Steps:

  • Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
  • Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.

2 cups chicken stock (or water)
2 tablespoons butter
4 cloves garlic minced
juice of two limes
1/2 cup chopped cilantro
1 teaspoon salt plus more to taste

Steps:

  • In a large saute pan or pot with a lid add butter and rice and garlic. Cook over medium heat until garlic is fragrant about 2 minutes.
  • Add chicken stock or water, cover pot, and bring to a simmer. Reduce heat to low and cook until the rice has absorbed all of the water about 20-25 minutes or until liquid is absorbed.
  • Remove from heat and fluff with a fork, stir in lime juice and salt add more of each if desired. Add cilantro toss and serve.

Steps:

  • Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Steps:
