Make-ahead foil packets with shrimp, sausage, corn, and potatoes make for a fast and fun seafood boil.

heavy duty aluminum foil
1 ½ pounds large shrimp, peeled and deveined
1 pound baby potatoes, halved
1 (12 ounce) package andouille sausage, sliced
2 ears corn, cut crosswise into 4 pieces
2 tablespoons olive oil, divided
1 ½ tablespoons butter, cut into 4 pats, or to taste
4 teaspoons seafood seasoning (such as Old Bay®)
4 teaspoons minced fresh garlic
kosher salt and ground black pepper to taste
1 lemon, cut into wedges
2 tablespoons chopped parsley leaves

Steps:

  • Cut four 12-inch sheets of aluminum foil. Mix shrimp, potatoes, sausage, and corn together. Add an equal portion to the center of each sheet of foil.
  • Fold up the sides of the foil packets. Add 1/2 tablespoon olive oil, 1 pat of butter, 1 teaspoon seafood seasoning, 1 teaspoon garlic, salt, and pepper to each packet. Squeeze 1 lemon wedge into each and leave it in the packet. Toss mixture gently to combine. Fold foil over to seal packet fully.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Grill packets until shrimp is opaque and vegetables are tender, about 15 minutes. Garnish with parsley.

1 quart canola oil, for frying
3 quarts water
2 lemons, halved
1 yellow onion (10/15 if possible), peeled and cut in quarters
2 tablespoons spice mix (recommended: "Swamp Fire")
2 fresh ears yellow corn
1/2 pound fresh gulf shrimp, peeled and deveined
1 tablespoon chopped pickled jalapeno peppers
4 ounces cream cheese, softened
2 tablespoons butter, softened
1 dash kosher salt
1 dash freshly cracked black pepper
1 package won ton wrappers
1 egg, beaten
1/3 cup peach preserves (recommended: Texas)
1/3 cup water
1/4 cup hoisin sauce
2 tablespoons chopped scallions, greens only
1 dash hot sauce (recommended: Tabasco)

Steps:

  • Heat the oil in a deep-fryer to 350 degrees F.
  • Bring a large pot with 3 quarts of water to a boil over medium heat.
  • Add the lemons, onion, spice mix and the corn. Let boil for about 5 minutes before adding the shrimp. Cook the shrimp until they curl, about 3 to 4 minutes. Drain the mixture and remove the shrimp to a strainer. Run cold water over them to stop them from cooking. Cut the corn off the husk and add the kernels to a large bowl. Add the jalapenos, cream cheese, butter, salt and pepper and stir gently to combine. Coarsely chop the shrimp and gently mix them into the corn mixture.
  • Lay the won ton wrappers out on flat surface and put 1 teaspoon of the corn mixture in the middle of each wrapper. With your finger or a pastry brush, coat the outside edges of the wrappers with beaten egg. Fold the 4 corners of the wrappers to the top and seal down the sides, bring careful to push out all the air. Make sure you get a tight seal on all of the seams. Fry the won tons in the hot oil until they are golden brown, about 4 minutes. Remove from the oil and arrange on a serving plate. Serve with the dipping sauce.
  • For the dipping sauce:
  • Add all the ingredients in a serving bowl and mix well to combine.

Salt and pepper
1 cup apple juice
1 teaspoon apple cider vinegar
1 teaspoon heavy cream
1 tablespoon butter
1 apple, sliced
1 teaspoon sugar

Steps:

  • Preheat oven to 350 degrees. Season scallops with salt and pepper and grill for 3 minutes and finish in oven, about 2 minutes. Boil apple juice and cider vinegar, reduce by half. Add cream and butter.
  • Slice apples very thin and cook slowly in a pan with butter and sugar. Cook until lightly brown.
  • Place apple slices on plate. Place scallops on apples and pour sauce over the top.

