Make these easy Buffalo Chicken Cucumber Bites appetizer recipe where creamy buffalo chicken meets crunchy juicy cucumber with a dash of hot sauce to top it off.

1 Cucumber, sliced into quarter inch slices (should yield about 16 slices)
3 tablespoons of shredded chicken
¼ cup of cream cheese, softened
3 teaspoons of hot sauce (or to your liking)
3 teaspoons of celery, finely chopped
1 ½ tablespoons of mozzarella cheese
1 teaspoon of ranch dressing or ½ teaspoon of ranch seasoning
Salt and pepper, to taste
3 tablespoons of crumbled blue cheese
Parsley to garnish

Steps:

  • In a small bowl, add in chicken, cream cheese, hot sauce, mozzarella cheese, ranch, and celery. Mix well.
  • Line up cucumber, add about a teaspoon of cream cheese mixture to each cucumber slice.
  • Top mixture with blue cheese. Garnish with parsley, hot sauce, and celery (if desired).

This is always in demand at any football get together. You can make the bites and use any type of sauce you want. Me personally, I like to take a quarter cup of Sweet Baby Ray's® barbecue sauce and a quarter cup of Franks Red Hot® sauce and mix it together.

1 cup all-purpose flour
2 tablespoons cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
2 eggs
1 cup vegetable oil
1 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
¼ cup hot sauce
1 tablespoon chopped garlic
1 teaspoon butter

Steps:

  • Whisk flour, cayenne pepper, salt, and pepper together in a bowl. Beat eggs together in a separate bowl. Dip chicken pieces in the egg; transfer chicken to flour mixture and coat completely.
  • Heat oil in a saucepan over medium heat.
  • Fry coated chicken pieces in the hot oil, working in batches, until no longer pink in the center, about 3 minutes per side; drain on a paper towel-lined plate.
  • Combine hot sauce, garlic, and butter in a microwave-safe bowl; heat in the microwave until butter is melted and sauce is warm, about 1 minute. Serve hot sauce mixture as a dipping sauce or pour over buffalo chicken bites.

Light and healthy Cucumber Appetizers pair spicy creamy Buffalo chicken with fresh cucumber slices. It's an easy, crowd pleasing veggie filled snack that's perfect for holidays, game days, and parties.

2 long English cucumbers
2 1/2 cups cooked chicken breast (shredded)
1/2 cup plain yogurt (2%+ fat)
4 tbsp Frank's red hot sauce
3 tbsp blue cheese (crumbled)
3 green onion sprigs (finely chopped)
Ground black pepper (to taste)

Steps:

  • Trim the ends of cucumbers and cut into 0.5 inch thick slices. If you would like pretty lines like mine, before slicing peel skin with a vegetable peeler lengthwise every 45 degrees. Set aside.
  • In a medium bowl, combine chicken, yogurt, hot sauce, blue cheese, onion and pepper; stir well.
  • Arrange cucumber slices in a single layer on a serving platter. Using 2 forks, scoop amount of chicken mixture not wider than a cucumber slice and rather tall, place on a cucumber slice and repeat with remaining slices. Any leftovers - you are allowed to eat.
