Quick easy and delicious brownies made with Greek yogurt and a brownie mix.

1 brownie mix (8x8 mix size)
water in amount called for on box
Greek yogurt in half the amount of oil called for on box
1 egg white

Steps:

  • Preheat oven as instructed on box and prepare baking pan as instructed on box.
  • Combine ingredients and mix until just combined, do not over mix.
  • Pour into prepared pan.
  • Bake according to package directions.
  • Remove from oven and let cool, slice and serve.

5 1/3 ounces Greek yogurt
1 1/2 cups granulated sugar
1/2 tablespoon vanilla extract
2 eggs
3/4 cup all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9x9 baking dish with cooking spray.
  • Combine the yogurt, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
  • Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended.
  • Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
  • Bake in preheated oven until an inserted toothpick comes out clean, 25-30 minutes. Remove, and cool pan on wire rack before cutting.

1 ½ cups white sugar
1 cup whole wheat flour
1 cup cocoa powder
1 ½ teaspoons baking powder
⅛ teaspoon salt
1 cup plain nonfat Greek yogurt
½ cup brewed coffee
½ cup applesauce
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking pan.
  • Mix sugar, flour, cocoa powder, baking powder, and salt together in a large bowl. Push mixture to the sides of the bowl to form a well in the center.
  • Combine yogurt, coffee, applesauce, and vanilla extract in a small bowl. Pour yogurt mixture into the flour mixture. Fold gently with a spatula until just combined. Spread in the prepared pan.
  • Bake in the preheated oven until center is firm to the touch, 45 to 55 minutes. Cool slightly before cutting into squares, about 15 minutes.

After many tries, I've finally developed a really fudge-y, chewy brownie recipe. Several people in my office are on diets and swear by these. You can use low fat or nonfat yogurt and egg replacers to make it even lower in fat and cholesterol, but the full fat yogurt really adds to the texture of the brownies.

1 cup white sugar
6 tablespoons unsweetened cocoa powder
10 tablespoons plain yogurt
2 eggs
⅛ teaspoon salt
1 teaspoon vanilla extract
½ cup all-purpose flour
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
  • In a medium bowl, stir together the sugar, cocoa powder and yogurt. Stir in the eggs one at a time until well blended, then add vanilla and salt. Stir in the flour until just absorbed. Spread evenly into the prepared pan.
  • Bake for 28 to 32 minutes in the preheated oven, until the brownies begin to pull away from the sides of the pan, and a toothpick inserted comes out fairly clean (sticky crumbs are okay). Cool brownies in the pan over a wire rack before cutting into squares. Cover tightly with plastic wrap to store.
