Best Ever Buckeyes image

Small peanut butter balls that taste even better than Reese's Cups. The taste so good- be careful, they are addictive!

Number Of Ingredients 6

1 1/2 cups peanut butter
1/2 cup margarine or 1/2 cup butter
1 lb powdered sugar
1 teaspoon vanilla
1 1/2 cups chocolate chips
use 1/2 tsp of shortening per oz of chocolate instead paraffin wax

Steps:

  • Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
  • Shape into 1" balls.
  • Refrigerate balls.
  • Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
  • Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
  • Cool on wax paper and store in refrigerator or freezer.

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

½ cup butter, melted
1 pound confectioners' sugar
1 ½ cups peanut butter
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
  • In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. 1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
6 ounces semi-sweet chocolate chips

Steps:

  • Line a baking sheet with waxed paper; set aside.
  • In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.
  • Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.
  • Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

1 cup creamy peanut butter
1 cup margarine
2 cups graham cracker crumbs
2 cups fine shredded coconut
1 teaspoon vanilla
1 (16 ounce) box powdered sugar

Steps:

  • Mix powdered sugar, graham cracker crumbs, coconut and peanut butter until well mixed and uniform consistency. Melt margarine, stir in vanilla and add to dry ingredients. Mix well and make into balls. Cover and refrigerate until choc is ready for dipping.
  • Melt ¼ cup paraffin wax in top of double boiler. Add ½ of 12oz bag of semi-sweet chocolate chips. Blend well. Dip balls in chocolate mixture (make more as needed) and cool on wax paper. Store in a cool place but do not refrigerate.

1 cup creamy peanut butter
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 cups semi-sweet chocolate chips

Steps:

  • Line 2 cookie sheets with waxed paper.
  • In large bowl, beat butter, sugar and peanut butter on medium speed until well combined.
  • Roll mixture into 1" balls.
  • Place on waxed paper.
  • Place into the freezer about 30 minutes until firm.
  • Meanwhile, microwave chocolate chips in a glass bowl about 2 minutes.
  • Stir until melted.
  • Stick each peanut butter ball with a toothpick and dip into melted chocolate until 3/4 of ball is covered.
  • Wipe any excess chocolate off of ball.
  • Place on waxed paper.
  • chill in fridge at least 45 minutes until set.
  • If dough gets too sticky while rolling the balls. Wet your hands with cold water.

1/2 cup margarine or 1/2 cup butter
1 lb powdered sugar (3-3/4 cups)
1 (12 ounce) package chocolate chips (your choice of milk, semisweet, or white)
paraffin wax

Steps:

  • Mix peanut butter, margarine, and sugar together.
  • Roll into small balls and chill.
  • Melt chocolate chips and about 1/4 of 1 bar of grated paraffin together in microwave for 1 minute at 70% power. Stir. Continue microwaving at 70% power until completely melted making sure to check every 20 to 30 seconds. Dip balls into chocolate mixture. Place on wax paper to cool. Keep in fridge in covered container.
  • Enjoy!
  • Optional - Drizzle second type of chocolate on top for decorative effect.
