I grew up with a chain of fried chicken fast food joints. They had the best seasoned potatoes. Below is my late grandma's recipe for baking instead of frying. These are also great to make ahead and bake later. I take these to work when we have lunch for the staff.

6 potatoes, quarter, skin left on
1 cup flour
1 cup parmesan cheese
1 teaspoon onion powder
1 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 cup margarine

Steps:

  • Preheat oven to 375. Melt stick of margarine in METAL baking pan(glass pans seem to make the taters soggy) . Wash and quarter the potatoes - keep the skin on. In a plastic zip-loc bag put all the dry ingredients. Coat the potatoes and place in a single layer in pan. Bake for 45 minutes.
  • I keep the mix in the fridge for making one or two potatoes.

TASTY OVEN TATERS (ROASTED, SEASONED RED POTATOES)



Tasty Oven Taters (Roasted, Seasoned Red Potatoes) image

I probably don't make these the same way twice, but it's a quick way to toss together a tasty side to your main dish. As always, since I don't measure anything, these are approximate quantities of the ingredients!

8 medium or 12 small red potatoes, scrubbed and cut into wedges or chunks (leave the skin on!)
1/3 c olive oil
1/3 c parsley flakes
1 Tbsp (2-3 minced cloves) fresh garlic
1/2 to 1 whole red onion, cut into slivers
1 Tbsp essence by emeril
1/4 tsp celery salt
1/4 c onion powder (not onion salt)
1/2 Tbsp mrs. dash
1 tsp sea salt
1/2 tsp black pepper
1 pinch red pepper flakes (up to 1/2 teaspoon)
1/2 tsp crushed rosemary
1 pinch dried thyme
1 stick bestlife buttery baking stick

Steps:

  • 1. Preheat oven to 400. Place scrubbed, cut potatoes and onions into gallon zip bag. While you don't want to cut the potatoes too small, they do get done faster if they're not too big. My husband chokes easily from a medical condition, so I do mine in about 1 inch chunks. At any rate, keep the potato cuts as uniform as possible so they'll get done evenly.
  • 2. Stir together remainder of ingredients except for butter and pour into bag with potatoes. Close bag securely and thoroughly work oil mixture into potatoes. If the mixture is too dry, add a little more olive oil or you could even use a couple of tablespoons water. Pour into large pan (I use a jelly roll pan and it gives ample room for roasting without overcrowding. Lining the pan with aluminum foil makes cleanup a little easier if you prefer. I've also divided the potatoes into two large cast-iron skillets and this also works well.
  • 3. Roast for 35-45 minutes, depending on your oven and preference of doneness, giving the potatoes one or two stirs during roasting time. Once potatoes are tender, cut butter into pieces and stir into potatoes. Turn broiler on and broil for a few minutes until nice and brown. Note: if you'd like, sample one to see if this is seasoned enough to suit you; and if needed, add additional salt/pepper to taste. Careful...they're hotter than a two-dollar pistol! Variation: include 1/4 cup balsamic vinegar in the oil mixture, and finish with a light sprinkling of parmesan cheese before serving.

OVEN FRESH SEASONED POTATO WEDGES

¼ cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon salt
2 russet potatoes, scrubbed and cut into eighths

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place Parmesan cheese, olive oil, onion powder, garlic powder, pepper, salt, and potatoes into a resealable plastic bag. Seal the bag, then shake to coat the potatoes with the seasoning. Spread the potatoes over a baking sheet.
  • Bake in the preheated oven until the potatoes are easily pierced with a fork, about 25 minutes.

This is just one of those "Oh my god! I have no idea what I'm going to make for dinner recipes". It's fast and easy, and just what any weekday warrior needs for a good meal!

4 medium baking potatoes
2 1/2 cups sloppy joe sandwich sauce (you will find it with the chili in your grocery store)
1 cup cheddar cheese
chopped onion
sour cream
relish
chopped bell pepper

Steps:

  • Prick potatoes with a knife and rub with butter.
  • Place on a microwavable plate and cook on high for 6 minutes.
  • Spin the potatoes around in the butter and continue to cook for 6-8 more minutes, or until tender.
  • Let stand for 5 minutes in microwave.
  • Cut a slit down the center of the potatoes and press the ends to make a little well for the fillings.
  • Spoon the sloppy joe"stuff" into the potatoes and top with the cheese.
  • Microwave for 1-2 minutes or until the cheese haves melted.
  • Serve with addition topping choices.

