- In a large bowl, mash butternut squash. Add ricotta cheese, 1 cup shredded mozzarella, salt, pepper, garlic powder, onion powder, and thyme. Set aside
- In a large skillet, brown the Italian sausage (if using). If you're not using it to keep the lasagna vegetarian, heat the olive oil in the skillet. Once the sausage is browned or olive oil is heated, add kale and cook until wilted. Set aside.
- In a medium saucepan, melt butter. Whisk in the flour. Add vegetable broth, milk, and heavy cream and bring to a simmer until sauce thickens. Add parmesan cheese, salt, and pepper and stir to combine.
- Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 baking dish with nonstick cooking spray. Spread a thin layer of sauce at the bottom of the pan, then add 3 lasagna noodles. Spread a layer of the butternut squash and cheese mixture over the noodles, Then add some of the kale/sausage mixture. Then add a small handful of the remaining mozzarella and a few scoops of sauce. Repeat with the remaining ingredients. The final layer on top of the last layer of lasagna noodles should be the remainder of the sauce and the rest of the mozzarella cheese.
- At this point, you can refrigerate the lasagna until ready to bake.
- Bake for 45-50 minutes until golden brown and bubbling.
- Let sit for at least 30 minutes before slicing and serving.

BROKEN LASAGNA WITH BUTTERNUT SQUASH AND KALE

- Bring a large pot of salted water to a boil. Heat a large skillet over medium-high heat and add the olive oil. Add the whole sage leaves and fry until crisp, 30 seconds to 1 minute. Remove with a slotted spoon and drain on paper towels; season with salt.
- Add the squash and shallots to the skillet and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Add the chopped sage and season with 1/2 teaspoon salt and a few grinds of pepper. Add 1 cup of the boiling water and the heavy cream and bring to a simmer. Cook until the squash is tender and the sauce is reduced by half, 8 to 10 minutes.
- Meanwhile, add the broken lasagna noodles to the boiling water and cook, stirring frequently, until tender, about 12 minutes. Reserve 1 cup cooking water, then drain. Add the noodles and kale to the skillet with the squash and toss to coat, adding the reserved cooking water as needed to loosen. Remove from the heat, add 1/4 cup grated parmesan and toss.
- Divide the noodles among bowls. Top with fried sage leaves and the remaining 1/4 cup parmesan.

BUTTERNUT SQUASH AND SAUSAGE LASAGNA

- For the sauce: Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the sausage and use a wooden spoon to break up the meat as it browns. When the sausage has cooked to golden brown, about 8 minutes, transfer it to a paper towel-lined plate to drain. Return the skillet to medium heat and add the remaining tablespoon olive oil. Add the onions and use a wooden spoon to scrape up any browned bits left on the bottom of the skillet. Deglaze with 2 tablespoons water. Cook until the onions are translucent, stirring occasionally, about 8 minutes. Add the mushrooms and cook until browned, 4 to 5 minutes. Stir in the garlic and a pinch of crushed red pepper and cook about 2 minutes. Add the sausage back to the skillet. Stir in the canned butternut squash, cream, salt and pepper. Set aside.
- For the filling: In a medium bowl, combine the ricotta, Parmesan, kale, sage, garlic powder, salt, pepper, eggs and nutmeg. Stir to combine and set aside.
- For the lasagna: Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil.
- Cook the lasagna noodles in the boiling water for half the time the package recommends. Drain and toss with a drizzle of olive oil to prevent them from sticking together.
- Spray a 9-by-13-inch casserole dish with nonstick cooking spray. Spoon about a cup of the sauce into the dish, spreading it to cover the bottom. Arrange half the lasagna noodles over the sauce, then begin layering first with half of the ricotta filling, then half of the sauce, then half of the mozzarella. Continue layering with the remaining noodles, filling and sauce, finishing with mozzarella on top. Sprinkle with the Parmesan. Tap the casserole on the counter to force out any air bubbles.
- Bake until the cheese is golden brown and the lasagna is bubbling, 35 to 45 minutes. Let it rest for 15 minutes so it can set and be cut easily.

