LOW CARB FAJITA MARINADE
This simple marinade is amazing and works for low carb fajitas or fajita bowls. CHICKEN FAJITAS MARGARITA - LOW CARB
Got this off of the Atkins Web site, really good!! Marinate time: 4 hours If you like the heat of hot peppers, add a big pinch of chili powder to the marinade or top the fajitas with shredded jalapeno jack cheese.

Steps:
- Place chicken, 1/4 cup of the oil, lime juice, tequila, 1 tablespoon of the cilantro, garlic, cumin, lime peel, salt and pepper in a plastic bag and marinate, refrigerated, 4 hours or overnight.
- Drain chicken and discard marinade.
- Heat oven to 350°F.
- Wrap tortillas in foil and place in oven.
- Heat remaining tablespoon oil in a large skillet over medium-high heat and cook onion 3 minutes, until softened.
- Add pepper strips and cook 2 minutes, until crisp-tender.
- Transfer vegetables to a bowl.
- Add chicken to skillet and cook about 5 minutes per side, until cooked through (add more oil if necessary).
- Stir in vegetables and tomato.
- Cook, stirring, 2 minutes more.
- Stir in remaining cilantro.
- To serve, spoon chicken mixture onto tortillas and top with sour cream and salsa, if desired.
LUSCIOUS LOW CARB TENDER BEEF FAJITA BOWL
I love it when I discover a new low carb, South Beach way-of-life recipe, and this was one is yummo! I found this on another site, and then modified it slightly. I found that the finished product was fork-tender, flavorful, and even better without the tortillas! Since the steak is so tender and tasty in this dish, I do recommend going with a sirloin or higher-end steak, rather than an inexpensive steak - it is well worth it in this dish! A fabulous one pan-meal made in around 30 minutes - what more could you ask for??!! :-)

Steps:
- In a skillet, over med-high heat, melt the butter.
- Add onion, peppers, mushrooms, chili powder, cayenne pepper, salt, and pepper, and saute, just until veggies are tender.
- Remove from skillet.
- Add steak slices and cook, just until browned and cooked through (5-7 minutes or so), steak should be cooked no more than rare to med-rare.
- Add onions and pepper mixture, and heat through.
- Serve beef and veggie mixture in bowls, sprinkled with cheese, and served with dollops of sour cream and guacamole (if desired).

- Mix the ingredients for the fajitas together in a bowl, minus the chicken. Slice the chicken into strips. Add the chicken to the mix and stir until all chicken is coated. Cover and refrigerate overnight. Mix several times.
- Mix the crisp ingredients and press into an oiled 9x13 pan.Bake at 350 for 25 minutes, or until just starting to brown.
- While the crisp is cooking, mix the peppers. Let it marinate while the crisp is baking.
- Once the crisp is done, remove from oven and let it cool.
- Meanwhile, cook the chicken. Once the chicken is cooked through, add the peppers and cook until the chicken browns.
- Slice the crisp and serve the fajita mix over it. Add cheese and sour cream, if you like.

- Combine all the ingredients for the fajita seasonings. Reserve 1 1/2 teaspoons for the bell peppers.
- In a medium bowl, combine 2 tablespoons of olive oil, chopped cilantro, lime juice, mustard and 5 teaspoons of the fajita seasonings. Reserve 1 tablespoon of the chicken marinade for drizzling on the chicken at the end. Pour remainder of the marinade into a large zip-top bag along with the chicken. Press the bag to evenly distribute the marinade and allow to sit while you prepare the vegetables.
- Heat 1 tablespoon butter in a 12" skillet over medium high heat. Add the onions and allow to cook for about 5 minutes, or until softened and fragrant. Add the bell peppers and sprinkle with the reserved 1 1/2 teaspoons of fajita seasonings. If you like the peppers with a nice crunch - cook for about 3-5 minutes. And if you like them softer, leave them on for about 3 minutes longer. Transfer and set aside on a plate.
