BUTTERMILK BISCUITS

Buttermilk Biscuits image

Provided by Kardea Brown

Categories     side-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 4

2 cups self-rising flour, plus extra for dusting
1/4 cup shortening
2/3 cup buttermilk, plus additional as needed
4 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 450 degrees F. Place a 10 1/2-inch cast-iron skillet in the oven to heat.
  • Add the flour to a large bowl. Use your hands or a pastry cutter to work the shortening into the flour until the crumbs are the size of large peas.
  • Slowly pour in the buttermilk, then mix with your hands until the mixture starts to form a dough. Add buttermilk if it feels too dry. As soon as the dough comes together, transfer to a floured work surface. Press the dough into a square and fold it over itself to create layers, using additional flour to keep the dough from sticking. Shape into a 1/2-inch-thick rectangle. Use a 2- to 3-inch biscuit cutter to cut out biscuits, rerolling the scraps to use all the dough.
  • Take the skillet out of the oven and add 2 tablespoons melted butter. Place the biscuits in the skillet, then lightly brush the tops with the remaining butter.
  • Bake until lightly golden brown, 15 to 17 minutes. Let cool for a few minutes, then serve.

"My boyfriend and I were vacationing in Boulder, Colorado, when we discovered Dot's Diner, a cozy place that serves wonderful breakfasts," writes Kimberly McClain of Harris, Iowa. "The biscuit that came with my meal was baked to perfection. I would drive all the way to Colorado just to go to Dot's again." This classic recipe produces biscuits with a lovely light texture.

PLAIN GOOD BUTTER BISCUITS

Plain Good Butter Biscuits image

This has become my go-to recipe for biscuits. It's simple, quick and uses ingredients I almost always have on hand. I've heard that the best biscuits are made with a butter/lard combo. However, I don't have access to real, additive-free lard and will not touch the chemical mystery food that is shortening, so...Here I am with the next best thing...The Plain Good Butter Biscuit. I got this from Brenda Hyde at SeedsofKnowledge.com and it's based on a 1933 recipe.

Provided by RedFarmGirl

Categories     Breads

Time 22m

Yield 12 biscuits

Number Of Ingredients 5

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons butter
3/4 cup milk (about)

Steps:

  • Sift the flour then measure. Add b. powder and salt and sift again.
  • Cut in the butter. Hyde recommends using your fingers for this by rubbing the butter into the flour. I usually don't because the heat of my hands and fingers tend to melt the butter and that's not good. If you have "hot hands" too, use a pastry cutter or two knives to cut the butter into the flour.
  • Add the milk gradually, stirring gently. Add only enough milk to bring the flour together in a soft ball. Turn the mix onto a floured surface and knead it reluctantly, just enough to incorporate all the milk. Gently pat the dough into a 1/2" tall layer. Handle the dough as little possible so the biscuits will be tender.
  • Cut the dough into rounds or squares and place in a buttered pan. It helps biscuits to rise more if you allow the sides to touch. I don't know why this works but it usually does for me.
  • Bake for 12 - 15 minutes at 400 deg.
  • You can make these into great appetizers by adding shredded cheddar and fresh parsley to the flour before adding milk. Then cut the biscuits with a small cutter (or glass) about 2" in diameter.

MACADAMIA & BURNT BUTTER BISCUITS

Macadamia & Burnt Butter Biscuits image

My gosh, what a delicous biscuit!!! I found this recipe from the cook and the chef (A.B.C.) and baked them...... what a great recipe !!! Cornflour can be substituted for rice flour. I have found using a good quality marmalade makes a great difference to the taste.

Provided by Tisme

Categories     Dessert

Time 3h15m

Yield 25 Biscuits, 25-30 serving(s)

Number Of Ingredients 7

100 g unsalted butter (must be at room temperature)
50 g unsalted butter
75 g caster sugar
175 g plain flour
30 g rice flour
70 g chopped macadamia nuts
3 tablespoons marmalade

Steps:

  • Melt 50g butter in a small saucepan and continue to cook until nut brown, set aside to cool slightly.
  • Beat the remaining 100g room temperature butter and castor sugar together in an electric mixer until creamy. Sieve the flour and rice flour together and add to the butter mixture, and mix well by hand.
  • Stir in the chopped macadamia nuts and marmalade, and add the cooled nut-brown butter. Stir well to combine, then divide the mixture in two and roll each half into a cylindrical shape on a lightly floured clean work surface. Make sure that there are no cracks in the cylinder shapes, then roll them up tightly in cling film wrap and place on a flat surface and refrigerate for about 2-3 hours or overnight until ready to use.
  • Pre-heat the oven to 180°C & line a two baking tray's with baking paper. Slice the biscuit dough into even rounds about 1 - 1.5cm thick and bake for 10-12 minutes. Allow to cool before serving.

BEST TYPE OF BUTTER FOR MAKING BISCUITS | ALLRECIPES
Land O'Lakes, like most American butter, has a butterfat percentage of about 80 percent. The remaining 20 percent of the stick is mostly water, with a couple of percentage points worth of milk solids other than fat. The biscuits I made with Land O'Lakes were perfectly delicious, flaky, and not lacking in buttery flavor — or so I thought.
