1 pound ground beef
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup (Regular or Healthy Request®)
1/2 teaspoon Louisiana-style hot sauce
1/2 cup crumbled blue cheese or 4 slices blue cheese
4 Pepperidge Farm® Classic Hamburger Buns, split
Lettuce leaves, red onion slices, tomato slices (optional)

Steps:

  • Shape the beef into 4 (1/2-inch-thick) burgers.
  • Lightly oil the grill rack and heat the grill to medium. Grill the burgers for 10 minutes for medium or to desired doneness, turning the burgers over once halfway through grilling.
  • Heat the soup and hot sauce in a 1-quart saucepan over medium heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes. Top the burgers with the soup mixture. Sprinkle with the cheese. Serve the burgers on the buns with the lettuce, onion and tomato, if desired.
  • Serving Suggestion: Serve with carrot and celery sticks with ranch dressing for dipping. For dessert serve chocolate chip cookies topped with vanilla ice cream.

1 1/2 pounds ground buffalo
1/2 pound ground chuck
1 medium onion, finely chopped, about 1 cup
3 tablespoons sun-dried tomato paste
1/4 teaspoon liquid smoke
Kosher salt
Freshly ground black pepper
4 hamburger buns, for serving

Steps:

  • Preheat an outdoor grill to medium-high.
  • Put the buffalo, chuck, onion, tomato paste, and liquid smoke in a large bowl and season generously with salt and pepper. Mix everything together with your hands until it is well combined.
  • Take about 1 cup (8 ounces) of the meat mixture and form it into patties with your hands or in a hamburger press. When you have them all made, grill them, turning frequently, until cooked through, about 8 to 10 minutes total. (Alternately, cook them in a large nonstick skillet over medium-high heat until cooked through, about 8 to 10 minutes.) Serve on hamburger rolls with the toppings of your choice.

1 (8 ounce) can green chiles, drained and diced
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon salt, plus more, for seasoning
Freshly ground pepper
4 hamburger buns
1 red pepper, roasted, peeled, seeded, and julienned
Famie's Simple and Spicy BBQ Sauce, recipe follows
1 (4 ounce) can chipotles in adobo sauce, pureed
8 ounces your favorite smoky BBQ sauce

Steps:

  • Preheat an outdoor grill or broiler.
  • In a large mixing bowl, mix the buffalo meat, chiles, cayenne, cumin, and salt until well blended. Refrigerate until ready to use.
  • Form the meat mixture into 4 large patties. Place the patties on the grill and cook until desired temperature. Season the burgers with salt and pepper to taste and place on hamburger buns. Top with roasted red peppers and Famie's Simple and Spicy BBQ Sauce.
  • In a small bowl, blend the two ingredients together. Store in refrigerator.
  • Yield: 12 ounces sauce

Buffalo tastes rich but is very lean - adding medium ground beef to it keeps these burgers juicy. We're fortunate to live near a buffalo ranch but if you don't & can't find it at the supermarket, a butcher may be able to order it for you - or you can substitute with all beef. This recipe comes from the Rebel House restaurant in Toronto which is known around town for its excellent buffalo burger.

1 tablespoon vegetable oil
1 onion, diced
1 egg
2 teaspoons rosemary or 2 teaspoons oregano (or 1/2 tsp/2 mL dried)
2 teaspoons Dijon mustard
2 teaspoons prepared horseradish
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces medium ground beef
8 ounces ground buffalo meat
4 kaiser rolls or 4 hamburger buns
4 leaves lettuce
1 tomatoes, sliced
1/2 small red onion, thinly sliced

Steps:

  • In skillet, heat oil over medium heat; fry diced onion, stirring occasionally, until softened, about 5 minutes.
  • Let cool.
  • In large bowl, beat egg.
  • Stir in thyme, mustard, horseradish, salt and pepper; mix in onion, beef and buffalo.
  • Shape into four 1/2-inch (1 cm) thick patties.
  • (Make-ahead: Cover and refrigerate for up to 6 hours. Or layer between waxed paper in airtight container and freeze for up to 1 month; thaw in refrigerator.) Place patties on greased grill over medium-high heat; close lid and cook, turning once, until no longer pink inside, about 10 minutes.
  • Cut rolls in half; place, cut sides down, on grill and toast until golden, 1 to 2 minutes.
  • Layer burgers, lettuce, tomato then onion on bottoms; sandwich with tops.

Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

I just recently discovered ground buffalo and it makes delicious hamburgers! It's a leaner meat and has a unique & tasty flavor. These are a joint effort by my husband and I - I prepare the patties, he grills them to perfection.

Number Of Ingredients 16

1/2 lb ground buffalo meat (any ground meat will do, we prefer the flavor of buffalo)
1 egg, beaten
1/4 cup breadcrumbs (I prefer garlic & herb breadcrumbs)
1/4 onion, chopped
2 mushrooms, chopped
1 garlic clove, crushed
salt
pepper
lemon pepper seasoning
2 hamburger buns
2 slices cheddar cheese
pickle
tomatoes, sliced
lettuce
mustard
ketchup

Steps:

  • In a medium bowl mix the buffalo, egg, breadcrumbs, onions, mushrooms and garlic. Mix until well blended ( I have found the easiest way to mix is with my hands - it pays to get a little messy!).
  • Season to taste with salt, pepper and lemon pepper.
  • Form into hamburger patties. Make the patties thick - almost in the shape of a meatball. The thicker they are the juicier the burger will be.
  • Cook on the grill for 8 minutes on each side. We usually soak hickory/mesquite chips and put those on the grill before the burgers for a nice smoked flavor (we use a charcoal grill). You want to be careful to not overcook these as the buffalo can dry out quickly.
  • Place cheddar cheese on burgers when there is 1 minute left.
  • Put on buns and top with your favorite toppings - tomato, pickles, lettuce, mustard, ketchup.
  • Enjoy the unique flavor of buffalo.

Buffalo Sauce Burgers Stuffed With Blue Cheese image

Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

4 tablespoons butter, cut in small pieces
1/3 cup mild hot sauce (they mentioned Durkee, I used Frank's RedHot)
1/2 cup finely crumbled blue cheese
1 tablespoon minced garlic (you may want to use less if you're not a big fan of garlic)
2 lbs 85% lean ground beef or 2 lbs ground buffalo meat
1/2 teaspoon celery seed
1/3 cup finely chopped onion
6 hamburger buns, split

Steps:

  • Melt butter and whisk in hot sauce.
  • Mix blue cheese and garlic in a small bowl.
  • Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
  • Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
  • Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
  • Heat grill to medium and oil grate.
  • Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
  • (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).
