining 1 T of butter until translucent; add bread crumbs, salt, pepper and sage and stir to combine.
  • Sprinkle the bread crumb mixture over the cheese; bake at 325° for 25-30 minutes.

LEEK, SQUASH AND TOMATO GRATIN

450 g peeled and seeded squash, sliced 1 cm thick
4 tablespoons olive oil
450 g leeks, cut on the diagonal
675 g tomatoes, skinned and sliced
1/2 teaspoon ground roasted cumin seeds
450 ml single cream (light cream)
1 red chile, deseeded and sliced
1 garlic clove, chopped
1 tablespoon of fresh mint, chopped
1 tablespoon fresh parsley, chopped
4 tablespoons fine breadcrumbs (brown or white)

Steps:

  • Heat oven to 190C / 375°F.
  • Steam squash for 10 minutes.
  • Heat half the oil and cook leeks for 5 minutes
  • In an ovenproof dish layer squash, leeks and tomatoes in rows. Season if desired and add cumin.
  • Heat cream with garlic and chilli. Bring to boil, stir in mint and add to veg.
  • Bake for 55 minutes.
  • Sprinkle on breadcrumbs and drizzle the rest of the oil over the top. Bake for another 15 - 20 mins until the breadcrumbs are brown.

I recently discovered the unique and flavorful taste of this "less popular" winter squash. I feel that this vegetable is overlooked by most of society. Do yourself a favor and a try butternut squash, if not this recipe, another. However, I feel that you might enjoy this version.

2/3 cup chopped parsley
1 tablespoon freshly grated lemon, rind of
3 cloves garlic
1 (3 lb) butternut squash, peeled,seeded,and cut into 3/8 inch slices (about 10 cups)
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/2 cup reduced-sodium chicken broth, warm
3/4 cup freshly grate parmesan cheese (3 oz.)
2 tablespoons fine dry breadcrumbs
1 teaspoon olive oil

Steps:

  • Heat oven to 4oo degrees.
  • spray 12*8- inch glass baking dish or gratin dish with nonstick cooking spray.
  • In small bowl, mix together parsley, lemon peel and garlic.
  • Spread half of the squash slices in baking dish.
  • Sprinkle with 1/4 teaspoon salt, 1/8 teaspoon pepper and half of parsley mixture.
  • Top with remaining squash and parsley mixture.
  • Gently pour broth over squash.
  • Season with remaining salt and pepper.
  • Cover with foil.
  • Bake 40 to 45 minutes or until squash is almost tender.
  • Meanwhile, in small bowl, mix together cheese, bread crumbs and oil.
  • Top gratin with cheese mixture.
  • Bake, uncovered, an additional 15 minutes or until squash is tender and top is golden.

Winter squash and tomatoes are a winning combination. I've combined this with white navy beans and mozzarella cheese to make a complete and inexpensive meal to make ahead in a 2 quart crockpot. Turn on in the morning and by the time you're back from work, voila! There's dinner. This can be assembled the day before and stored in the refrigerator overnight. Please note tip for preparing squash.

1 -3 teaspoon olive oil
1 large leek, white and light green part, chopped (about 3 cups)
1 medium butternut squash, split, scraped, peeled and chopped into 1/2 inch pieces (about 6 cups)
1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
2 teaspoons herbes de provence
1 (15 ounce) can navy beans, drained and rinsed (great white)
1 (10 ounce) can Rotel Tomatoes (14 ounce okay)
2 cups lowfat mozzarella cheese, shredded
4 slices bacon, cooked until crisp and crumbled (optional, a vegetarian substitute can be used)

Steps:

  • Heat oil in non-stick skillet. Add chopped leek and saute for about 5 minutes, or until soft. Mix with butternut squash chunks and add to crockpot. (Tip - half squash with sharp knife, scrape clean with spoon, and heat in 350 degree Fahrenheit oven on baking sheet sprayed with non-stick cooking spray, cut side down, for 15 minutes. Let cool, then peel and cut into chunks).
  • Add salt and pepper (to taste) and 2 teaspoons herbes de provence.
  • Top with beans and tomatoes, in that order. Cover and cook on low for 8-9 hours. Can be kept warm for up to 2 hours.
  • Serve topped with mozzarella cheese and sprinkled with crumbled bacon, if desired.

1/4 cup olive oil
1/4 cup water
2 medium onions, halved lengthwise, then thinly sliced crosswise
2 garlic cloves, finely chopped
1 (14 1/2- to 15-ounce) can diced tomatoes, including juice
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano, crumbled
1/8 teaspoon ground allspice
1/4 pound crumbled feta (scant 1/4 cup)
1/3 cup pine nuts, toasted
Accompaniment: extra-virgin olive oil

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Cut off and peel neck of squash, then cut neck crosswise into 1/2-inch-thick rounds (reserve round portion for another use). Season both sides of slices with salt and pepper. Heat 2 tablespoons oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking, then cook squash, in batches if necessary, until browned, 3 to 4 minutes per side. Add water to skillet and cook squash, covered, over moderately low heat until tender, about 5 minutes. Gently transfer squash with a spatula to a 2-quart gratin or other shallow baking dish, overlapping slices if necessary, then pour any juices from pan over squash.
  • Cook onions and garlic in remaining 2 tablespoons oil in skillet over moderate heat, stirring frequently, until soft, about 8 minutes. Stir in tomatoes with juice, oregano, allspice, and salt and pepper to taste and simmer 3 minutes.
  • Cover squash with tomato mixture and crumble feta on top, then sprinkle with nuts.
  • Bake gratin until heated through and cheese is softened, about 10 minutes.
  • Serve gratin drizzled with oil.

1/2 cup whole wheat flour

Steps:

  • Preheat the oven to 350 degrees F. lightly butter or oil a 2-quart gratin dish.
  • Heat half of the olive oil in a skillet over medium heat. Add the onion, thyme and sage and cook, stirring frequently, until the onions are slightly carmelized (about 15 minutes). Season and spread in the gratin dish.
  • Return the skillet to the heat and add the rest of the olive oil. Toss the squash lightly in the flour, add to the pan, and cook until it begins to brown, about 7 minutes. Add the parsley, season well, and cook for another minute. Put the squash in the gratin dish on top of the onions, cover with cheese, and add the heated milk.
  • Cover and bake for 25 minutes; then uncover, add the bread crumbs and bake for 25 more minutes, or until the top is browned and the liquid absorbed.
