BROOKVILLE HOTEL OLD FASHIONED SWEET & SOUR COLESLAW

1 1/2 pound cabbage head (green cabbage, shredded)
1 teaspoon salt
1/3 cup heavy whipping cream
2/3 cup granulated sugar
1/2 cup vinegar

Steps:

  • Whip the Heavy Whipping Cream until soft peaks form. In another bowl mix the rest of ingredients together. Fold in whipped cream. Refrigerate 30 minutes. Serve.

From the old Brookville Hotel restaurant in Kansas, famous for their fried chicken, slaw, and creamed corn, all served family style. (The creamed corn is recipe #44906) This was the recipe that finally got me to eat cole slaw; everything else on their table was so good I decided to take a chance and was hooked forever! Cook time does not include initial chilling of cabbage & total servings vary depending on serving size.

1 1/2 lbs shredded green cabbage
1 teaspoon salt
2/3 cup sugar
1/3 cup apple cider vinegar
1 cup whipping cream

Steps:

  • Cover shredded cabbage and refrigerate several hours or until well chilled.
  • 30 min before serving time, mix ingredients in order given.
  • Chill and serve.

  • Stir cream, sugar, vinegar, and salt together in a bowl until sugar and salt have dissolved; cover and refrigerate dressing for 30 minutes to blend flavors. Pour dressing over cabbage in a bowl, toss to combine, and refrigerate until thoroughly chilled, at least 2 hours.

  • 1. Place shredded cabbage in a covered dish in refrigerator for several hours.
  • 2. Mix ingredients in order given 30 minutes before serving. chill before serving.

This is a terrific non-creamy coleslaw recipe. I found it in Betty Crocker's Big Red Cook Book, page 420. I adjusted the original recipe by adding broccoli slaw, and cutting the suger by half.

3 cups packaged coleslaw mix
1 cup broccoli coleslaw mix
1 large carrot, shredded
1 medium green pepper, seeded and chopped
4 medium green onions, sliced
1/4 cup sugar
1/2 cup white vinegar or 1/2 cup cider vinegar
1/4 cup olive oil
1 teaspoon mustard, ground
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • Place cabbage,broccoli, carrot, green pepper, and green onions in a large glass or plastic bowl.
  • Shake remaining ingredients in a tightly covered container.
  • Pour over vegetables; stir.
  • Cover and refrigerate at least 3 hours, stirring several times, until chilled.
  • Serve with a slotted spoon.
  • Store covered in refrigerator.
