- In a small bowl, beat butter and brown sugar until light and fluffy. Add mayonnaise and hot sauce; beat until smooth. Set aside., Crumble beef into a large bowl; sprinkle with salt and pepper and mix well. Shape into 6 patties., Grill burgers, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. , Place on rolls. Top each with 2 tablespoons Buffalo mayonnaise and 1 tablespoon each of celery and cheese.

BUFFALO (OR BEEF) BURGER
Buffalo tastes rich but is very lean - adding medium ground beef to it keeps these burgers juicy. We're fortunate to live near a buffalo ranch but if you don't & can't find it at the supermarket, a butcher may be able to order it for you - or you can substitute with all beef. This recipe comes from the Rebel House restaurant in Toronto which is known around town for its excellent buffalo burger.

Steps:
- In skillet, heat oil over medium heat; fry diced onion, stirring occasionally, until softened, about 5 minutes.
- Let cool.
- In large bowl, beat egg.
- Stir in thyme, mustard, horseradish, salt and pepper; mix in onion, beef and buffalo.
- Shape into four 1/2-inch (1 cm) thick patties.
- (Make-ahead: Cover and refrigerate for up to 6 hours. Or layer between waxed paper in airtight container and freeze for up to 1 month; thaw in refrigerator.) Place patties on greased grill over medium-high heat; close lid and cook, turning once, until no longer pink inside, about 10 minutes.
- Cut rolls in half; place, cut sides down, on grill and toast until golden, 1 to 2 minutes.
- Layer burgers, lettuce, tomato then onion on bottoms; sandwich with tops.

BUFFALO SAUCE BURGERS STUFFED WITH BLUE CHEESE
Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

Steps:
- Melt butter and whisk in hot sauce.
- Mix blue cheese and garlic in a small bowl.
- Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
- Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
- Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
- Heat grill to medium and oil grate.
- Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
- (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).

Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

- Prepare your outdoor grill for direct grilling over medium heat.
- Saute' the chopped onion with butter in a skillet over medium to low heat. Cook until onion begins to brown, approximately 5-7 minutes.
- In a medium bowl, using your hands, mix together the ground turkey, celery, garlic and buffalo wing seasoning mix, just until blended. Next, mix in the cooked onion. Shape into 6 very flat patties.
- Brush the grill rack liberally with vegetable or canola oil prior to cooking. Place burgers on hot grill; cook 5 minutes, or just until the meat loses its pink color throughout, turning over once. (Burgers should reach an internal temperature of 170 degrees F.).
- OPTIONAL: To turn up the flavor and the heat a notch, in a medium bowl, whisk together the hot sauce and melted butter. While the burgers are cooking, baste them liberally with this mixture.
- On the grill or in a toaster, lighlty toast the rolls/buns. During the last minute of cooking, add the crumbled blue cheese to each burger and cover to melt.
- To serve, place the lettuce, tomato slices and pickles on the roll/bun bottom; if desired, drizzle the hot sauce and butter mixture over the burger before serving, Cover with roll/bun tops.
- Cook's Tip: In small bowl, stir mayonnaise (1/4 cup), sour cream (1/4 cup), crumbled blue cheese (1/2 cup), vinegar (2 teaspoons), and Worcestershire (1/2 teaspoon) until blended. This blue cheese sauce makes about 3/4 cup and is a delicious accompaniment to carrot and celery sticks when serving this spicy turkey burger.
- Cook's Tip: For an added treat when toasting your rolls and buns, combine melted butter with garlic and brush on the insides prior to setting them on the hot grill.
