Steps:

  • Gather the ingredients.
  • Combine all the ingredients-bourbon, brown sugar, oil, mustard, and Worcestershire sauce-and mix until the sugar is completely dissolved. Use it right away.
  • Marinate meat for four to 12 hours.
  • Use it to grill your choice of meat, and enjoy!

4 tablespoons butter
½ cup dark brown sugar
4 (6 ounce) salmon steaks
⅓ cup bourbon whiskey

Steps:

  • Melt butter in a large heavy skillet over medium heat. Stir in brown sugar. Place salmon fillets on top of brown sugar mixture. Cook for 5 minutes on medium heat. Turn salmon, and pour bourbon around the fillets. Continue cooking for 5 minutes, or until fish flakes easily with a fork. Spoon glaze over the salmon, and serve.

BOURBON & BROWN SUGAR MARINATED STEAK

Number Of Ingredients 6

1/2 cup soy sauce
1/3 cup bourbon or other whiskey
1/3 cup firmly packed brown sugar, preferably dark
1 Tbs. Dijon mustard
1 tsp. hot sauce, such as Tabasco
1-1/2 to 2 lb. beef steak, preferably flank, or 1-1/2-inch-thick New York strip steaks

Steps:

  • Prepare a medium-hot grill fire. Meanwhile, combine the soy sauce, bourbon, sugar, mustard, and hot sauce in a large zip-top bag. Seal and shake to combine the ingredients and dissolve the sugar. Add the steak to the bag, seal, massage to cover the steaks with marinade, and set aside for 15 to 20 min. at room temperature.
  • When the grill is ready, remove the steak from the marinade and shake off any excess, but don't pat it dry. Reserve the marinade. Grill the steak until good sear marks appear, 3 to 4 min. With tongs, rotate the steak 90 degrees (to get a crosshatch of grill marks) and continue grilling until grill marks form and the edges are a little crisp, another 3 to 4 min. Flip the steak and grill the other side in the same way until the exterior is nicely seared and the steak is cooked to your liking, 10 to 12 min. total cooking time for medium rare. Let the steaks rest for about 5 min.
  • Meanwhile, pour the marinade into a small saucepan and boil over medium-high heat until syrupy, about 3 min. (watch carefully to prevent burning). For flank steak, slice the meat thinly across the grain. For strip steaks, slice thickly or serve in chunks. Serve with a drizzle of the sauce.

Basting sauce
1/2 cup (packed) golden brown sugar
1/2 cup apple butter
1/4 cup bourbon whiskey
1/4 cup apple cider vinegar
3 tablespoons apple cider
2 tablespoons Dijon mustard
Ribs
1 tablespoon coarse kosher salt
1 tablespoon (packed) golden brown sugar
1 1/2 teaspoons dry mustard
1 1/2 teaspoons dried thyme
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
2 2- to 2 1/4-pound racks baby back pork ribs
1 large onion, sliced
1 cinnamon stick, broken in half
6 thin rounds peeled fresh ginger
1 1/4 cups apple cider

Steps:

  • For basting sauce:
  • Whisk all ingredients in medium bowl to blend.
  • For ribs:
  • Mix first 7 ingredients in small bowl. Using small sharp knife, loosen membrane from underside of each rib rack and pull off (or score membrane). Rub 1 tablespoon seasoning mix into each side of each rib rack. Place ribs in large roasting pan. Cover and chill at least 6 hours and up to 1 day.
  • Preheat oven to 325°F. Lift ribs from pan. Scatter onion, cinnamon stick, and ginger in pan. Pour in cider. Return ribs, meat side down, to pan; cover pan with foil. Roast ribs until meat is tender and begins to pull away from bones, about 2 hours. Uncover; cool at least 30 minutes and up to 2 hours.
  • Prepare barbecue (medium-high heat). Grill ribs until heated through and slightly charred, about 5 minutes per side. Brush generously on all sides with basting sauce. Grill until sauce becomes sticky glaze, about 3 minutes longer per side. Transfer rib racks to cutting board. Cut racks between bones into individual ribs. Arrange on platter and serve, passing remaining sauce separately.

