6 mint tea bags
1 lime, peeled without pith
2 tablespoons superfine sugar
1 lime, chopped
1 small bunch mint, leaves picked, plus 4 sprigs reserved for garnish
1 cup light rum
1/4 cup lime juice
1/2 cup simple syrup
Ice cubes, for serving

Steps:

  • Bring 4 cups water to a boil, add the tea bags and lime peel. Remove from the heat, and let stand for 5 minutes. Remove the bags and peel, then transfer the tea to a pitcher and chill.
  • Put the diced sugar, chopped lime and mint leaves in a pitcher and muddle. Stir in the chilled tea, rum and lime juice. Sweeten with the simple syrup. Pour over ice into 4 tall glasses, and then garnish each glass with a mint spring.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

For this adaptation of a classic Cuban cocktail, you don't need a muddler. Tear the mint then stir with lime juice, sugar, white rum, and soda water.

2 tablespoons (1 ounce) fresh lime juice
2 heaping teaspoons superfine sugar
1 cup crushed ice
12 fresh mint leaves, plus 5 small sprigs for garnish
¼ cup (2 ounces) white rum
2 tablespoons (1 ounce) club soda

Steps:

  • In 10-ounce glass (such as Collins or highball), stir together lime juice and sugar until sugar dissolves. Add ¼ cup crushed ice. Rub mint leaves over rim of glass, then tear leaves in half and add to glass. Gently stir for 15 seconds, then add rum, remaining crushed ice, and club soda.   • Steep 4 or 5 black tea bags, 2 cups turbinado sugar and 2 handfuls of fresh mint in 3 cups simmering water for 5 minutes, stirring to dissolve the sugar. Strain into a pitcher; add the juice of 3 limes, 1 1/2 cups light rum, 1 cup cold water and another handful of mint. Stir vigorously, crushing the mint with a wooden spoon; chill. Serve over ice with lime and more mint.

  • Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.

30 large fresh mint leaves, coarsely torn by hand
3 to 4 thick slices fresh watermelon
12 ounces light rum, such as Bacardi
1/2 cup simple syrup
6 tablespoons freshly squeezed lime juice (3 limes)
Sprigs of mint and spears of watermelon, for serving

Steps:

  • Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.
  • Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold.

4 limes, juiced

1 (750 ml bottle) light rum
1 liter club soda

3 tablespoons lemon juice or 3 tablespoons lime juice, fresh
1 1/2 ounces light rum
club soda, chilled

  • In a tall thin glass, crush or muddle part of the mint with a fork to coat the inside.
  • Add the sugar and lime juice and stir thoroughly.
  • Top with ice.
  • Add rum and mix.
  • Top off with the club soda (or seltzer).

  • Place tea bags and mint sprigs in a large heat-proof measuring cup. Pour boiling water over tea bag mixture and cover measuring cup with a small plate. Steep tea until desired strength is reached, 15 to 20 minutes. Pour steeped tea through a strainer into a large mason jar, squeezing excess liquid from tea bags. Discard mint and tea bags.n

"The mojito (mo-hee-toe) was concocted in the 17th century by Sir Francis Drake. While crusading around the Caribbean when his stock of whiskey ran dry (which he always drank with mint and a little sugar water), Sir Francis substituted rum for his whiskey and the mojito was born." Officially, however, Cuba claims to have invented the mojito in the teen years of the 20th century. It was one of Ernest Hemingway's favorite libations when he visited La Bodeguita in Havana. 2 ounces simple syrup (below)
2 ounces white rum
club soda

Steps:

  • Place lime wedges and mint leaves in a pint glass.
  • Muddle with the handle of a wooden spoon for 30 seconds.
  • Add simple syrup and white rum.
  • Fill glass with ice and top off with club soda.
  • Shake or stir gently.
  • TO MAKE SIMPLE SYRUP:.
  • In a small saucepan, combine 2 parts sugar to 1 part water.
  • Heat until sugar is dissolved.
  • Cool before using (this keeps in the refrigerator for 1-2 weeks).
  • For a fruity twist to your mojito, use flavored rum, such as mango, banana, or pineapple.
  • NOTE: Muddle means to simply bruise or gently pound the limes and mint leaves to release their juices and essence. You can buy a muddler, which looks like a tiny baseball bat or billy club, at any good restaurant store.