- Take the butternut squash and peel, seed, and cut it into 1/2-inch chunks.
- Cook the lasagna noodles according to package directions.
- Preheat oven to 450 degrees F.
- In a large bowl, toss the butternut squash chunks with 1 tablespoon olive oil and 1/2 teaspoon salt, then place the chunks in a single layer on a large cookie sheet.
- Roast the squash chunks for 30 minutes or until they're easily pierced with a fork, stirring after 15 minutes.
- Remove chunks from the oven and mash squash with a food processor (or fork or potato masher) until almost smooth; set aside.
- Lower the oven temperature to 375 degrees F.
- In a large Dutch oven or saucepot, over medium heat melt together the remaining 1 tablespoon olive oil and 1 tablespoon of butter.
- Add the chopped onion and cook for about 10 minutes or until golden, stirring often; add the Swiss chard and 1/4 teaspoon salt and cook until the chard is wilted and the liquid evaporates, which will take about 7 minutes.
- Remove from heat and set aside.
- In a large saucepan, melt the remaining butter over medium heat.
- Whisk in the flour, pepper, garlic salt, nutmeg, thyme, and sage and cook for 1 minute while stirring constantly.
- Gradually whisk in the milk until smooth and cook the sauce over medium-high heat until it boils and thickens slightly, stirring frequently.
- Boil for an additional 2 minutes while stirring, then whisk in all but 2 tablespoons Parmesan cheese.
- Remove the saucepan from heat.
- In a 13" x 9" glass lasagna pan, spoon about 1/2 cup of the white sauce to cover the bottom of the pan.
- Arrange 4 cooked lasagna noodles over the sauce, overlapping to fit; evenly spread all of the Swiss chard mixture over the noodles, top with about 1 cup white sauce, and sprinkle with about a 1/4 cup of mozzarella cheese.
- Arrange 4 lasagna noodles on top, then about 1 cup white sauce and all butternut squash chunks, then a 1/4 cup of mozzarella cheese.
- Top with remaining lasagna noodles, remaining white sauce, sprinkle with the chopped green onions and the remaining mozzarella cheese; sprinkle with the reserved 2 tablespoons Parmesan cheese.
- Cover the lasagna pan with foil and bake at 375 degrees for 30 minutes, then remove the foil and bake for an additional 10 minutes or until hot and bubbly; let lasagna cool for 10 minutes before cutting, for easier serving.
- Makes 8 to 10 servings.

- Preheat oven to 400 degrees F (200 degrees C).
- Place squash in a bowl; add onion, 1/2 of the balsamic vinegar, brown sugar, vegetable oil, salt, and pepper and toss to coat. Spread mixture in a single layer onto a baking sheet.
- Bake in the preheated oven until squash is tender and golden, 30 to 40 minutes.
- Combine kale and broth in a heavy-bottom skillet; bring to a light simmer. Cover skillet, reduce heat, and cook until kale is tender but still bright green, about 5 minutes; drain any excess liquid. Mix kale, squash mixture, and remaining balsamic vinegar together in a serving bowl.

- Spread the squash slices out in an even layer on an aluminum-foil-lined baking sheet and toss with 1 tablespoon olive oil, ½ teaspoon salt, and ground black pepper. Roast for 20 minutes, or until tender and just starting to brown.
- While the squash is roasting, make the béchamel sauce. In a medium saucepan, cook the butter over medium heat until it is melted and beginning to foam, then add the flour and whisk to incorporate. Cook the butter-and-flour mixture, whisking constantly, for 2 to 3 minutes, making sure it doesn’t brown. Slowly begin adding the milk, ½ cup at a time. The mixture will seize up and thicken quite a bit after the first addition, but don’t worry. Keep whisking and adding slowly until the sauce is thickened and coats the back of a wooden spoon. This should take about 10 minutes. When the sauce is cooked, add the salt, nutmeg, cayenne, and Parmesan cheese.
- To cook the kale, heat olive oil in a sauté pan over medium-high, add sliced kale and a large pinch of salt, and cook for about 5 minutes, or until the kale is wilted.

- Preheat oven to 425F. Spray an 8 x 8 (2 quart) casserole or baking dish with pan spray, set aside. Line a sheet pan with parchment paper. Set aside.
- Split and deseed the butternut squash. Drizzle 1 Tbs oil on the flesh and spread it around on the surface. Sprinkle flesh with 1/2 tsp sea salt and all the sage. Turn the flesh face down to roast. Wrap the garlic sprinkled with 2 tsp oil in foil and place on the same pan as the butternut squash. Roast garlic for 30-40 minutes and butternut squash for 40 - 55 minutes or until the garlic is soft and butternut gives under gentle pressure. If roasting two smaller butternut squashes, they'll roast faster than one large one. Keep an eye on them and start checking around 25-30 minutes. Remove from oven and cool until both can be safely handled. Scrape flesh of butternut squash from the skin and discard skin. Squeeze the garlic out of it's papery skin. Discard the skin. Using a potato masher, mash the garlic and butternut squash together (I do this right on the roasting pan). A few chunks are ok. Set aside.
- UPDATE 11/20: I been making this recipe recently using dry Bionaturae lasagna noodles (both whole wheat and plain), layering them in the lasagna without cooking them first and making sure they're covered in sauce. I cooked the lasagna for 10 minutes longer covered (for a total of 40 minutes) as opposed to the original 30 minutes covered. We love the results!ORTo Cook the Noodles: In a large stock pot bring water to a boil to prepare lasagna pasta. Cook according to package directions. Drain and lay noodles flat and separated onto a dry work surface. It's ok if they cool.
- Wipe out the dutch oven or saute' pan and add 3 1/2 C of milk, bay leaf, and thyme (or herb bundle). Bring to a simmer, just until the milk begins to bubble around the edges of the pan, then remove from heat. Allow the herbs steep in the milk for 10 minutes. Remove the herbs and bayleaf and discard. To the reserved 1/2 C of milk, whisk in the all purpose flour. Add the milk/flour mixture into the steeped milk and whisk over medium high heat, whisking until blended. Bring the mixture to a boil. Reduce the heat to medium-low to low and gently simmer for about 5 minutes, until thickened, stirring constantly. Remove from heat and stir in the remaining 1/4 tsp of salt, pepper, nutmeg and red pepper flakes. Stir in 3/4 C of the grated fontina. Set aside.
