I ended up getting some snow crab legs on sale at the market. I wanted something a little different from plain steamed, boiled, or grilled crab legs, so I ended up throwing a few things together to make this awesome crab leg dish. Enjoy! This would be great with shrimp as well.

1 pound Snow Crab clusters, thawed if necessary
¼ cup butter
1 clove garlic, minced
1 ½ teaspoons dried parsley
⅛ teaspoon salt
¼ teaspoon fresh-ground black pepper

Steps:

  • Cut a slit, length-wise, into the shell of each piece of crab.
  • Melt the butter in a large skillet over medium heat; cook the garlic in the butter until translucent; stir in the parsley, salt, and pepper. Continue to heat mixture until bubbling. Add the crab legs; toss to coat; allow to simmer in the butter mixture until completely heated, 5 to 6 minutes.

Steps:

  • Place the butter in a small saucepan and bring to a boil over medium-high heat. Boil for 1 minute.
  • Set the saucepan aside and let the butter settle, undisturbed. The milk solids will come to the top of the butter and the watery whey will collect on the bottom. Skim off the milk solids with a spoon and pour the drawn butter into a serving bowl or several small ramekins, taking care not include the watery liquid in the bottom of the pan. Serve.

1 Tablespoon lemon zest, (divided use)

1 cup cocktail sauce

12 ounces cooked tiny shrimp
2 cups shredded Mozzarella cheese
3 sliced green onions
1 green pepper, (diced)
Crackers (Triscuits, Wheat Thins, Club) (for serving)

Steps:

  • In a mixing bowl, add softened cream cheese, sour cream, mayonnaise, butter and mix well.
  • Add the worcestershire sauce, lemon juice, half the lemon zest and garlic and mix again until combined.
  • Spread cream cheese mixture evenly into a large serving platter or a wide bowl.
  • Spread cocktail sauce over cream cheese.
  • Then evenly sprinkle with a layer of crab meat. Then evenly sprinkle on the tiny shrimp on top of the crab meat.
  • Next, evenly sprinkle the mozzarella cheese, green onions and green pepper on top of the shrimp layer. Sprinkle the remaining lemon zest on top.
  • Refrigerate until serving. Serve with your choice of crackers or toast.

This crab dip is inspired by a recipe called "ritzy dip" from the "Three Rivers Cookbook," a Pittsburgh community cookbook published in 1973, in which canned crab is mixed with cream cheese, topped with Ritz crackers and baked. Fresh lump crab meat is the star in this updated version, with lemon juice, scallions and plenty of Old Bay seasoning to spice things up. This recipe doubles easily for larger groups, and the whole thing can be assembled and refrigerated up to a day in advance before being baked.

Steps:

  • In a medium saucepan, melt butter on medium-low heat.
  • Once melted, you should notice a foamy white layer on top of the butter mixture. This is the butter's milk solids. Use a heat-proof spoon to skim off and discard the foam.
  • When most of the foam has been removed, turn off the heat and remove the saucepan away from hot burner. At this point, the butter left over in the pan should look golden and not foamy - this is the butterfat.
  • Line a wire mesh strainer with cheesecloth, or a large coffee filter. Place the strainer over a large bowl. Carefully pour the butterfat through the strainer. You might discover more milk solids as you get to the bottom of the butter mixture. Leave the milk solids in the pan and don't pour it through the strainer.
  • Pour the drawn butter (aka clarified butter) into an air-tight jar to use for later, or pour into a dipping bowl if serving immediately. Just before serving, squeeze some lemon juice and pair with freshly steamed seafood (especially crabs and lobster tail!)
