2 cups all-purpose flour
1/4 cup sugar
21/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/4 cup melted unsalted butter, plus some for frying
1 cup blueberries, fresh or frozen
Serving suggestions: whipped cream and maple syrup.

Steps:

  • In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt.
  • Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix, see Cook's Note*.
  • Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.
  • Serve with a dollop of whipped cream and maple syrup.

An American classic, these fluffy blueberry pancakes make the perfect brunch and are served with maple butter. Try experimenting with the toppings of this American buttermilk pancake recipe by adding bacon, eggs, nuts, syrup or yoghurt.

Number Of Ingredients 12

450g/1lb self-raising flour
1 tsp baking powder
½ tsp ground cinnamon (optional)
600ml/20fl oz buttermilk
3 large free-range eggs, separated
50g/1¾oz butter, melted, plus a small knob for frying
1 tsp vanilla extract, or seeds scraped from 1 vanilla pod
300g/10½oz blueberries, plus extra to serve
150g/5½oz butter, softened
pinch of ground cinnamon
small pinch salt
4 tbsp maple syrup

Steps:

  • For the pancakes, put the flour, baking powder, cinnamon, if using, and salt in a large bowl, mix and make a well in the centre. Put the buttermilk, egg yolks, melted butter and vanilla in a large bowl and whisk. In a separate, clean glass bowl, whisk the egg whites until stiff peaks form.
  • Pour the buttermilk mixture into the well in the flour mixture and whisk. Add a large spoonful of the egg whites and fold in with a metal spoon to loosen the batter a little. Stir in the rest of the egg whites, preserving as much of the air as possible, until you have a fluffy, bubbly batter.
  • Heat a 20cm/8in frying pan over a medium heat and add a little butter. Pour one and a half ladlefuls of batter into the pan. Sprinkle a large handful of blueberries over the pancake; it will rise up around them as it cooks. When the pancake has browned on the bottom and is firm enough to flip (cooked through beyond halfway), turn it over quickly and cook for another minute on the other side. Transfer to a plate. Repeat with the rest of the batter and blueberries.
  • For the maple butter, put the butter, cinnamon and a pinch of salt into a bowl. Whisk with a hand whisk until white and fluffy. Gradually whisk in the maple syrup until it is all incorporated and has a whipped consistency. Serve alongside the pancakes.

3 tablespoons unsalted butter, plus more for griddle
3 large eggs
2 1/4 cups well-shaken buttermilk
2 1/4 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon ground cardamom
1 teaspoon pure vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Vegetable oil, for griddle
Blueberry Syrup, recipe follows
1 1/2 cups real New York State maple syrup
1 cup blueberries

Steps:

  • Cut the butter into small pieces and melt in a small saucepan over medium heat or in the microwave. Remove and cool.
  • Heat the griddle over medium heat.
  • Whisk together the eggs, buttermilk, flour, sugar, baking powder, cardamom, vanilla, baking soda, cinnamon, salt and melted butter together. Stir until you have a lumpy batter, but don't over mix.
  • Carefully wipe the griddle down with vegetable oil using a paper towel. Add a very small pat of butter to the griddle and swirl to melt. Once the butter is foamy, add the pancake batter using a 1/4-cup ladle. Flip the pancakes once you see a ring of bubbles around the edges, about 3 minutes. Cook the next side for about 2 minutes more.
  • Wipe the griddle clean and re-oil and butter between each batch. Repeat for the remaining batter. Serve immediately with Blueberry Syrup.
  • Add the syrup and blueberries to a small saucepan over medium heat. Simmer for 10 minutes, until slightly thickened. Smash a few of the berries with a wooden spoon against the sides of the pan. Serve over buttermilk pancakes.

Steps:

  • In a large bowl, whisk flour, sugar, baking soda, salt and baking powder. In another bowl, whisk buttermilk, eggs and oil. Stir into dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle. Sprinkle 1 tablespoon blueberries on each pancake. Turn when bubbles form on top. Cook until the second side is golden brown. If desired, serve with butter and syrup and top with additional blueberries.

1 cup fresh or thawed frozen blueberries
2 cups buttermilk (well shaken before measuring)
2 large eggs
Grated zest of 1 lemon
Vegetable oil, for cooking
Unsalted butter and pure maple syrup, for serving

Steps:

  • Whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar in a large bowl until thoroughly combined. Toss blueberries with 2 tablespoons flour mixture in a medium bowl and set aside. Make a well in the center of remaining flour mixture and add buttermilk, eggs, and lemon zest. Whisk together, gradually incorporating flour mixture, mixing just until combined; some small lumps should remain in the batter. Fold in blueberries. Let batter stand 10 minutes.
  • Preheat a double-burner griddle or a large cast-iron skillet over medium-high heat. Brush griddle with oil and ladle 1/3 cup batter per pancake onto griddle. When small bubbles appear across surface of pancakes and the edges lift from griddle, flip and continue cooking until pancakes are golden brown on the second side and are springy to the touch, about 3 minutes total. Serve with butter and maple syrup; then continue with the rest of the batter.

1 tablespoon cornstarch
2 1/4 cups fresh or frozen (thawed) blackberries
1/4 cup sugar
2 tablespoons real maple syrup

2 cups Original Bisquick™ mix
1 cup buttermilk
2 eggs
1 teaspoon vanilla
1/2 to 3/4 cup fresh or frozen (thawed) blackberries, lightly mashed

Steps:

  • In 2-quart saucepan, beat cold water and cornstarch with whisk until cornstarch is dissolved. Add the 2 1/4 cups blackberries, the sugar, maple syrup and vanilla. Heat to boiling over medium-high heat, stirring frequently and breaking up blackberries with a fork until mashed. Reduce heat; simmer 5 to 10 minutes. Remove from heat; set aside. The mixture will thicken slightly as it cools.
  • In medium bowl, place Bisquick mix; add buttermilk, eggs and vanilla. Mix until just combined, being careful not to overmix. Stir in the mashed blackberries. Let stand 5 minutes.
  • Heat 10-inch skillet or griddle over medium heat (grease if necessary). Spoon batter into 1/4 cup rounds, and cook until bubbles form on top, 2 to 3 minutes. Turn; cook a minute or two longer. Repeat with remaining batter. Serve hot with blackberry syrup.
