Rib-eye Rub, recipe follows
Salt and ground black pepper
Chili powder

Steps:

  • Preheat a grill to high heat.
  • Place rib-eye steaks on a large platter and season with rub on all sides. Transfer seasoned steaks to the hot grill, and cook for 4 to 6 minutes on each side for medium-rare, longer if desired. Remove steaks and let rest for 5 to 10 minutes before serving.
  • In a small bowl, combine all ingredients, to taste. Adjust the ratio of spices to your preference.

4 tablespoons unsalted butter, softened
1 tablespoon minced fresh thyme
1 teaspoon Dijon mustard
4 rib eye steaks or 4 New York strip steaks, 1-2-inch thick
kosher salt
ground black pepper

Steps:

  • Blend together butter, thyme and mustard; season with salt and pepper. Place butter on waxed paper or parchment; roll into a log about 1-1½" thick. Wrap in plastic and refrigerate until firm.
  • Trim steaks of any exterior fat. (Leaving the fat on will result in a lot of smoke in your broiler.) Pat steaks dry with paper towels. Season both sides with salt and pepper. Do not use your oven's broiling pan; it's too shallow. Pour 2 cups of salt into a 3" deep disposable roasting pan, then place a cooling rack over the pan. The salt will catch any drips and prevent them from flaring or smoking. Place steaks on the rack.
  • Place steaks in a preheated 375°F oven for 6-8 minutes to bring them up to temperature. Turn steaks over and pat dry again with paper towels. Let rest 10 minutes while preheating broiler.
  • Place roasting pan in broiler, positioned so steaks are 1-1½" from the heating element. Broil 3 minutes, then turn steaks over and broil another 3 minutes. Continue flipping the steaks every 3 minutes until center registers 125-130°F (for medium-rare), 6-16 minutes. Transfer to a serving platter and top each steak with one quarter of the compound butter. Tent with foil and let rest about 5 minutes before serving.
  • Note: timing depends on how strong your broiler is. Place a slice of plain white sandwich bread under your broiler, about 3" from the heat. If your bread is toasted in under 30 seconds, you have a very strong broiler and should use the shortest times. If longer than 2 minutes, your broiler is very weak, and use the longest cooking times.
  • Note: for 1" steaks, prebake 6 minutes and flip every 2 minutes. For 1½" steaks, prebake 8 minutes and flip every 3 minutes. For 2" steaks, prebake 10 minutes and flip every 4 minutes.

STEAK MARINADE
4 boneless rib-eye steaks 1 to 1 1/2 inches thick
1/4 cup worcestershire sauce
1 ziplock bag to marinate steak
SEASON WHEN BROILING
add salt and pepper for seasoning when broiling
2 teaspoons dark brown sugar after turning
GARLIC HERB BUTTER
4 tablespoons unsalted butter, softened
2 tablespoons minced thyme leaves
2 tablespoons minced parsley leaves
1 clove fresh garlic minced

Steps:

  • 1. Cover broiler pan inside with foil. Cover top with foil, punch in the holes for drainage. Spray with kitchen spray. Use top rack a few inches from the flame. Use the high broil setting.
  • 2. Marinate the steaks in worcestershire sauce in a ziplock bag for about 10 minutes. Then pat the steaks dry with paper towels. Season with salt and pepper. Place the steaks on the prepared broiler pan.
  • 3. Make the garlic herb butter by combining the softened unsalted butter, thyme, parsley and garlic, set aside at room temperature.
  • 4. COOK'S TIP: Don't omit the brown sugar in step #5 as it helps in browning the steak, and no, it doesn't make the steak taste sweet.
  • 5. Broil steaks until beginning to brown, 2 to 5 minutes. Turn the steaks over, sprinkle them with the brown sugar and broil until it is done to your liking. 5 minutes for rare and 12 minutes for well done. If you like rare beef, transfer the steak to a platter. If you like well-done beef, leave the steak on the broiler pan but remove it from the oven.
  • 6. Spread the garlic herb butter over the broiled steaks and loosely tent and allow the meat to rest for 10 minutes. Note: You can also use this butter on steak grilled indoors or outdoors.
  • 7. Serve. Enjoy!

4 (1 1/4-inch-thick) rib-eye steaks, either boneless or bone-in
Kosher salt and freshly ground black pepper
Good olive oil
4 ounces stilton cheese, crumbled
8 ounces cream cheese, at room temperature
1/2 cup good mayonnaise
1/2 cup sour cream
1 tablespoon chopped scallions, white and green parts
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 teaspoon Worcestershire sauce

Steps:

  • Thirty minutes before grilling the steaks, remove them from the refrigerator and allow them to come to room temperature. Heat a grill with coals.
  • When the coals are hot, spread them out in the grill in one solid layer. Pat the steaks dry on both sides with paper towels and sprinkle them liberally with salt and pepper. Place the steaks on the hot grill and sear them on each side for 2 minutes, until browned. Brush each side lightly with olive oil. Place the lid on the grill and allow the steaks to cook for another 3 to 4 minutes, until they are cooked rare, or 120 degrees F on a meat thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.) Remove the steaks from the grill, place them in one layer on a platter and cover tightly with aluminum foil. Allow the steaks to rest at room temperature for 15 minutes.
  • For the stilton sauce, place the stilton cheese in the bowl of a food processor fitted with a steel blade and blend until finely minced. Add the cream cheese, mayonnaise, sour cream, scallions, 1 teaspoon salt, 1/2 teaspoon pepper, and Worcestershire sauce. Process until smooth.
  • Slice the steak and serve with the stilton sauce.

  • Let steaks stand at room temperature 15 to 20 minutes. Rub steaks evenly with steak seasoning (I use McCormick Grill Mates Montreal Steak Seasoning).

vegatable oil for rubbing on steaks

Steps:

  • On a small plate with a fork blend all ingredients together well and transfer to a sheet of wax paper. Using wax paper as an aid, shape butter into a 4-inch-long log and wrap. Chill butter 1 hour long, or until firm. Bèarnaise butter may be made 5 days ahead and kept chilled, wrapped tightly.
  • Prepare grill.
  • Bring steaks to room temperature and rub lightly with oil. 1 ribeye steak, preferably USDA Prime, 2-inch (5 cm) thick
salt, to taste
pepper, to taste
3 tablespoons canola oil
3 tablespoons butter
3 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat oven to 200°F (95°C).
  • Generously season all sides of the steak with salt and pepper.
  • Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F (51° C) for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done.
  • Heat the canola oil in a pan over high heat until smoking.
  • Sear the steak for 30 seconds on the first side, then flip.
  • Add the butter, garlic, rosemary, and thyme, and swirl around the pan.
  • Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
  • Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
  • Turn the steak on its side and cook to render off any excess fat.
  • Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
  • Slice the steak into ½ -inch (1 cm) strips, then fan out the slices and serve.
