- In a small bowl, combine the first seven ingredients. Cut each tomato into five slices. Spread each with 1 tablespoon cheese mixture. , Place on an ungreased baking sheet. Broil 3 in. from the heat for 3-5 minutes or until cheese mixture is golden brown and tomatoes are heated through.

BROILED MOZZARELLA TOMATOES
Makes a nice side dish. Great way to eat the big, juicy home-grown tomatoes. I can eat these just by themselves for lunch.

Steps:
- Preheat broiler.
- Wash and core tomatoes. Cut a small piece off the bottoms, so that all tomato halves will sit level with cut-side up.
- Place tomato halves (cut sides up) on a lightly greased baking pan.
- In a small bowl, combine last 5 ingredients and mix well. Sprinkle this mixture evenly on the tomato halves.
- Place under broiler for about 3 or 4 minutes or until cheese is bubbly and to desired browness.

BROILED TOMATO AND MOZZARELLA CHEESE FANS
Equally good as a side dish or a light lunch. Can be lightened up by using low-fat mozzarella cheese if desired. Note: cooking time does not include 30 minutes refrigeration time.

Steps:
- Stir together oil, vinegar, garlic, basil, oregano, salt and pepper flakes in medium-size shallow dish.
- Add cheese slices, overlapping if necessary, and turning to coat completely with oil.
- Cover and refrigerate at least 30 minutes.
- Preheat broiler.
- Make 3 equally spaced vertical cuts in each tomato, starting from bottom and not cutting all the way through tomato (so tomato can "fan").
- Insert a cheese slice into each cut.
- Place tomatoes in shallow flameproof baking dish.
- Brush with any remaining marinade.
- Broil tomatoes 6 inches from heat until cheese is melted and lightly browned and tomatoes are heated through, about 6 to 8 minutes.
- Pour any pan juices over tomatoes before serving.

BROILED TOMATO CHEESE SANDWICH
I love the combination of tomato and cheese. The short marination of the tomatoes in the olive oil and the balsamic vinegar gives it a nice kick. Other vinegar is not as nice. If I have it in the fridge I add an extra topping of mozzarella and you can please the meat eaters by adding slices of crunchy bacon. You can make it a closed sandwich by just toasting 4 more slices of bread to top the sandwich.

- Preheat broil/grill.
- In a shallow bowl whisk together the olive oil and balsamic vinegar, add the tomatoes and mix gently, set aside.
- In a small bowl mix together: mayonnaise, cheese, basil, oregano and black pepper.
- Spread this on the 4 slices of toast.
- Place on a baking sheet and broil until the cheese is melted and bubbly.
- Remove from the broil, top with the (drained) tomato slices and then with the rest of the Parmesan cheese, return to the oven and broil for approx 5 minutes.
- Serve open or closed.

Steps:
- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.
