BURNT CARAMEL PUDDING
Great holiday entertaining recipes are even better if they can be made a day ahead. Midge, a Food52 community member, shared this recipe for Burnt Caramel Pudding: the complex depth of the deeply toasted, almost burnt caramel and the richness of real vanilla bean infuse a dessert that's creamy and easy to make. Add a dollop of whipped cream or sweetened mascarpone, and it's dressed up for a dinner party.

Steps:
- Heat oven to 300 F.Pour cream into a small saucepan. Split vanilla bean and scrape the seeds into the cream; toss the scraped pod in there, too. Turn the heat to low to gently warm the cream to just below a simmer. Remove from heat and set aside.
- Reserve 2 tablespoons of the sugar; pour remaining sugar and 1 1/2 tablespoons water into heavy-bottomed saucepan and set over medium heat, stirring until sugar dissolves. Then crank the heat to high and let the liquid bubble away. Don't stir, just swirl the pan occasionally, until it turns dark amber. This takes about 4 minutes, but watch closely because it happens fast. Moving quickly, fish the vanilla pod out of the cream and save for another use. Slowly stir the warm cream into the caramel. Let the mixture cool for about 10 minutes.
- Meanwhile, whisk the egg yolks with the remaining sugar and a pinch of salt in a medium bowl, until light and lemon colored.
- Whisk a little of the cream-caramel mixture into the egg yolks, to temper the yolks. Then add the yolk and cream mixture to the pot of cream and caramel. Strain the mixture into a pitcher or large measuring cup.
- Pour the mixture into four ramekins. If you like your caramel a bit salty, sprinkle a few extra grains of sea salt on top of each one. Place the ramekins in a shallow pan. Place the pan in the oven, and fill the outside of the pan with cold water, to halfway up the sides of the ramekins. Bake for about an hour to an hour and 15 minutes, until the custard is set in the middle.
- Remove the puddings from the oven, remove them from the water bath, and let cool completely. Chill for at least 6 hours, but it's best if you can chill overnight. Serve with whipped heavy cream, if you like.
BURNT ORANGE NEGRONI
Steps:
- Char a whole orange on the grill and set aside to cool down.
- Combine the gin, vermouth, liqueur, simple syrup, lemon juice and bitters in a mixing glass over ice. Add a slice of the charred orange and shake. Pour into a rocks glass and drink up!

- Heat the cream in a pan until boiling. Meanwhile, whisk the egg yolks and sugar together in a large bowl with an electric whisk until light and fluffy, about 3-5 mins. Pour the hot cream over the eggs, whisking continuously, and when everything is mixed, set aside.
- Spread the bread with the butter, and cut into triangles. Arrange in a shallow baking dish, about 20 x 26 x 5cm, buttered-side up, in three layers, sprinkling the raisins and finely grating some nutmeg over the bottom two layers and leaving the top layer clear. Pour over the warm custard, lightly pressing the bread down with your fingers to help it soak in. Leave to stand for at least 20 mins before cooking. Can be prepared up to this stage several hours ahead, chilled and cooked when needed.
- Heat the oven to 180C/160C fan/gas 4. Sit the dish in a large roasting tin and pour a kettleful of hot water into the roasting tin so it comes three-quarters of the way up the outside of the dish. Bake in the oven for 20-25 mins until the custard is just set.
- Remove the pudding from its water bath and scatter the top liberally with more sugar. Caramelise the top under a hot grill or with a blowtorch - take it really far (a few burnt edges add to the flavour), but be careful it doesn't catch. Leave the pudding to rest for 5 mins, then serve with your favourite ice cream - I like bitter orange marmalade ice cream.

- Sift the flour and baking powder and mix well.
- In a seperate bowl, mix the butter and sugar and beat till light.
- Add the beaten eggs and mix until well blended.
- Next add the fruit, bread crumbs and orange rind.
- Fold in the flour and orange juice alternately.
- In a pudding mould, Layer the bottom with maple syrup.
- Sprinkle the almond slivers on it.
- Pour the mixed pudding batter into the mold over the syrup it.
- Put a lid on the mold and put it in a rice cooker.
- Pour water in the cooker upto half the mould height.
- Switch the cooker into cooking and let it cook for 1 hours.
- After 1 hr remove the mould from the cooker and let it cool for 5 minutes.
- Invert the mould into a plate and cut into slices.
- Serve warm with custard.

- Butter a 9" square pan or 11 x 7 " baking dish.
- Heat oven to 350*.
- In a large bowl, combine torn bread, cranberries, orange zest, and juice.
- In another bowl, whisk together the vanilla, butter, half-and-half, and eggs.
- Pour over the bread; stir in the sugar.
- Let bread soak for about 5 minutes.
- Pour into prepared baking dish; place in a larger pan and place on rack in oven. Pour very hot water into the larger pan, to a depth of about 1/2 inch.
- Bake for 45 to 55 minutes or until set.
- Serve with vanilla sauce, an orange custard sauce, or a little heavy cream.

This recipe is designed for individual ramekins, but it can easily be adapted for a larger baking dish: You will have to bake it a little longer, testing it for doneness by inserting a knife into the center, as you would a cake; it is done when the knife comes out clean. NOTE: This needs to be started the night before.

- To make the pudding;.
- Heat the milk, sugar, cinnamon stick, and orange zest in a medium saucepan over medium heat until the sugar dissolves.
- Let cool, cover, and refrigerate overnight to steep.
- Preheat the oven to 350°F Put the bread cubes in a large bowl.
- Reheat the milk mixture and remove the cinnamon stick. In a large bowl, lightly whisk together the yolks and eggs.
- Pour the milk mixture into the eggs and mix thoroughly.
- Pour this mixture over the bread and allow to soak for a few minutes.
- Butter the insides of eight 5-ounce ramekins. Divide the mixture among the ramekins and place them in a roasting pan or on a large, deep sheet pan.
- Pour about 1 inch of water into the pan to create a water bath.
- Bake until a knife inserted in the center comes out clean, about 1 1/4 hours.
- To make the sauce:
- Bring orange juice to a simmer over medium-high heat in a medium saucepan, then reduce to 1/4 cup, about 10 minutes.
- Strain through a fine sieve into a bowl, add cream, and set aside.
- In another saucepan, melt butter over medium heat. Add sugar and continue to cook, stirring frequently until sugar is lightly caramelized, about 3 minutes.
- Add the orange juice mixture, stirring constantly.
- Simmer for 5 minutes and strain through a fine sieve.
- Serve the pudding warm, either turned out onto individual plates or left inside the ramekins.
- Top with the sauce, a dollop of whipped cream, and a dusting of powdered sugar.
