HOT TURKEY HORSESHOE SANDWICH

Steps:
- Cook fries according to package instructions. Place in a large bowl, then sprinkle with garlic salt and set aside.
- Meanwhile, melt butter in a medium pan over medium heat, then add flour and whisk until blonde. Whisk in milk, Worcestershire and sriracha and bring to a simmer, then cook until thickened, 3 to 5 minutes. Whisk in both cheeses until melted. Adjust seasoning with salt and pepper.
- Place a couple slices of turkey on the griddled Texas toast, then a pile of French fries; ladle the cheese sauce over the entire thing. Garnish with some parsley and some pickled peppers.
HORSESHOE
Every time we visit Springfield, Illinois we have to eat one of their famous horseshoes. The cheese sauce is a little different depending on where you stop to eat, seems everyone has their own way of making it. But we love them all. If you only use one slice of bread and one hamburger patty it is called a ponyshoe. This recipe can also be made with chicken tenders in place of the hamburger patties.

- Preheat the oven to 400 degrees F (200 degrees C). Spread french fries out on a baking sheet. Bake for 20 minutes in the preheated oven, or until golden brown.
- Meanwhile, divide the ground beef into four equal parts and form into patties. Fry the patties in a large skillet over medium-high heat until well done, about 4 minutes per side.
- Melt the butter in a saucepan over medium heat and whisk in the flour. Cook while stirring constantly for 4 minutes to cook out the flavor of raw flour. Gradually whisk in the half-and-half so that no lumps form. Bring to a simmer then remove from the heat and add the cheese; stir until melted. Season with salt, pepper, and hot sauce to taste.
- Place 2 slices of toasted bread onto 2 dinner plates and top each slice with a hamburger patty. Top each patty with cooked french fries. Pour the cheese sauce on top of everything and serve immediately.

Steps:
- Melt butter, add flour and stir until smooth and bubbly whisk in milk. Add rest of ingredients except beer. Stir constantly until sauce is smooth and cheese is melted. Whisk in beer just before serving.
- To Prepare shoe: toast a piece of Texas toast, top with meat (burger, bacon, turkey, whatever), put french fries on top of meat then ladle cheese sauce over top of sandwich.

Steps:
- Prepare frozen French fries according to package directions.
- Meanwhile, prepare cheese sauce by first beating egg yolks and beer together.
- Melt butter and cheese together over boiling water, stirring in one direction only with wooden spoon.
- Add Worcestershire sauce, dry mustard, salt and cayenne pepper.
- Stirring constantly, add beer/egg mixture to cheese mixture a little at a time.
- Keep mixture hot as you stir, but don't let it bubble.
- Meanwhile, toast bread.
- Meanwhile, preheat platter.
- Place toast on platter.
- Place meat atop toast.
- Cover meat with cheese sauce.
- Circle platter with French fries.
- Add dash of paprika.
- Makes 1 serving.

- Constant stirring and top-quality cheese will yield a smooth mixture.

- Cook potatoes according to package directions. Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour, salt, mustard and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. , Reduce heat to medium-low. Stir in cheese until blended. Stir in beer and Worcestershire sauce; heat through., Heat a large skillet over medium-high heat. BOSTON LAGER CHEDDAR CHEESE SAUCE
This is a modification of the original Leland Hotel horseshoe sauce served in Springfield Illinois in the mid 20th century. I have updated the ingredients a bit to my own taste as some of the originals are no longer available. I use this on everything that requires a cheese sauce from fries to broccoli. It also makes a mean soup with just a bit more milk.

- Melt the butter in a large heavy saucepan over medium heat. Add the flour and stir with a wooden spoon or whisk to combine. Cook for a couple minutes so the flour loses its raw taste.
- Whisk in the milk, salt, mustard and pepper. Bring to a simmer and cook, stirring constantly, until the mixture is quite thick.
- Remove the saucepan from the stove. Add the Worcestershire sauce and the cheese, and stir until the cheese is completely melted .
- Whisk in the beer, and return the saucepan to the stove. Cook, stirring constantly, until the sauce comes just to a bare simmer. Do not let it boil.
- Other notes, Do not use pre-grated cheese as the anti-caking agent will make the sauce grainy. I prefer medium raw milk white cheddar from Jason Wiebe Dairy. It is a sharp as any national brand labeled sharp but in general if you don't like the flavor of a cheese by itself don't cook with it. As f or beer I prefer Samuel Adams Boston Lager but any hoppy beer such as a good lager or IPA will do.
