2 Tablespoons butter
2 cups walnuts
½ cup brown sugar
2 teaspoons ground cinnamon

Steps:

  • In a large pan heat butter over medium heat until melted.
  • Add brown sugar, cinnamon, and walnuts to the pan and stir continuously until the sugar is dissolved (about 3-4 minutes).
  • Using a slotted spoon or spatula remove walnuts from the pan to a baking sheet that has been lined with parchment paper or a silicone baking mat.
  • Allow to cool completely for 1 hour. The walnuts can be stored in an airtight container for up to 2 weeks.

Steps:

  • Line the baking sheet with parchment paper.
  • Heat butter in a large non-stick frying pan over medium heat until butter is completely melted.
  • Add brown sugar and walnuts to the frying pan and mix.
  • Cook, stirring every 30 seconds, until the sugar is completely dissolved (about 4 minutes).
  • Remove candied walnuts from the frying pan onto a baking sheet. Put the walnuts on parchment paper in a single layer and spread them apart so they are not touching and don't stick together. Let them cool for 30 minutes.
  • After the candied walnuts are completely cool, put them in a bowl and serve.

1/8 teaspoon cayenne pepper
1/8 teaspoon salt
4 ounces walnuts (about one heaping cup; don't use pieces)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium sized bowl, mix together the sugar, cayenne and salt.
  • Bring a small saucepan of water to boil. Add the walnuts and blanch them for 3 minutes. Drain well and then immediately roll the walnuts in the sugar mixture until thoroughly coated. The sugar will melt slightly. Transfer the walnuts to a baking sheet or pan and bake, stirring occasionally, until they are a deep golden brown, about 10 minutes. Watch carefully because the sugar can burn easily. Let cool completely before serving.

Canola oil, for coating the foil
2 tablespoons light corn syrup
2 tablespoons maple syrup
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil.
  • Spread the walnuts out on the prepared baking sheet and roast for 5 minutes. Let cool, then transfer to a bowl. Lightly coat the aluminum foil with canola oil.
  • In a second bowl, combine the corn syrup, maple syrup, brown sugar, cinnamon and salt. Stir to combine, breaking up any lumps of cinnamon. Add the walnuts and toss to coat thoroughly. Pour the walnuts onto the oiled baking sheet.
  • Bake, stirring occasionally, until the walnuts are golden brown, 12 to 15 minutes. Remove from the oven and let cool. Sprinkle over desserts, or serve with cheese or as a snack.

To spice the nuts up add in a pinch of cayenne pepper and about 1/2 teaspoon black pepper in with the sugar and salt, but that is only optional.
