I made this tonight and it was delicious! My 6 year old ate his brussels sprouts-HAPPILY!. I served it with Hungry Man pork tenderloin#162841 and mashed potatoes. Finally, a different veggie dish!

Number Of Ingredients 8

1 1/2 lbs fresh Brussels sprouts, halved (trimmed of ends and outer leaves peeled)
1 cup baby carrots, halved (lengthwise)
1 cup pecan halves
1/4 teaspoon chili powder
3 tablespoons butter
1/4 cup maple syrup
2 teaspoons cider vinegar
1/2 teaspoon salt

Steps:

  • Place brussels sprouts and carrots in a large saucepan ;cover with water. Bring to a boil. Reduce heat; cover and simmer for 8 minutes or until crisp-tender.
  • Meanwhile, in a large skillet, saute pecans and chili powder in butter for 2-3 minutes. Drain vegetables;add to pecan mixture. Stir in the maple syrup , vinegar and salt. Cook and stir for 3-5 minutes or until brussels sprouts are tender. Serve with a slotted spoon.

3 pounds mini Brussels sprouts, preferably from Holland
2 cups pecan halves
1 cup maple sugar
Peanut or vegetable oil, for deep-frying
1 pound unsalted butter
1 cup chicken stock
Salt and pepper

Steps:

  • Clean the sprouts by peeling the outer layers. Quickly blanch in boiling salted water and then remove to an ice water bath.
  • Soak the pecans in boiling water, then remove and dredge in maple sugar. Reserve maple sugar for later.
  • Preheat a deep-fryer or heat 3 inches of oil in a large Dutch oven until it reaches 350 degrees F. When oil is hot, add pecans and deep-fry for about 1 minute. Remove from oil and drain on paper towels. Immediately sprinkle with remaining maple sugar.
  • Melt butter in a saucepan large enough to hold all the Brussels sprouts (you may need to do this in batches). Let butter brown, then add sprouts and saute in browned butter until tender. Add the candied pecans. Deglaze the pan with a bit of chicken stock. Season with salt and pepper, to taste, and serve warm.

Here's how to make the best Brussels sprouts recipe...ever. They're baked until impossibly crispy and drizzled with a maple balsamic glaze.

1 1/2 pounds Brussels sprouts
3 tablespoons olive oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons pure maple syrup
2 tablespoons balsamic vinegar
1 teaspoon soy sauce (or tamari or coconut aminos)

Steps:

  • Preheat the oven to 450 degrees Fahrenheit. (To get them perfectly crispy, make sure this is the only pan in the oven and you're not roasting anything else at the same time.)
  • Slice off any hard ends of the Brussels sprouts, as needed. Slice them in half lengthwise and place them in a large bowl.
  • Mix the sprouts with the olive oil, kosher salt, and lots of fresh ground black pepper.
  • Line a baking sheet with parchment paper*, then pour the spouts onto the sheet. Turn them all cut side down.
  • Roast for 25 minutes until very browned and tender (don't stir!).
  • While the sprouts are roasting, place the maple syrup, balsamic vinegar, and soy sauce in a small saucepan. Simmer 3 to 5 minutes on medium low heat until thickened slightly and reduced (this should result in about 2 to 2 1/2 tablespoons glaze).
  • When the sprouts are done, pour over the maple balsamic glaze. Serve immediately.

1/2 cup chopped pecans
2 pounds brussels sprouts, halved
4 tablespoons unsalted butter
1/2 teaspoon seasoned salt
2 tablespoons packed light brown sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large skillet, toast the pecans over medium heat until fragrant and lightly browned, about 8 minutes. Remove from the pan and set aside.
  • Meanwhile, remove any wilted outer leaves from the brussels sprouts and cut off the stems. Soak the sprouts in cold water and drain well.
  • Using the same skillet, melt the butter over medium heat until bubbly. Add the brussels sprouts and seasoned salt. Stir and cook, tossing frequently, until barely tender, 12 to 15 minutes.
  • Add the brown sugar, pepper and reserved pecans to the skillet. Toss the brussels sprouts to coat and cook, stirring frequently, until the sugar is melted and the brussels sprouts are coated in the melted sugar and pecans, about 2 more minutes. Transfer to a warm serving dish and serve immediately.

I'm still trying to get heart healthy with this one!! It has walnuts plus great veggies for your heart!! The vinaigrette is made with canola oil instead of butter. Plus, the veggies are steamed so it's easy to make!!!

4 small carrots
1 lb fresh baby Brussels sprout
1 1/2 tablespoons white wine vinegar
1 1/2 tablespoons maple syrup
2 tablespoons canola oil
1/2 teaspoon kosher salt
fresh cracked black pepper, to taste
1/4 cup chopped walnuts

Steps:

  • Peel and slice your carrots and cut the stems off of your brussels sprouts. If you have any too big sprouts, cut them in half so they are about the same size as all the pieces, so you have even cooking.
  • Put the veggies into a steamer with lid and steam for 15 minutes until fork tender.
  • Meanwhile, mix together the vinegar, syrup, oil, salt, and pepper for the vinaigrette.
  • After steaming, pour the veggies into a bowl with the nuts and pour the vinaigrette over them.
  • Toss to coat then serve!

3 tablespoons unsalted butter
3/4 teaspoon salt
2 pounds baby Brussels sprouts, trimmed
1/2 tablespoon minced garlic
1 teaspoon fresh lemon juice, or to taste
1/4 teaspoon black pepper

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Spread pecan pieces in 1 layer in a shallow baking pan and bake until fragrant and a few shades darker, about 10 minutes. Add 1/2 tablespoon butter and 1/4 teaspoon salt to nuts and toss until butter is melted and nuts are coated.
  • While nuts bake, cook Brussels sprouts in a 6- to 8-quart pot of boiling salted water, uncovered, until just tender, 5 to 6 minutes, then transfer to a bowl of ice and cold water to stop cooking. Drain sprouts and pat dry.
  • Melt remaining 2 1/2 tablespoons butter in a 12-inch heavy skillet over moderate heat, then add garlic and cook, stirring, until fragrant, about 1 minute. Increase heat to moderately high, then add sprouts and sauté, stirring occasionally, until browned in patches, about 5 minutes. Add lemon juice, pepper, and remaining 1/2 teaspoon salt, then stir in pecans and serve.