1/2 c. Brown Sugar - firmly packed
1 c. Soy Sauce
2 t. Worcestershire Sauce
1 t. Garlic - minced
1/2 t. Black Pepper
2 T. Bourbon (opt.)
1/2 c. Chopped Pecans - toasted
1-2 Salmon Filets (2-2 1/2 lb. total)

Steps:

  • Combine all ingredients except the Pecans and Salmon in a bowl.
  • Place Half the marinade and the Salmon in a Ziploc bag - squeeze out the air and zip the bag tightly.
  • Set aside the other half of the marinade to use as a glaze.
  • Marinate the Salmon for 1-3 hours. Flip the bag every 1/2 hour or so to marinate evenly.
  • Place the remaining half of the marinade in a small saucepan on the stove.
  • Bring to a boil, then reduce the temperature to low and simmer until the mixture thickens and reduces a little.
  • While the glaze is simmering, preheat the oven to 400 degrees.
  • Place the chopped pecans on a flat baking pan which has been covered with aluminum foil or parchment paper.
  • Toast the pecan for 3-5 minutes until they darken a little and they start to smell sooo good.
  • Watch closely - the nuts can burn quickly!
  • Cover a baking dish or pan with aluminum foil.
  • Spray the foil-covered pan with cooking spray.
  • Take the Salmon out of the marinade and discard the marinade.
  • Place the Salmon (skin-side down) on the prepared pan.
  • Sprinkle the salmon with the toasted pecans pressing the pecans firmly into the salmon.
  • Brush or spoon 1/3 of the glaze onto the salmon.
  • Place the salmon in the oven.
  • Re-glaze the salmon with the glaze every 8-10 minutes (about 3 times).
  • Bake at 400 degrees for a total of 20-25 minutes until the salmon flakes easily.

1/2 cup good bourbon
1/4 cup olive oil
1/2 cup brown sugar, (packed)
1 teaspoon garlic powder
1 Tablespoon soy sauce
1 teaspoon kosher salt

4 pork chops, (around an inch thick, bone in or boneless works)

Steps:

  • In a small bowl, whisk together Bourbon, oil, brown sugar, garlic powder, soy sauce, salt and pepper until well combined.
  • Place pork chops in a plastic zipper bag (or a bowl) and pour the marinade in.
  • Seal and move the chops around a bit to make sure they're fully covered.
  • Refrigerate for around 2-4 hours (It won't hurt them to go longer but 2-4 hours is the ideal amount of time).
  • Remove from the refrigerator 15-20 minutes prior to grilling.
  • Spray the grill with olive oil cooking spray and preheat the grill to medium high heat.
  • Place meat on the grill and discard leftover marinade.
  • Cook for 5-6 minutes per side, turning once (this time will vary based on your grill and the thickness of the meat so keep an eye on it).
  • Remove the meat to a clean plate and tent with foil. Rest for 10 minutes. Serve immediately.

1/4 cup bourbon
3 tbsp brown sugar, (demerara sugar)
3 tbsp soy sauce
1 tbsp lime juice, fresh squeezed
1 tsp ginger, grated
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp butter
1 tsp salt
1/2 tsp pepper

Steps:

  • Combine bourbon, olive oil, soy sauce, brown sugar, ginger, garlic and lime juice in a zip-top bag.
  • Place salmon inside bag and seal. Refrigerate for 1 hour.
  • Preheat oven to 350 °F (176°C). Line a baking sheet with parchment and set aside.
  • Heat butter in a nonstick pan or cast iron skillet over medium high heat.
  • Remove salmon from marinade and pat dry.
  • Gently place fish in the pan and cook for 4 minutes without disturbing.
  • (You may have to do this in batches, depending on the size of your pan)
  • Flip fish over and place immediately on lined sheet pan.
  • Cook for 10 minutes.

