Recipe is from Southern Living Magazine and they suggest using this brown sugar brine so you will never have to serve a dry chicken breast again. Brine time is 1-3 hours.

1/2 c apple cider vinegar
1/4 c kosher salt
1/4 c firmly packed dark brown sugar
1 tsp dried crushed red pepper flakes
6 large fresh thyme sprigs
4 4-inch fresh rosemary sprigs
4 garlic cloves, crushed
8-12 skinned and boned chicken breasts (6-8 oz. each)
freshly ground black pepper

Steps:

  • 1. Stir together first 7 ingredients and 2 quarts of water in a large stockpot. Heat over medium-high heat, stirring occasionally, until salt and sugar dissolve. Remove from heat and cool one hour. Place chicken breasts in brine; cover and chill 1-3 hours.
  • 2. Preheat grill to 350 degree - 400 degrees (medium high) heat. Drain chicken, discarding brine. Pat chicken breasts dry with paper towels, and sprinkle with desired amount of black pepper.
  • 3. Grill chicken, covered with grill lid, 5 - 7 minutes on each side or until done. Remove from grill. Let stand 5 minutes before serving. **This brine will season up to 12 chicken breasts**

1/4 cup Bourbon
1/4 cup coarse salt
1/4 cup firmly packed brown sugar
4 slices lemons (1/4 inch thick)
2 garlic cloves, peeled and gently crushed
1 tablespoon black peppercorns
1 tablespoon mustard seeds
1 tablespoon coriander seed
4 (6 -8 ounce) boneless skinless chicken breast halves
2 tablespoons melted butter
barbecue sauce (use your favorite)
2 cups wood chips, soaked for 1 hour in water to cover, then drained (preferably hickory or oak)

Steps:

  • To make the brine: in a large nonreactive bowl combine the bourbon, salt, brown sugar, lemon slices, garlic, peppercorns, mustard seeds, coriander seeds, and 4 cups water; whisk until salt and brown sugar dissolve.
  • Trim any sinews or excess fat off the breasts; rinse breasts under cold running water, then drain.
  • Place the chicken breasts in a large zip-lock plastic bag; add in the brine.
  • Let breasts brine in the refrigerator for 2-3 hours, turning breasts twice so they brine evenly.
  • Set up grill for direct grilling and preheat to high-if using a gas grill, place all the wood chips in the smoker box or in a smoker pouch and run grill on high until you see smoke; if using a charcoal grill, preheat it to high, then toss all of the wood chips on the coals.
  • When ready to grill, drain the brine off the chicken and blot the breasts dry with paper towels; discard brine.
  • Lightly brush both sides of the breasts with the melted butter; brush and oil the grill grate, then arrange chicken breasts on the hot grate, placing them on a diagonal to the bars.
  • Grill the breasts for 2 minutes, then rotate them a quarter turn to create an attractive crosshatch of grill marks.
  • Continue grilling the breasts on that side for 2 minutes longer.
  • Turn breasts over and grill until cooked through, 4-6 minutes longer, again rotating them after 2 minutes to create grill marks.
  • **The total cooking time will be 8-10 minutes, depending on the thickness of the breasts.
  • Test for doneness-poke a breast in the thickest part with your finger; it should feel firm to the touch; or to be safe, you can insert a thermometer in one end-170° is done.
  • Transfer grilled breasts to a platter and serve at once with your favorite barbecue sauce.

You can cook this in the oven as the directions state or cook it on the grill. Could even cook it using the beer-can chicken method on the grill or the oven, for even moister chicken.

1/4 cup kosher salt (coarse)
1/4 cup brown sugar, packed
2 (12 ounce) cans beer, chilled (or nonalcoholic beer)
1 whole chicken (3 to 3 1/2 lb)
3 teaspoons paprika
1/2 teaspoon seasoning salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper (optional)
2 tablespoons vegetable oil (or softened butter)

Steps:

  • Line 2-quart bowl or saucepan with 2-gallon resealable food-storage plastic bag. Add water, kosher salt and brown sugar; stir until salt and sugar are dissolved. Stir in beer. Add chicken. Tightly seal bag; refrigerate at least 8 hours but no longer than 24 hours.
  • Line 13x9-inch pan with foil. Remove chicken from brine; rinse thoroughly under cool running water and pat dry with paper towels. Discard brine. Place chicken, breast side up, in pan. Refrigerate uncovered 1 hour to dry chicken skin. Meanwhile, in small bowl, mix all rub ingredients except oil; set aside.
  • Heat oven to 375°F Brush oil over chicken. Sprinkle with seasoning mixture; rub into chicken skin. Bake 1 hour 15 minutes to 1 hour 30 minutes or until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks). Let stand 15 minutes for easiest carving.
  • Time-Saver Tip:
  • You can skip the step of refrigerating the brined chicken 1 hour to dry the skin. This step results in a crispier skin, a technique used in Chinese cooking.

Steps:

  • Mix together salt, brown sugar, and water in saucepan until sugar and salt dissolve.
  • Bring to a boil, then remove from heat, add herb/spices and allow to cool to room temp.
  • Place chicken in a food-safe plastic bag and add slices of 1 lemon to the bag or place in the chicken cavity.
  • Add the brine to the bag, making sure the chicken is covered completely.
  • Seal bag, removing as much air as possible, and refrigerate for 24 hours, agitating brine mixture from time to time.
  • The next day, remove chicken from the brine and discard brine.
  • Rinse chicken with water and pat dry with paper towels.
  • Place chicken in a roasting pan and stuff cavity with additional sliced lemon, fresh thyme sprigs, if desired.
  • Tuck additional garlic cloves under the skin of the chicken, if desired.
  • Rub skin with unsalted butter and seaon with salt and pepper.
  • Roast chicken at 400F until the internal temp reaches 170F and the leg moves easily in the joint, 1 1/2- 2 1/2 hours.

I decided to experiment with my normal go-to brine and added molasses and garlic. In place of regular sugar I used light brown sugar (what can I say, I like molasses). The family loved this. I think this is going to be my new go-to. This is enough brine for 8 pounds of whole chicken or bone-in chicken pieces and up to 10 pounds of skinless, boneless chicken breasts.
