CRUSTY BROILED TOMATOES
In the South, we love to let our fresh, seasonal produce shine, and this simple dish spotlights a favorite Southern ingredient: the tomato. From Tomato Pie to Tomato Sandwiches, there are countless ways that Southerners serve this fresh fruit in the hotter months, but we may have just found a new favorite recipe. With a crispy, cheesy breadcrumb crust, these Broiled Tomatoes are a beautiful way to show off seasonal tomatoes. With only a few added ingredients, this recipe lets the fresh tomatoes shine as the main component of the dish, their natural flavors complemented by a brush of Dijon mustard and a crust of cheese and breadcrumbs. The tomatoes are broiled just enough to brown the crust, while still maintaining their solid form and juicy bite. To enhance this simple crust and add an extra pop of flavor, feel free to toss the breadcrumb mixture with finely chopped basil or your favorite seasonal herbs. These tomatoes are so versatile, they can be served as petite hors d'oeuvres, an elegant appetizer, or a fresh side dish. You'll be making these Crusty Broiled Tomatoes all season long.

Steps:
- Preheat broiler. Slice tomatoes into thick rounds, drizzle with oil, and season with salt and pepper. Broil until tomatoes start to brown, about 8 minutes; let cool slightly. Store, covered, in the refrigerator up to 1 day.
- Preheat oven to 350 degrees. Boil pasta in a medium pot of boiling salted water until al dente, about 2 minutes less than per package instructions. Drain, reserving 1/4 cup pasta water.
- Return empty pot to medium heat and add butter. When butter melts and foams, add flour and whisk until darkened slightly, 1 to 2 minutes. Add mustard powder and whisk to combine. Slowly whisk in milk. Bring to a boil, then reduce heat to medium and cook, stirring often, until thick enough to coat the back of a spoon, 3 to 4 minutes.
- Reduce heat to low and add cheese in 3 batches, starting with American. Follow with 2 cups cheddar and 1 cup Parmesan. Whisk to fully combine after adding each cheese. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss pasta with cheese sauce and reserved pasta water. Transfer to an 8-inch baking dish.
- In a bowl, mix panko with melted butter and remaining 1/4 cup Parmesan and 1/4 cup cheddar. Top pasta with broiled tomatoes and panko mixture. Bake until bubbly, about 30 minutes.

Steps:
- For the salad: Heat a grill or grill pan over medium heat.
- Brush the tomatoes and romaine halves with olive oil and season with salt and pepper. Grill both, alongside the lemon quarters, until nicely marked on one side, 3 to 4 minutes. Flip and grill the other side until hot and grill-marked, about another 3 minutes.
- For the Caesar dressing: Meanwhile, add the anchovies to a blender or food processor. Throw in the Dijon mustard, vinegar, Worcestershire sauce, garlic and lemon juice. Pulse on low speed for several seconds. Stop and scrape down the sides. With the blender running, drizzle the olive oil into the mixture in a small stream. Stop and scrape down the sides. Add the Parmesan, a pinch of salt and a generous grind of black pepper. Pulse until the ingredients are thoroughly combined. Transfer to a serving bowl.
- Place the tomatoes and lettuce on a platter. Squeeze over the juice from the grilled lemons and sprinkle over the shaved Parmesan. Serve with the Caesar dressing on the side.

- Unlike roasted tomatoes, broiled, grilled, and pan-broiled tomatoes get sweeter and maintain their shape because the cooking is so brief.

- Place the roma tomatoes, cut side up, on the prepared baking sheet. Season well with kosher salt and freshly ground black pepper then drizzle with extra-virgin olive oil. Each tomato should be glistening with oil, not swimming in it.
- Place garlic cloves on a small square of aluminum foil. Sprinkle with a small pinch of kosher salt and a few turns of black pepper. Drizzle with a little extra-virgin olive oil then wrap the sides of the square around the cloves to create a tight packet. Place the packet on the baking sheet with tomatoes. Roast until the tomatoes tender and slightly caramelized (about 1 hour).
- Unwrap garlic and carefully peel (or squeeze). Add roasted garlic cloves, tomatoes and any juices from the baking sheet to a large, heavy bottomed pot. Pour in chicken stock. Using an immersion blender, process tomatoes and stock until a somewhat chunky consistency is achieved (some texture, but no big chunks of tomato). If you don't have an immersion blender, I would recommend pureeing the tomatoes, garlic and juices in a food processor or blender before adding to the pot.
