POUND CAKE FRENCH TOAST
This is from a bed and breakfast...very rich and sweet. This is good dusted with powdered sugar and served with fresh fruit. It is best used with homemade pound cake because the more dense it is the better it will hold up. This is easy to half or double.

Steps:
- Whisk milk, cream, eggs, and spices/flavorings together.
- Heat fry pan and add enough butter to cook with.
- Dip pound cake in egg mixture (soak longer for more dry or dense cake).
- Do not over soak or your cake will fall apart.
- Place in medium high skillet and cook till brown on both sides.
- Be careful flipping it so it doesn't break apart.

DECADENT CHOCOLATE FRENCH TOAST
Steps:
- Preheat the oven to 350 degrees F. Fit a baking sheet with a wire rack.
- Slice the pound cake into 8 slices. Place the prepared baking sheet. Toast in the oven for 12 minutes.
- In a small pot, heat 1/4 cup heavy cream over low heat. When hot, whisk in the white chocolate chips until melted and fully incorporated into the cream. Remove from the heat and chill in the fridge until cool but still a pourable consistency, about 30 minutes.
- In a blender, combine three-quarters of the strawberries with the sugar. Reserve the remaining strawberries for garnish. Blend until smooth. Strain the puree through a strainer into a bowl. Cover and place in the fridge until ready to serve. Strawberry sauce can be made the day before and keep in the refrigerator in an airtight container.
- In a large chilled bowl, combined the remaining 3/4 cup heavy cream and the cooled white chocolate cream mixture. Whip with a hand mixer until medium peaks form. Cover and place in the fridge while you make the French toast.
- Heat 2 tablespoons butter in a large skillet over medium-low heat.
- In a baking dish. whisk together the chocolate milk, vanilla, cinnamon and eggs until well blended. Place 4 pieces of the pound cake into the egg mixture and let soak for 15 seconds. Flip and soak the other side for 15 seconds. Remove the cake from the egg mixture, allowing any excess to drip off, and place in the heated skillet with the butter. Cook for 3 to 4 minutes per side. Remove to a platter. Add the remaining 2 tablespoons butter to the skillet and repeat with the remaining 4 pound cake slices.
- To assemble: Place a small pool of the strawberry sauce onto 4 plates, 2 to 3 tablespoons per plate. Place 2 pieces of French toast onto each plate. Top each with a large dollop of the white chocolate whipped cream, sprinkle with the some chocolate chips and garnish with a fresh strawberry and mint sprig.
THE BEST FRENCH TOAST CASSEROLE
There's no need to get up early on the weekend to make brunch for a crowd. With this rich, custardy French toast casserole, nearly all the prep is done in advance. Simply assemble and refrigerate overnight. About an hour before brunch time, just pop it into the oven. Whip up a fast and easy banana-caramel topping and bask in the praise of your well-fed guests.

- Butter a 9-by-13-inch baking dish.
- For the casserole: Trim the ends from 1 loaf day-old brioche (about 1 pound) and cut into ten 1-inch thick slices. Cut each slice in half diagonally to make two triangles from each piece. (If the bread is fresh, dry it out a bit. Place the slices in a single layer on a baking sheet and bake at 300 degrees F for 10 minutes, flipping halfway through.)
- Whisk together the eggs, cream, milk, brown sugar, vanilla, cinnamon, nutmeg and 1/4 teaspoon salt in a large bowl until well blended. Dip each triangle of bread in the custard, lightly coating each side. Shingle the pieces in the prepared pan, overlapping slightly.
- Pour any remaining custard over the bread slices. Cover the dish with plastic wrap and place in the refrigerator for at least 6 hours or up to overnight.
- When ready to bake, preheat the oven to 350 degrees F. Remove the casserole from the refrigerator and let rest 15 to 20 minutes at room temperature before baking. Remove the plastic wrap and bake until the casserole is golden and puffed and the custard is set, 45 to 50 minutes.
- For the topping: bring the butter, sugar and syrup to a boil in a medium nonstick skillet over medium-high heat. Cook until the butter is melted and the mixture is begins to thicken, about 2 minutes. Add the vanilla, a pinch of salt, and the walnuts, stirring to coat. Turn off the heat and add the sliced bananas, stirring to coat evenly. Spoon the desired amount of the banana-syrup mixture over the casserole and serve any additional on the side.
BIRTHDAY CAKE FRENCH TOAST
Hmmm...what to do with leftover birthday cake that's getting stale? Use it to make French toast! This is one of those either you love it or hate it recipes. It was sent to me in an email, and I haven't tried it yet, but it does sound interesting. Prep time is the chilling time in the refrigerator overnight.

- In a large bowl, whisk the eggs, milk or cream, and sugar until the mixture is fully combined and lightly frothy on the edges.
- Remove your cake from the refrigerator. It will work if you haven't chilled your cake too, but chilling it overnight keeps the frosting from melting all over when you pan fry the cake. Slice the cake into thick slices.
- Put 2 to 4 tablespoons of butter into your frying pan. Heat the burner to medium-high, and let the butter melt. Once it is lightly bubbling, you're ready to start frying your cake slices.
- Dip each cake slice in your egg mixture, coating it fully on both sides (go ahead and submerge each slice). Place the dipped slice directly in the frying pan; depending on the size of your pan, add 2 or 3 slices at one time.
- Let each slice fry for a minute or so, until it is lightly coming up on the sides (you can lift a side gently with a spatula to see if it is browning). Turn over and repeat on the opposite side, being sure to turn gently so that you don't let the frosting smear across the pan.
- Remove from the pan and transfer to a serving platter or directly to plates. Repeat with the remaining slices until you've finished them all. If desired, top with a confectioners' sugar glaze and sprinkles. Serve immediately.