5 6- ounce fillets of fresh salmon
1/2 cup of bourbon
1/2 cup of soy sauce
1/2 cup of brown sugar
1 tablespoon of sesame oil
1 tablespoon of sesame oil
1 teaspoon of finely minced ginger
2 finely minced cloves of garlic
5 baby carrots sliced long ways
1 cup of edamame
1 cup of peas
1 cup of sprouts
1/2 cup of chicken stock
1/2 cup of sliced green onions
sea salt and fresh cracked pepper to taste
sesame seeds for garnish optional

Steps:

  • Pour the bourbon, soy and brown sugar into a medium-size bowl and whisk very well until completely combined and then transfer it to a plastic slider bag with the salmon and toss around and marinate in the refrigerator overnight or up to 48 hours and 2 hours minimum.
  • Once the salmon is done marinating, remove from the bag and set aside.
  • Add the 1 tablespoon of sesame oil to a large sauté pan over medium-high heat and add in the salmon. Once the salmon is in the man turn the heat down to medium.
  • Cook for 2 to 3 minutes per side for a medium to medium-well internal temperature.
  • When it's finished cooking, remove from the pan and set aside.
  • Vegetables: In a large hot sauté pan with 1 tablespoon of sesame oil, brown the ginger and garlic, about 1 to 2 minutes. Once brown, add in the carrots and sauté for 2 to 3 minutes.
  • Next, add in the edamame, peas and sauté for a further 3 to 4 minutes. Finish with chicken stock, sliced green onions and salt, and pepper to taste and braise for 3 to 4 minutes. Finish by tossing in sprouts.
  • Serve the salmon on top of the braised vegetables and garnish with sesame seeds.

1/2 cup jack daniels sour mash (any will work) or 1/2 cup a Bourbon (any will work)
1/2 cup dark brown sugar
1/3 cup soy sauce
1/2 bunch fresh cilantro, coarsely chopped
1/4 cup lemon juice
1 1/2 teaspoons Worcestershire sauce
1 cup water
1/2 teaspoon dried thyme
2 lbs pork tenderloin or 4 -6 pork chops

Steps:

  • In a shallow glass casserole dish, combine bourbon, brown sugar, soy sauce, cilantro, lemon juice, Worcestershire sauce, water, and thyme, stirring until the sugar is dissolved.
  • Add the pork, cover, and marinate in the refrigerator, turning occasionally, for 8 to 12 hours.
  • Preheat the oven to 450ºF.
  • Coat a baking sheet or the bottom of your roasting pan with tin foil, making sure the entire sheet is covered. The marinade tends to burn on and it's a pain to wash.
  • For tenderloin: Place the tenderloins, side by side without touching, on a wire rack in a shallow roasting pan.
  • For chops: Place pork chops on a baking sheet.
  • Roast for 30 minutes, or until a meat thermometer registers 160ºF, basting occasionally with the marinade. Discard any unused marinade.

  • In a small saucepan melt the butter on low. Add the brown sugar, heavy cream, bourbon, and vanilla bean paste.
  • Cooking over low heat for 8 to 10 minutes; continue stirring until the sauce has thickened up.

1 (15 ounce) can tomato sauce
1 cup bourbon
¾ cup brown sugar
¾ cup molasses
¾ cup apple cider vinegar
¼ cup Worcestershire sauce
2 tablespoons soy sauce
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons freshly ground black pepper
1 teaspoon mustard powder
1 teaspoon liquid smoke flavoring
½ teaspoon cayenne pepper, or to taste

Steps:

  • Combine ketchup, tomato sauce, bourbon, brown sugar, molasses, vinegar, Worcestershire sauce, soy sauce, onion powder, garlic powder, black pepper, mustard powder, liquid smoke, and cayenne pepper in a saucepan; bring to a boil. Reduce heat and simmer, stirring often, until sauce is reduced and smooth, about 45 minutes.

1/4 cup oil
2 tbsps white vinegar
2 tbsps water
2 pounds boneless beef sirloin steak

Steps:

  • Mix Seasoning, oil, vinegar and water in small bowl. Place steak in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade.
  • Grill over medium-high heat 6 to 8 minutes per side or until desired doneness.
