GRILLED HALIBUT SIMPLY DELICIOUS
This is a Greek version of grilled halibut. Yes I know halibut is not Greek but it's the flavors and simplicity of cooking that is Greek. Flavored with olive oil, lemon, garlic and Greek oregano. You can use halibut steak which can handle the grill better.

Steps:
- Combine olive oil, garlic, lemon juice, parsley, oregano, salt and pepper in a zip lock bag. Mix the marinade and add halibut and refrigerate for 1 hour. Preheat grill.
- Remove halibut from bag and place on hot very WELL OILED grill.
- Grill for 4 to 5 minutes per side.
- Place fish and don`t move for 4 minutes or it will fall apart.
- Fish is done when it flakes easily with a fork and is opaque all the way through.

BROILED HALIBUT WITH BECHAMEL SAUCE

- Cook's Note: The halibut can be substituted with 24 ounces of sole fillets. Reduce the cooking time in the wine mixture to 3 to 4 minutes.
- Spray a 7 by 11-inch glass baking dish with cooking spray. Set aside.
- For the bechamel sauce: In a 2-quart saucepan, melt the butter over medium heat. Add the flour and whisk until smooth, about 2 minutes. Gradually add the warm milk, whisking constantly to prevent lumps. Simmer over medium heat, whisking constantly, until the sauce is thick and smooth, about 10 minutes. Remove the pan from the heat and stir in the cheese, salt, pepper, and nutmeg.
- For the halibut: In a large saucepan, bring the wine and water to a boil over medium-high heat. Reduce the heat to a simmer and add the halibut. Cover the pan and cook until the flesh is opaque, 8 to 10 minutes. Using a fish spatula, carefully remove the fish and arrange in a single layer in the prepared baking dish. Season with salt and pepper.
- Preheat a broiler. Spoon the bechamel sauce over the fish and top with the Parmesan. Dot with butter and broil until golden, 2 to 4 minutes.

- Preheat the broiler. Line a broiler pan with foil and preheat 5 minutes.

- Position a rack in the upper third of the oven; preheat to 450 degrees F. Cut the halibut into 4 pieces; arrange on a foil-lined baking sheet, cut-side down. Squeeze 1 lemon half over the fish and season with salt and pepper; spread the mayonnaise over the tops. Bake until the fish is almost cooked through, 6 to 7 minutes. Switch the oven to broil. LEMON AND GARLIC BROILED HALIBUT FILLETS WITH ROASTED POTATOES
Steps:
- Heat the oven to 400 F (200 C/Gas 6).
- In a bowl, toss the potatoes with the olive oil, 3/4 teaspoon of kosher salt, and about 1/4 to 1/2 teaspoon of freshly ground black pepper.
- Add the 2 cloves of minced garlic and 1 tablespoon of parsley. Toss to coat the potatoes thoroughly.
- Arrange the potatoes in a single layer on a large, rimmed baking sheet.
- Roast for about 1 hour, or until golden brown and fork tender. Turn the potatoes every 15 to 20 minutes.
- Remove the potatoes and cover with foil; keep warm. Fish
- While the potatoes are roasting, place the halibut fillets skin side down on greased baking pan or greased rack of broiler pan. Sprinkle lightly with kosher salt and freshly ground black pepper.
- In a small saucepan, combine the butter, 3 cloves of minced garlic, lemon juice, the basil, and 1 tablespoon of fresh chopped parsley. Heat over low heat until the butter is melted and garlic is softened, about 1 to 2 minutes.
- Spoon some of the butter mixture over each fillet. Cover the baking pan and refrigerate the fish until the potatoes are finished.
- After taking the potatoes out of the oven, heat the broiler (high heat, or about 500 F).
- Broil the halibut fillets for about 10 minutes, or until they flake easily when tested with a fork.

TONY'S MARINATED HALIBUT
I went to a cooking class which was taught by the head chef from Tony's restaurant (AAA-five diamond award winning). This fish is so light, easy and flavorful. It uses Mediterranean ingredients. Prep time does not including marinating time (1 to 24 hours. . it's up to you).

- Wash and dry your halibut and remove skin if applicable. Cut fish into 4 pieces.
- In a medium sized glass bowl, whisk together the marinade ingredients. Place fish in same bowl and turn to coat thoroughly. Top bowl with plastic wrap and marinate in the refrigerator for 1 hour up to 24 hours.
- Once marinating is complete, grill (or pan fry) fish over medium-high heat for 6-8 minutes until fish is just done. . .do not overcook. . .the fish should still be light and have some "give" to it when touched with your finger and just start to flake apart.
- While fish is cooking, whisk together sauce ingredients (do not cook the sauce).
- After fish is cooked, top with a generous portion of sauce and serve!

GRILLED HALIBUT STEAKS WITH LEMON-GARLIC SAUCE

- In a small bowl, mix brown sugar, olive oil, lemon juice, garlic, salt and pepper. Pour into glass or ceramic baking dish, just large enough to hold fish in single layer. Turn fish to coat with marinade. Cover and marinate in refrigerator 20 min., turning after 10 min.
- Pour off the excess marinade from baking dish into a cast-iron pan or saucepan that can be placed directly on grill preheated to high. Reduce the marinade until heated through and slightly thickened. Remove from grill.
- Reduce barbecue heat to medium. Place fish on grill. Close lid and cook 5 to 8 min. per side, basting occasionally with reduced marinade, until a meat thermometer inserted into thickest part of fish reads 158°F (70°C). Serve with remaining reduced marinade on the side.

GRILLED HALIBUT WITH BROWN BUTTER-CITRUS-AU POIVRE VINAIGRETTE

- Heat a charcoal or gas grill to high.
- Brush the halibut fillets on both sides with the canola oil and sprinkle with salt and pepper. Grill, covered, until golden brown on the bottom, about 2 minutes. Flip and cook, covered, until the fish is firm and just cooked through, another 2 minutes. Transfer to a platter.
- While the fish cooks, combine 2 tablespoons of the butter and the shallot in a medium skillet over medium heat. Cook, stirring, until the shallot softens, about 3 minutes. - Cut garlic in half and rub fish steaks with cut sides. Brush fish with three tablespoons of the olive oil.
- Broil the fish steaks under a preheated broiler about five minutes, turn and broil on the other side about three minutes longer. Fish should not be quite cooked through.

- In a small mixing bowl, combine 1/4 cup butter, shallots, dill weed, parsley, mustard, lemon juice, garlic and salt; mix well.
- Rinse halibut steaks in cold water and pat dry on paper towels.
- In a 8 inch x 8 inch oven proof casserole dish, add 1 tablespoon of butter and 1 tablespoon of olive oil. Place under the broiler on HIGH heat for about 2 minutes or until the butter has melted.
- Place the halibut steaks in the casserole dish.
- Spread one half the lemon/herb mixture equally over each steak.
- Place under the broiler on HIGH heat and broil for 6 minutes.
- Turn halibut steaks over and spread the remaining lemon/herb mixture evenly over the steaks.
- Continue to broil on HIGH heat for another 5 to 6 minutes or until fish flakes easily with a fork. Do not overcook the fish.
- Serve with cooked basmati brown rice.
- You may also use finely chopped chives or green onions instead of the shallots.
