BROILED GRAPEFRUIT
Fun and easy, this healthy broiled grapefruit can be served for a light breakfast or at any time of the day as a snack or dessert!

- Preheat broiler. You can alternately use a toaster oven for this using a high temp.
- Prep grapefruit: Slice grapefruits in half. You may have to slice a tad bit off the bottom if your grapefruits don't stand straight. Use a grapefruit knife or a serrated paring knife and cut each segment so the pink flesh is cut away from the membrane. Next, gently par around the whole outside area of flesh cutting away from the rind. It will make your grapefruit eating a little easier and less messy.
- Assemble: Place each half, cut side up, on a rimmed cookie sheet or baking dish. Top each half with 1 teaspoon or so of coconut oil, 1 teaspoon or so of sugar, and a generous pinch of ginger. Use your fingers to blend and spread the ginger on the grapefruit halves.
- Broil: Place under the broiler and cook anywhere from 4 - 7 minutes. I find it best to set your timer for 2 minutes, check grapefruit, if sugar is not caramelized or there is no excessive charring of the grapefruit rind (white part), add another minute and repeat the process until sugar is caramelized and rind is gently colored but not overly burnt all around. If using shredded coconut, sprinkle on top of the grapefruit halves after the first 2 minutes. Once done, sprinkle with salt.
- Serve: Enjoy right away or let cool and serve at room temp.

- Position an oven rack about 4 inches below the broiler and heat the broiler on high.
- With a serrated knife, cut the grapefruit in even halves.
- Using a small paring knife or a grapefruit knife, cut each section away from the surrounding membrane.
- Set the grapefruit halves in a shallow broiler-safe pan (such as an enameled baking dish or a heavy-duty rimmed baking sheet).
- If necessary, trim a thin slice off their bottoms so they sit level.
- In small bowl, stir together the honey and the vanilla extract.
- Drizzle the honey mixture over the grapefruit halves.
- Dust each with a bit of cardamom.
- Broil until bubbling and lightly browned in spots, 4-6 minutes.
- Remove from the oven and let cool slightly.
- Serve warm or at room temperature.

- Top each grapefruit half with 1 tablespoon brown sugar and 1 teaspoon coconut.

BROILED GRAPEFRUIT WITH BROWN SUGAR AND FLAKY SALT
A classic at a fancy breakfast or brunch, the best broiled grapefruits have a glossy caramelized topping covering sections of the warm, juicy citrus. This recipe also includes a little cinnamon for a heady fragrance, and a touch of sea salt, which softens the bitterness of the grapefruit peel. It's best served warm from the oven, when the brown sugar is still melted and syrupy. Ruby or pink grapefruits make for the prettiest presentation, but white ones work just as well, and have a livelier, more acidic flavor.

- Move the rack 4 inches away from the broiler, and turn it on.
- Halve the grapefruits through their equators. Using a paring knife or a grapefruit knife, cut the sections away from the membranes and pith so they are easy to spoon up. Place grapefruit halves, cut-side up, on a baking sheet. Sprinkle each grapefruit half with 1 tablespoon brown sugar, then drizzle with melted butter and a little honey. Sprinkle cinnamon over the tops if you like.
- Broil grapefruit until the sugar melts and caramelizes, 2 to 5 minutes. (Broilers vary a lot so watch carefully to make sure they don't burn.) Sprinkle with flaky sea salt, and serve immediately.

- Preheat broiler. Make the bases of your grapefruit halves flat so they don’t wiggle around: slice off about 1/4-inch of the peel on the base end and the stem end of each grapefruit. Then slice each grapefruit in half, parallel to your initial cuts. Place the grapefruit halves face-down on paper towels for about five minutes to absorb excess moisture.
- In a small bowl, mix together the raw sugar or brown sugar (I used a mixture of both) with a sprinkle of ginger and cinnamon and a dash of salt. On a rimmed baking sheet or a 13×9-inch glass baker, place the grapefruit halves face up. Sprinkle each halve liberally with the sugar mixture, using about 1 tablespoon per halve. Broil for 7 to 10 minutes, until the sugar is melted and turning a deep amber. Let the grapefruits cool for at least a few minutes; serve warm or at room temperature with a big dollop of yogurt (swirl in honey if you’d like) and a handful of granola.
