BROKEN LASAGNA WITH ZUCCHINI-TOMATO SAUCE

Broken Lasagna With Zucchini-Tomato Sauce image

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 9

Kosher salt
2 large zucchini (about 1 3/4 pounds), coarsely grated
12 ounces lasagna noodles (not no-boil), broken into bite-size pieces
3 tablespoons unsalted butter
2 cups cherry tomatoes (1 cup whole, 1 cup halved)
1/2 teaspoon finely grated lemon zest
Freshly ground pepper
1/2 cup grated parmesan cheese, plus more for topping
1 small bunch chives, cut into 1-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, toss the zucchini with 1/2 teaspoon salt in a colander set over a large bowl. Let stand 10 minutes, then gently squeeze out the excess moisture.
  • Add the pasta to the boiling water and stir vigorously to prevent it from sticking. Cook until al dente, about 12 minutes. Reserve 1/2 cup of the cooking water, then drain the pasta.
  • Meanwhile, heat the butter in a large skillet over medium-high heat. Add the cherry tomatoes and cook until blistered and slightly softened, about 4 minutes. Stir in the zucchini and lemon zest and cook, lightly crushing the tomatoes with a wooden spoon, until the zucchini is crisp-tender, about 4 minutes. Season with salt and pepper.
  • Transfer the zucchini-tomato mixture to a large bowl. Add the pasta and cheese and toss. Stir in half of the chives and about 1/4 cup of the reserved cooking water, adding more to loosen, if needed. Season with salt and pepper. Divide among bowls and top with more cheese and the remaining chives.

PASTA WITH FRESH TOMATO SAUCE AND RICOTTA

Pasta With Fresh Tomato Sauce and Ricotta image

This wonderful pasta is made with nothing more than fresh tomato sauce and good ricotta, plus a little pecorino. It's most delicious if you keep the pasta quite al dente; use just enough sauce, no more; give it a good pinch of crushed red pepper; and season it with enough salt of course.

Provided by David Tanis

Categories     easy, pastas, main course

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 8

1 pound dried pasta, such as farfalle or penne
Salt and pepper
2 tablespoons butter, softened
Crushed red pepper (optional)
2 ½ cups Quick Fresh Tomato Sauce, warm (see recipe)
6 ounces ultra-fresh ricotta, at room temperature
Grated pecorino
Basil leaves, for garnish

Steps:

  • Cook the pasta in a large pot of well-salted water, making sure to keep it quite al dente.
  • Put butter in a wide deep skillet over medium heat. Add drained pasta to the pan and season with salt, pepper and crushed red pepper, if using.
  • Add tomato sauce gradually and stir to coat pasta, using only enough sauce for a light coating (you may not need the entire 2 1/2 cups).
  • Transfer pasta to a warm serving bowl and dot top with spoonfuls of ricotta. Sprinkle lightly with pecorino and garnish with a few torn basil leaves.

Number Of Ingredients 17

2 ½ pounds Roma tomatoes, cored and halved lengthwise
5 tablespoons olive oil, divided
2 tablespoons minced garlic
1 ¼ teaspoons salt, divided
½ teaspoon ground black pepper
2 tablespoons white sugar
2 tablespoons Italian seasoning
2 teaspoons dried rosemary
2 teaspoons dried basil
2 teaspoons dried parsley

DELICIOUS AND SIMPLE RICOTTA AND TOMATO PASTA SAUCE

Delicious and Simple Ricotta and Tomato Pasta Sauce image

I just love this recipe! Mum used to make this for us when we were kids. It's apparently a traditional Roman dish, great for vegetarians and very easy and quick to whip up, an awesome dish with a real 'rustic' feel to it! The kids will love it! It is to be served on top of steaming, hot pasta...wholemeal pasta works quite well with this recipe too! Enjoy!

20-Minute Lasagna Recipe image

You can throw together an easy, cheesy lasagna dish that only requires nine ingredients and 20 minutes of your time. Your family is going to love it.

Provided by Molly Allen

Categories     dinner, main course

Time 20m

Number Of Ingredients 9

1 (9-ounce) package oven-ready lasagna noodles
1 pound ground beef
1 (15-ounce) container ricotta cheese
1 (15-ounce) can tomato sauce
3 tablespoons salted butter
1 small yellow onion
2 cloves garlic, minced
2 tablespoons Italian seasoning
1 ½ cups shredded mozzarella cheese

Steps:

  • Mince the two cloves of garlic and dice the onion.
  • In a high-walled saucepan, melt the butter, and then add the garlic and onions. Sautee the garlic and onions on medium heat until lightly browned. Add in the ground beef.
  • Cook the ground beef on medium heat in the garlic and onions mixture. Once browned, stir in Italian seasoning.
  • Remove half of the ground beef mixture and set it aside in a bowl. Break up the lasagna noodles into pieces, and put a layer on top of the ground beef mixture in the saucepan. Top with the remaining ground beef mixture. You can alternate with multiple layers if needed.
  • Pour the can of tomato sauce over the ground beef and noodles. Cover with a lid and let the sauce simmer on medium heat for 5 minutes to allow noodles to soften and cook in the sauce.
  • Top with spoonfuls of ricotta cheese and sprinkle with mozzarella cheese. Place the lid back on the pan for 2 minutes to allow the cheese to melt.
  • Serve the lasagna with an additional sprinkle of mozzarella cheese or chopped fresh basil, if desired.

  • Uncovered, over medium heat bring the sauce to a simmer then adjust the heat to keep the sauce at a slow, steady simmer for about 45 minutes, or until droplets of fat float free of the tomatoes. Stir occasionally, breaking up the tomatoes with a spoon against the side of the pot or gently mashing them with a potato masher. Discard onion, and season with salt if needed. Puree in a blender if you prefer a smoother sauce.
  • To make the gnudi: Bring a large pot of water to a boil. Add the spinach leaves and blanch for 1 minute. Remove, let cool, squeeze dry, and finely chop. Measure out 7 ounces of spinach (about 3/4 cup packed) and put it in a mixing bowl. Mix in ricotta, egg, the 1 ⅓ cups flour, and nutmeg. Season with salt and pepper and mix thoroughly but gently.
  • Put 1 to 2 cups more flour in a pie pan or shallow bowl. Put the gnudi mixture in a pastry bag fitted with a ½-inch plain tip or a ziplock bag with a ½-inch hole snipped from a corner. Pipe ½-inch-diameter balls of the dough into the flour a few at a time. Use the edge of a knife or fork to cut the dough as needed while piping. Gently roll into dumplings in the flour and transfer to a baking sheet coated generously with flour.

  • In large skillet, heat olive oil and add the sausage and red pepper flakes. Cook, breaking the sausage up with a spoon until the sausage is browned. Add spinach in batches until what you added is just wilted, then add more until all the spinach is added and just wilted. Don’t cook it down to nothing as it will continue to wilt when the sauce is added and it’s baked. Season with some kosher salt.
