RUBY'S BARBECUE SAUCE

Steps:
- Heat oil in a large saucepan over medium heat. Add onions and jalapenos and cook over medium heat until onions are soft and transparent, about 5 minutes. Add salt, dry mustard, black pepper, cayenne, and garlic salt. Stir to combine and then mix in the brown sugar. Add the cider vinegar, ketchup, molasses, Worcestershire, and water and whisk all together until thoroughly combined. Reduce heat to low and simmer for about 20 to 35 minutes, whisking every few minutes to prevent sauce from burning and sticking to bottom. Strain sauce to remove onions and jalapenos before serving.

Here's a great all-purpose sauce that's loaded with flavor but not too sweet. It goes well with all manner of poultry, pork, or beef. The minced vegetables give you a coarse-textured sauce, which I happen to like. If you prefer a smooth sauce, puree it in a blender.

- 1. Heat the oil in a large nonreactive saucepan over medium heat. Add the onion, garlic, and bell pepper and cook until softened but not brown, about 4 minutes.
- 2. Stir in the ketchup, tomato sauce, cider vinegar, Worcestershire sauce, lemon juice, pineapple juice (if using), hot sauce, liquid smoke, molasses, brown sugar, prepared and dry mustards, black pepper, and 1 cup of water and bring to a boil. Reduce the heat to low and let the sauce simmer, uncovered, until thickened, about 15 minutes, stirring often to prevent scorching. If the sauce becomes too thick, add a little more water.
- 3. Remove the barbecue sauce from the heat and taste for seasoning, adding salt to taste and more cider vinegar, hot sauce, and/or brown sugar as necessary; the sauce should be highly seasoned.
- 4. Transfer the barbecue sauce to a serving bowl and serve warm or at room temperature. The sauce will keep, tightly covered in the refrigerator, for several weeks.
BUBBA'S BEST BBQ SAUCE
A hot-sweet sauce that is good on just about anything. You can use any kind of cola in this recipe, just don't use diet cola. It makes the sauce bitter.

Season with chili powder, savory, onion powder, garlic salt, and hot pepper sauce, and stir to blend. Cook over low heat, stirring occasionally, until the mixture is thick enough to coat the back of a metal spoon.

IRENE'S BARBEQUE SAUCE
My mother-in-law gave me this recipe over twenty four years ago. I use it frequently and someone always asks for it. A mixture of tangy ingredients, onion and brown sugar creates one tasty sauce! This will keep in the fridge for several weeks.

- In a medium saucepan, mix lemon juice, onion, distilled white vinegar, water, brown sugar, prepared mustard, ground black pepper, salt, cayenne pepper and vegetable oil. Bring to a boil, then simmer uncovered 20 minutes.
- Stir ketchup, Worcestershire sauce and liquid smoke flavoring into the mixture. Return to boil, then remove from heat. Refrigerate until ready for use.

BRUTE'S BARBECUE SAUCE
This quick, easy to make sauce lasts well if you keep it covered in the fridge. Brute recomends using this barbecue sauce on his favourite, chicken or ribs.

- In a large pan saute the onions, shallots and garlic in butter until soft over low heat.
- Next add brown sugar, lime juice, mustard, worcestershire sauce, ginger and hot sauce.
- Blend well.
- Add shredded lime rind and tomatoe sauce.
- Bring mixture to a rapid boil then simmer over med-low heat for 15 minutes.
- Add thyme leaves to sauce and simmer for 1 minutes.
- Brush barbeque sauce on chicken or ribs and enjoy.
