Steps:
- Place the raw ham in a large, clean bucket. Add enough water to cover and soak overnight, or up to 24 hrs ahead, changing the water twice.
- Heat oven to 180C/160C fan/gas 4. Drain and place the ham in a large roasting tin, cover tightly with foil and bake for 3 hrs.
- Remove the ham from the oven and turn the heat up to 200C/180C fan/gas 6.Using a sharp knife, carefully slice the rind off the ham, leaving about 1-2 cm of fat; cut a diamond-shaped pattern into this. In a small bowl, mix together the sugar and mustard, then rub all over the ham. Roast for 30 mins until the ham is tender and the outside nice and sticky.
- Bring to the table on a large platter lined with bay leaves. To serve, cut 1cm-thick slices off the ham to go alongside the rye bread, pickles and mustard sauce (Make your own sauce with our recipe below).

BROWN SUGAR AND MUSTARD HAM GLAZE
This is a recipe that my mother used to use for her holiday baked ham. It is a wonderful sweet and sour glaze. The best part is that you can adjust it to be sweeter by using more brown sugar or sour by using more mustard.

BROWN SUGAR AND MUSTARD BAKED HAM
This recipe may sound a bit strange, but my family has been making baked ham this way for generations and everyone loves it! It has a wonderful flavor and is so tender and never dry. It's always a huge hit and so simple to make. Prep and cooking time is based on a 6 pound ham, but any size ham can be used. The idea is to cover the ham with mustard and brown sugar, so amounts should be adjusted depending upon the size of the ham. I noticed in the nutrition information that shows one serving to be 1000 calories! I'm certain this is not correct and probably is figuring the bone in the serving size. Don't be afraid to try it! :-)

Steps:
- Rinse ham in water. I find some brands of ham are saltier than others so ham can be soaked in water for one hour to prevent saltiness.
- Pat ham dry and place flat (cut) side down in roasting pan.
- Pour entire can of 7UP or ginger ale over ham.
- Bake in 325°F oven for 20 minutes per pound.
- Baste ham every 1/2 hour.
- When there is about 20 minutes left to cook, take ham out and cover the entire ham (except the flat side) with yellow mustard. I just squirt it out of the bottle all over the ham and then spread it with a spatula. Then cover ham with the brown sugar. For this I usually use my hands.
- Return ham to the oven until cooking time is finished. Do not baste after mustard and brown sugar have been added.
- Put on platter and slice. Ham juices from pan can be served in a gravy boat to drizzle over sliced ham.

Steps:
- Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
- Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
- Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
- Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)

BAKED HAM WITH BROWN SUGAR AND MUSTARD GLAZE
Besides a roasting pan, you don't need any fancy gadgets to make this baked ham. By cooking the ham in the drippings, it's moist and juicy when baked. The sticky, sweet, and tangy glaze penetrates the meat. The sweet mustard glaze melts into the salty drippings making the ham full of flavor and creates the most amazing tangy...

Steps:
- 1. Preheat oven to 325 degrees. Take the ham out of the refrigerator and let sit on the counter for 30 minutes to cut the chill.
- 2. Over med-low heat, melt butter in a small saucepan.
- 3. Add the brown sugar and mix into the melted butter.
- 4. Then add the mustard.
- 5. Once the mustard is incorporated, cook on med-low heat stirring constantly for a few minutes until the sugar melts and is a loose consistency. Make sure it does not boil. (You don't want to make caramel.)
- 6. Unwrap the ham. Place in a roasting pan. Brush about 1/2 of the glaze on the ham.
- 7. Separate the slices and get the glaze in-between the layers. Set the rest aside for later.
- 8. Push the layers back together and cover the ham tightly with foil to keep the moisture in. Bake for about 15 minutes per pound. Bear in mind, the ham is fully cooked. You're not actually cooking the ham, only reheating it.
- 9. Using drippings, baste every 30 minutes, or as often as you like, with a spoon or a brush.
- 10. In the last 15 to 20 minutes, do one final glaze of the ham. Before glazing, stir and reheat the leftover glaze for a couple of minutes on medium-low.
- 11. Take out the ham out of the oven and pour the reheated glaze onto the ham.
- 12. Brush glaze across the ham to spread it out.
- 13. Increase the temperature to 350 and cook uncovered for a final 15 to 20 minutes.
- 14. In order to easily serve the ham, cut in a circular motion around the bone deep into the ham and the slices will come right off.

Steps:
- Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
- Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. Using long sharp knife, score fat in 1-inch-wide, 1/4-inch-deep diamond pattern. Spread mustard evenly over fat layer on ham. Pat brown sugar over mustard coating, pressing firmly to adhere. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.

SUGAR BAKED HAM
Since finding this recipe, it's become my favorite way to cook ham. My family loves the crunchy crust that bakes on the ham...very yummy! The recipe came from a cookbooklet that I received in one of our swaps. Very Important Note: be sure to use a fully cooked cured ham which only needs to warmed through for this recipe.
