Buttermilk Seed Bread image

A soft and chewy bread that's both tangy and wholesome. Four different seeds and whole wheat flour give this bread a hearty texture.

1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
¾ cup warm water (110 degrees F/45 degrees C)
1 ½ cups buttermilk
2 tablespoons margarine, melted
3 tablespoons honey
2 teaspoons salt
2 tablespoons sesame seeds
2 tablespoons flax seeds
2 tablespoons poppy seeds
2 tablespoons sunflower seeds
2 cups whole wheat flour
4 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast and sugar in the warm water. Let stand until creamy, about 10 minutes.
  • Combine buttermilk, butter or margarine, honey and the yeast mixture in a large bowl. Add the salt, all of the seeds and the whole wheat flour. Stir to combine. Add the bread flour, 1/2 cup at a time, mixing well with a wooden spoon after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with the oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees F). Grease two 9x5 inch loaf pans.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into the prepared pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the tops are brown and the bottom of a loaf sounds hollow when tapped.

This is an adaptation of a recipe I made from Betty Crocker's Bread Machine Cookbook. Feel free to experiment with different seeds that meet your liking (example: dill, coriander, poppy, or fennel seeds). Intended for a 2 pound loaf (message me if you need the recipe for the 1.5 pound loaf - it is not a direct down conversion).

1 cup buttermilk
6 tablespoons water
2 tablespoons olive oil (or other oil)
1 3/4 teaspoons salt
2 cups bread flour
2 cups whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons celery seeds
1/2 teaspoon mustard seeds
1 1/2 teaspoons sesame seeds
1 1/2 teaspoons caraway seeds
2 teaspoons bread machine yeast or 2 teaspoons quick active dry yeast

Steps:

  • Place all ingredients in bread machine pan in order, or to the recommendation of your bread machine manufacturer. Make sure you make a well for the yeast on top.
  • Select the Basic/White cycle (I like this better than the Whole Wheat cycle). Select Medium or Light crust color, according to your preferences (I use Light).
  • Once baked, carefully slide bread out of bread machine pan, making sure to remove the dough blade. Cool on a wire rack.

2 tablespoons dry milk

2 teaspoons fast rise yeast or 3 teaspoons active dry yeast

Steps:

  • Place ingredients in bread machine in order listed.
  • be sure water is at room temperature.
  • If using unsalted sunflower seeds, increase the salt by a pinch.
  • Bake per machine manufacturer's instructions.
  • You may use regular, rapid, or delayed time bake cycles.
  • Leftover bread (if any) makes great croutons.

SIX SEED SODA BREAD

One of the farmers markets sells this very heavy dense bread that is chocked full of seeds. Well it is kind of expensive at $4.00 a loaf, so started playing around with some soda bread recipes and came up with this which is close. This is a heavy dense bread that only slices well when cold but tastes better warm. We enjoy it slightly warm with either plain or with flavored butter.*The dough is very sticky see notes in directions*

2 1/2 tablespoons sunflower seeds
2 1/2 tablespoons pumpkin seeds
2 1/2 tablespoons sesame seeds
2 1/2 tablespoons poppy seeds
2 1/2 tablespoons flax seeds
1 1/2 teaspoons fennel seeds
1/4 cup almond flour
1 3/4 cups whole wheat flour
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon brown sugar
1 3/4-2 cups sour milk (a bit extra milk for brushing on top of bread) or 1 3/4-2 cups buttermilk (a bit extra milk for brushing on top of bread)

Steps:

  • Preheat oven to 375°F
  • In a small bowl combine all the seeds and set aside.
  • Combine the flours, baking powder, salt, baking soda, and brown sugar in a large bowl. Add all but 2 tablespoons of the seeds.
  • Stir the sour milk/buttermilk (recommend using smaller amount and gradually add more milk as needed) into the dry ingredients just to blend (dough will be sticky).
  • Turn out dough on to a well floured board and knead about 5 times, just enough to pull it together into a loose ball. (over kneading will make the bread tough).
  • Place the dough on a lightly floured baking sheet and mark it with a deep cross across the top, cutting two-thirds to the way through the loaf with a serrated knife.
  • Brush with a little milk and sprinkle with the remaining 2 tablespoons of seeds.
  • Bake for 35 to 45 minutes or until it sounds hollow when tapped on the bottom.
  • Cool on rack.

2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 large egg
1/4 cup unsalted butter or 1/4 cup olive oil

Steps:

  • Heat oven to 350*F. Spray loaf pan with non-stick cooking spray.
  • Whisk together flour, sugar, baking powder, baking soda and salt in medium mixing bowl. In another bowl combine oil of choice, if using butter first melt it, buttermilk and eggs. Whisk to combine.
  • Pour the liquid ingredients over the dry ingredients. Gently stir and fold ingredients until all the flour has been incorporated and shaggy, wet batter is formed. Be careful not to over mix.
  • Scrape batter into prepared pan spreading evenly into corners. Bake for 45-50 minutes. When finished the loaf should be domed and golden, and a toothpick inserted into the center should come out clean. Let the loaf cool for 15 minutes before slicing.
  • Wrap baked loaves tightly in plastic wrap and store at room temperature. Baked loaves can be wrapped in plastic and then aluminum foil and frozen for up to three months.
  • Variations: Blueberry Loaf - 1 cup fresh or frozen blueberries, 1 tsp vanilla, zest from one lemon.
  • Spicy Jalapeño Loaf - reduce sugar to 2 Tbsp, 1/3 cup diced jalapeño peppers, 1 cup shredded sharp cheddar, 2 tsp chili powder.
  • Irish Soda Bread Loaf - reduce sugar to 1/4 cup, 1 Tbsp caraway seeds, 3/4 cup raisins or currents.
  • Cherry Almond Loaf - 1 cup dried cherries, 1/2 cup toasted sliced chopped almonds, 1 tsp almond extract.
  • Apple Cinnamon Loaf - 1 cup finely diced apples, 2 tsp cinnamon, 1/2 cup toasted chopped walnuts.
  • Pesto Parmesan Loaf - reduce sugar to 1 Tbsp, 1/4 cup prepared pesto, 1/2 cup shredded Parmesan cheese.

6 tablespoons cracked wheat
7/8 cup buttermilk
3 tablespoons butter
2 tablespoons liquid honey
1 1/2 teaspoons salt
1/4 teaspoon baking soda
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
1 tablespoon yeast
3/8 cup toasted sunflower seeds

Steps:

  • Put cracked wheat into a small pot with 1 to 2 cups of water.
  • Bring to a boil, reduce heat to medium and boil for 6 minutes.
  • Remove from heat and drain well.
  • Let cool about 15 minutes.
  • Put cooked wheat into bread machine.
  • Add all other ingredients as listed except for the sunflower seeds.
  • If you don't have buttermilk, you can make a substitute by adding 1 tbsp lemon juice to one cup of whole milk.
  • Stir and let sit for 5 minutes.
  • Use amount called for in the recipe.
  • Set bread machine for whole wheat bread.
  • Press start.
  • Add sunflower seeds at'addition' beep.