7 potatoes, petite yellow flesh
2 -4 dashes garlic salt
2 -4 dashes rosemary, crushed
2 -4 dashes oregano leaves
2 -4 dashes parsley flakes
2 -4 dashes thyme
2 -4 dashes marjoram leaves
2 -4 dashes ground ginger
2 -4 dashes chili powder
2 -4 dashes dill weed
1/4 teaspoon curry powder
1/4 teaspoon black pepper
1/2 teaspoon chives (green onions)
1/2 teaspoon Lawry's Seasoned Salt
2 teaspoons parmesan cheese, grated
1/2 cup French's French fried onions
1/8 cup olive oil

Steps:

  • Cut the petite potatoes in halves. Set aside.
  • Preheat the stove to medium-low heat.
  • Put a medium (or small) frying pan on top of the stove to heat it up.
  • Combine the garlic salt, crushed rosemary, oregano leaves, parsley flakes, thyme, marjoram leaves, ground ginger, chili powder, dill weed, curry powder, black pepper, chives, seasoned salt and grated Parmesan cheese in a medium sized bowl; stir well.
  • Crush the French's fried onions until slightly fine; add to the spice mixture.
  • In the same medium bowl add the olive oil; stir it in well.
  • Add the sliced potatoes to the spice and oil mixture; coat the potatoes well.
  • Pour the mixture into the frying pan.
  • Cook for 25 to 40 minutes.
  • Move potatoes around every 5 to 10 minutes.

If you like spicy, you'll love these. I use 2 really huge baking potatoes cut into wedges with the same amounts of sauce ingredients. These can be used as a side dish or as an appetizer.

6 -8 potatoes, sliced into wedges
1 -2 tablespoon olive oil
salt
pepper, and
garlic powder, to taste
1/4 cup butter
1/2 cup hot pepper sauce
bleu cheese salad dressing (optional)

Steps:

  • Spray a baking sheet with cooking spray.
  • Arrange potato wedges on sheet and drizzle with olive oil Sprinkle with salt, pepper, and garlic powder.
  • Bake at 375º for 30 minutes until tender.
  • Remove pan from oven.
  • Combine the hot sauce and butter in a microwave safe bowl and microwave on HIGH until melted.
  • Stir to combine.
  • Drizzle mixture over potato wedges and return to oven for an additional 15 minutes.
  • Serve with salad dressing for dipping.

My copycat recipe for KFC's seasoned fried potato wedges. This recipe requires 1/2 level cup Recipe #453973.

4 -6 small unpeeled white potatoes or 4 -6 small russet potatoes
4 cups cold water
2 teaspoons salt
2 teaspoons Accent seasoning (recommended flavor enhancer)
2 cups pre-sifted all-purpose flour
1/2 cup seasoning (Bulk KFC Original Recipe Seasoning (Copycat))
pure vegetable shortening or vegetable oil

Steps:

  • RESERVE 1/2 level cup of prepared Recipe #453973 (without added flour).
  • SELECT as many premium small-sized, blemish-free white or russet potatoes needed (1 potato = 1 serving); SCRUB skins and rinse.
  • CUT potatoes in half lengthwise, then cut each half into 3 wedges, yielding 6 potato wedges per potato (if you are using larger potatoes, you can cut each potato into 8 wedges).
  • SOAK potatoes refrigerated for several hours or overnight in BRINE mixture (4 cups cold water, 2 teaspoons salt, 2 teaspoons Accent seasoning (recommended flavor enhancer).
  • MEASURE 2 cups all-purpose flour with the 1/2 cup Recipe #453973 into a large sealable container, such as a GLAD food storage container or a Ziploc bag; SHAKE container and mix well.
  • REMOVE a few wedges from brine using tongs; PLACE wedges (a few at a time) into SEASONED FLOUR container.
  • SEAL firmly and shake potato wedges in all motions to thoroughly coat; PLACE coated pieces on a paper-towel lined plate until all wedges are breaded; ALLOW potatoes to rest a few minutes, to absorb breading.
  • USE enough pure vegetable shortening or peanut oil (or both) to immerse potatoes completely in a deep heavy pot, or add manufacturer's recommended amount of oil to deep-fryer; VERY SLOWLY heat oil in gradual increments oil to 350°F until preheated.
  • FRY potato wedges completely immersed in 350°F fat without overcrowding, in a deep-fryer and fry until crisp golden brown and potatoes are tender within; SEASON with sea salt if desired.
