Ingredients

2 lbs carrots (grated)
1 cup soya milk
1 cup sugar
1/4 cup cashews
2 tablespoons dates

Steps:

Cook carrots on medium heat with 1/2 of the sugar for 15 minuts stirring well.
Add Soya Milk and rest of sugar and cook for 15-20 minutes more stirring well.
Top with Cashews and Dates and serve.

This is a recipe a manager of a cafeteria gave me. Sprinkle confectioners' sugar on top for presentation.

Ingredients

3 pounds carrots, chopped
4 eggs
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ teaspoons baking powder
⅓ cup all-purpose flour

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Steam or boil carrots until tender; mash. In an electric mixer with whisk attachment or by hand, beat eggs into carrots, one at a time. Beat in sugar, vanilla and baking powder. Fold in flour. Pour into a 2 quart baking dish.
Bake in preheated oven 30 minutes, until puffed and set.

Heat vegan butter/ oil in a skillet over medium heat. Add carrots and cook for 5 to 6 minutes, sitrring occasionally.
Reduce heat to medium low. Add salt, sugar, cardamom, cinnamon and mix in. Add the nuts and dried fruit and mix in. Carrots get sweeter on cooking, so you might need little to no sugar. Add less to begin with. Continue to cook partially covered for 5 to 15 minutes depending on your preferred consistency. The pudding thickens on cooling.
Serve warm or cold garnished with chia seeds, pepitas, dried fruits. I like it best a day later when the carrots have absorbed the flavors, spices and milk to soften further.
