8 ounces Eckrich® Smoked Sausage, halved lengthwise and cut into 1/4-inch slices
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1/2 cup plain yogurt
1/4 cup honey mustard
2 teaspoons maple pancake syrup
1 package (6 ounces) fresh baby spinach
1 large mango, peeled and diced
4 green onions, thinly sliced

Steps:

  • In a large skillet, cook and stir sausage over medium heat for 5 minutes or until lightly browned. Remove from the heat. Stir in beans; set aside., In a bowl, combine the yogurt, mustard and syrup; set aside. Divide spinach among four bowls or plates; top with the sausage mixture, mango and onions. Drizzle with yogurt mixture. Serve immediately.

2 fully cooked Italian chicken sausage links (3 ounces each), cut into 1/4-inch slices
1/2 medium onion, halved and sliced
4 cups fresh baby spinach
1-1/2 teaspoons balsamic vinegar
1 teaspoon stone-ground mustard

Steps:

  • In a large nonstick skillet, heat 1 teaspoon oil over medium heat. Add sausage and onion; cook and stir until sausage is lightly browned and onion is crisp-tender., Place spinach in a large bowl. In a small bowl, whisk vinegar, mustard and remaining oil. Drizzle over spinach; toss to coat. Add sausage mixture; serve immediately.

  • Cook 3 slices chopped thick-cut bacon in a skillet until crisp. Remove with a slotted spoon to paper towels; whisk 2 tablespoons of the drippings with 1 diced small shallot, 1 teaspoon dijon mustard, 3 tablespoons white wine vinegar and 2 tablespoons water. Toss with one 5-ounce bag baby spinach, 1 cup halved red grapes and 1/2 cup pistachios; season with salt and pepper. Top with 1/4 cup crumbled blue cheese and the bacon.

From the February/March 2006 issue of Everyday with Rachael Ray magazine. This is a simple salad that works as a main course for lunch, dinner or even breakfast. The magazine says that runny eggs make a richer dressing, but this salad tastes great with scrambled or hard-boiled eggs. I love the lemon-tang of the dressing.

12 ounces bulk pork sausage
2 1/2 tablespoons olive oil
1 teaspoon lemon zest, grated
1 1/2 tablespoons fresh lemon juice
6 ounces Baby Spinach
coarse salt
fresh ground pepper
4 large eggs

Steps:

  • In a large nonstick skillet, cook the sausage over medium heat, breaking it up with a wooden spoon, until crumbly and crisp, about 10 minutes.
  • Remove the sausage to a bowl with a slotted spoon and return the skillet to the stove.
  • Add the olive oil, zest and juice to the pan and, over medium-high heat, stir the mixture with a wooden spoon, scraping up any brown bits, for about 1 minute.
  • Remove pan from the heat.
  • Add the spinach and use tongs to coat the leaves with the dressing.
  • Sprinkle the salad generously with salt and pepper.
  • Divide the spinach evenly among 4 bowls and top with the crumbled sausage.
  • Wipe the nonstick skillet clean with a paper towel and fry each egg over easy.
  • Top each salad with a fried egg and serve.

1/2 pound bulk pork sausage
1/4 cup chopped green onions
1/2 teaspoon minced garlic
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups shredded Monterey Jack cheese
1-1/2 cups half-and-half cream
3 large eggs
2 tablespoons grated Parmesan cheese

Steps:

  • Prepare stuffing according to package directions. Meanwhile, crumble sausage into a large skillet. Add onions; cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain., In a large bowl, combine the stuffing, sausage mixture and spinach. Transfer to a greased 11x7-in. baking dish; sprinkle with Monterey Jack cheese. In a small bowl, combine cream and eggs; pour over sausage mixture., Bake at 400° until a thermometer reads 160°, 35-40 minutes. Sprinkle with Parmesan cheese; bake until bubbly, about 5 minutes longer.

4 cups fresh spinach, packed, stemmed, torn into bite-size pieces (about 3/4 of a bag)
1 teaspoon olive oil
4 hot Italian sausages (can use sweet(mild)
3 green onions, sliced
3 tablespoons sherry wine vinegar or 3 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
salt & freshly ground black pepper

Steps:

  • Place the spinach in a large bowl. Heat 1 teaspoons of the olive oil in heavy, large skillet over medium heat. Add sausages and cooked until browned and cooked through.
  • Transfer sausages to paper towels, using slotted spoon. Drain sausages and then slice 1/2 inch thick.
  • Heat drippings in skillet over medium heat. Add green onions and stir one minute. Add vinegar and bring to a boil, scraping up any browned bits. Mix in 1 tablespoons oil and mustard. Add sausage and toss to coat. Season with salt and pepper. Pour over spinach and toss.
  • Adjust seasoning.

1 tbsp olive oil
400g pack good quality sausages
1 red onion , roughly chopped
1heaped tbsp wholegrain mustard
1 tbsp light muscovado sugar
16 cherry tomatoes
2 Little Gem lettuces
1large avocado
¼ cucumber
1 tbsp red wine vinegar
crusty bread , to serve

Steps:

  • Heat the oil in a wok or deep frying pan. Using scissors, snip the sausages into quarters straight into the pan. Throw in the onion, and fry for a minute or two, stirring every now and then to brown everything. Spoon in the mustard and sugar, tip in the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
  • Meanwhile, separate the lettuces into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them together and pile onto a platter. Spoon the hot sausage mixture on top. Add the vinegar and 1 tbsp water to the pan and stir it over the heat to dislodge all those tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.
