An easy orzo pasta salad filled with Mediterranean flavors like roasted red peppers, olives, cucumbers, and feta.

3 tablespoons olive oil
3 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt, plus more as needed
1/4 teaspoon freshly ground black pepper, plus more as needed
12 ounces dried orzo pasta (about 2 cups)
1 (12-ounce) jar marinated artichoke hearts, drained and coarsely chopped
1 (12-ounce) jar roasted red peppers, drained and coarsely chopped
1/2 large English cucumber, diced
1 small red onion, finely chopped
1 cup pitted Kalamata olives, coarsely chopped
1/2 cup loosely packed coarsely chopped fresh parsley leaves
6 ounces feta cheese, crumbled (about 1 1/2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, whisk the oil, vinegar, oregano, salt, and a few grinds of black pepper together in a large bowl; set aside.
  • Add the orzo to the water and cook until al dente, 7 to 9 minutes or according to package instructions. Drain and run briefly under cool water to cool the orzo down. Drain well again.
  • Add the orzo, artichoke hearts, peppers, cucumbers, red onion, and olives to the bowl of dressing. Toss thoroughly to combine. Add the parsley and feta and toss again. Let sit 20 minutes, stirring occasionally, to allow the flavors to meld. Taste and season with more salt and pepper as needed.

3 cups baby spinach leaves (, gently torn into large pieces)
1 1/2 chopped red bell pepper (, about one red bell pepper)
1 cup cucumber (, diced and seeded, about one medium)
3/4 cup red onion (, diced)
5 ounces Castelvetrano green olives (, drained and halved)
5 ounces Kalamata pitted olives (, drained and halved)
7 ounces feta cheese
1/2 cup canola oil
1/4 cup olive oil
1 lemon (, juiced)
1 1/2 teaspoons oregano
1 teaspoon kosher salt
1 teaspoon black pepper

Steps:

  • Bring a pot of water to a boil, season with salt, and cook the orzo for 10 minutes. Drain, rinse, and set aside to cool.
  • Transfer the cooled orzo to a large mixing bowl. Add the spinach, chopped vegetables, and olives, then crumble half of the feta cheese over the pasta.
  • In a small bowl, whisk the canola oil, olive oil, lemon juice, oregano and salt and pepper until mixed. Pour the vinaigrette over the pasta mixture and gently fold until the pasta and veggies are coated. Taste for seasoning and top with the remaining feta cheese.
  • Refrigerate for 1 hour or overnight before serving. The pasta is best within 2-3 days, but will last in the refrigerator up to 1 week.

2 roasted red peppers from a jar or 1/2 fresh red bell pepper (1/2 cup diced)
1/3 cup chopped dill, plus more for garnish
1/3 cup chopped mint
2 tablespoons white wine vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon Dijon mustard
1 teaspoon dried oregano
1/2 cup feta cheese crumbles
1/3 cup Kalamata olives, halved

Steps:

  • Prepare the orzo according to the package instructions. Taste the orzo a few minutes before completion to ensure it's 'al dente' (chewy, but with a little firmness in the center). When it's done, drain it and then rinse it under cold water until it comes to room temperature.
  • Place the chickpeas in a bowl with the lemon zest, lemon juice, and 1/4 teaspoon kosher salt.
  • Mince the red onion, then place it in a bowl with water (this helps to remove the sharp onion taste). Dice the cucumber. Dice the roasted red pepper. Chop the herbs.
  • Stir together the orzo, chickpeas and bowl of lemon juice, red onion, cucumber, red pepper, dill, mint, white wine vinegar, olive oil, Dijon mustard, oregano, feta crumbles, black olives, and several grinds of black pepper. Taste and if necessary, season with more kosher salt.

1/4 c. Extra Virgin Olive Oil
1 whole Lemon, Juiced
1 clove Garlic, Minced
Salt And Pepper, to taste
12 oz. weight Orzo Pasta, Cooked, Drained, And Cooled
1 c. Red Grape Or Cherry Tomatoes
1 c. Yellow Grape Or Cherry Tomatoes
1 c. Kalamata Olives, Halved

Steps:

Steps:

  • Cook the orzo pasta according package instructions (mine took about 8 minutes). Drain and cool briefly.
  • In a large mixing bowl, combine the grape tomatoes, green onions, bell peppers, parsley, dill, olives and capers (hold the feta for now). Add the orzo pasta.
  • Make the dressing. In a small bowl, combine the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano and a good pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad and toss until well combined and the orzo pasta is well coated with the dressing.
  • Top with pieces of creamy feta cheese. Cover and refrigerate for a bit before serving.
