Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

Steps:
- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- Cook and stir ground beef in a skillet over medium heat until meat is browned and crumbly, about 10 minutes; drain excess grease. Mix ketchup, dried onion, brown sugar, mustard, Worcestershire sauce, smoke flavoring, and garlic into beef, stirring until brown sugar has dissolved.
- Stir beef broth into beef mixture and bring to a boil; reduce heat to low and simmer until thick, about 30 minutes. Season with salt and black pepper.

- In a skillet, heat the drippings or oil and sauté the onions and green pepper over medium heat until onions are translucent.
- Place the onions and peppers in the bottom of a crockpot.
- Add all the other ingredients EXCEPT the cocoa powder and browning/seasoning mix.
- Cook on low for about an hour.
- Stir the mixture and then sprinkle the cocoa powder on top.
- Mash the mixture with a potato masher.
- Stir again.
- Continue cooking on low for another 30 to 40 minutes.
- Taste, and add more liquid smoke and/or other spices to taste.
- Add the browning/seasoning mix and stir thoroughly.
- Continue cooking for another 5 minutes.
- Serve on hamburger rolls or biscuits.

- Prep. Peel and chop the onion. Peel and chop the carrot. Remove the stem and seeds from the bell pepper and chop. Peel and mince the garlic.
- Cook. Make 1/2-inch thick hamburger patties from the meat and put them on a grill in indirect heat with lots of smoke or on put them on a smoker. Shoot for about 225°F and let them smoke for about 30 minutes. This should give the meat a nice smoky flavor but not cook them all the way through. We don't want to dry out the meat. Remove from the smoke.
- In a frying pan over medium heat, cook the bacon until it gets to the texture you like. Remove it and drain on paper towels. When it is cool, chop it into bits.
- Set aside some of the chopped onion to be used as a raw onion topping for the sandwiches. Add the rest to the pan with the carrot and bell pepper. When the onions are translucent add the garlic, ancho powder, chipotle powder, salt and black pepper, stir and cook for about 2 minutes. Add the barbecue sauce and Worcestershire and let it simmer and thicken a bit. Then add the bacon and the smoked meat and simmer about 15 minutes, just enough to cook the meat through and coat it with sauce.