Grilled Shrimp with Roasted Corn and Black Bean Salsa image

2 ears fresh corn, husked
1 tomato, cored, seeded, chopped
1 cup drained canned black beans
1/2 small red onion chopped
1/2 bunch fresh cilantro, leaves chopped
1/2 fresh lime, juiced
2 jalapeno chilies, seeded and minced
1/2 teaspoon ground toasted cumin seeds
1/4 cup dry white wine
2 tablespoons olive oil
1 1/2 pounds large uncooked shrimp, peeled, deveined

Steps:

  • Soak bamboo skewers in water for 30 minutes. Prepare barbecue (medium high heat). Grill corn until just tender and brown in spots, turning frequently, about 10 minutes. Cut corn from cob. Transfer corn kernels to medium bowl. Add tomato, black beans, onion, cilantro, lime juice, 1 jalapeno and 1/4 teaspoon ground cumin and stir to blend. Combine wine, olive oil, remaining jalapeno and 1/4 teaspoon ground cumin in a large bowl. Add shrimp and toss to coat. Cover and refrigerate 1 to 2 hours, stirring occasionally.
  • Remove shrimp from marinade; discard marinade. Thread shrimp on bamboo skewers. Sprinkle with salt and pepper. Grill until just cooked through, about 2 minutes per side. Spoon salsa on platter. Top with shrimp skewers.

6 tablespoons unsalted butter, at room temperature
1 teaspoon finely chopped garlic
1 tablespoon chopped shallots
1 tablespoon chopped fresh Italian parsley
1/2 lemon, juiced
Fine sea salt, to taste
24 uncooked large shrimp, shell and tail on
1/2 cup Fish Fumet, recipe follows, or water
2 pounds heads and bones from black bass, red snapper or halibut
Cold water
2 tablespoons corn oil
1 medium onion, peeled and very thinly sliced
1/4 small fennel bulb, very thinly sliced
1 leek, very thinly sliced
15 white peppercorns
1/4 teaspoon fine sea salt
1 sprig fresh Italian parsley
1 bay leaf
1 cup dry white wine
3 cups water

Steps:

  • Preheat the broiler. Place the butter in a small bowl and stir in the garlic, shallots, parsley, lemon juice and salt. Cut the shrimp in half lengthwise, leaving them attached at the tail. Spread the shrimp open and arrange them in a shallow, oval flameproof casserole. Top the shrimp with generous dabs of the butter mixture and pour fumet or water into the dish. Broil the shrimp until they are cooked through, about 4 minutes. Arrange the shrimp in a line across 4 plates, so that the tail of each shrimp fits inside the shrimp in front of it. Whisk the liquid in the casserole dish and pour it over the shrimp. Serve immediately.
  • Remove the gills and eyes from the fish or have your fish store do it. Cut the heads and bones across into 4-inch pieces. Put them in a shallow pan and cover with cold water. Let stand for 1 hour, changing the water twice. Drain. Heat the oil in a large pot over medium heat. Add the onion, fennel, leek, peppercorns, salt, parsley and bay leaf. Turn the heat to medium-low and cook until the vegetables are softened but not browned, about 4 minutes. Add the fish bones and cook, stirring from time to time, until the bones and any flesh around the bones turn from translucent to white, about 12 minutes. Add the wine and water and bring to a boil. Boil for 10 minutes, skimming off the foam as it rises to the top. Remove from the heat and let rest for 10 minutes. Strain the fumet through a fine-mesh sieve, pressing firmly on the solids to extract as much of the flavorful liquid as possible. If you have more than 3 cups of fumet, place the liquid in a clean saucepan and boil until reduced to 3 cups. Store, tightly covered, in the refrigerator for up to 3 days or in the freezer for up to 2 months.

CAJUN-STYLE BROILED SHRIMP

Shrimp, the most versatile seafood, is now the most popular in America, and there is no wrong way to eat it. Wild shrimp from the Pacific or the Gulf of Mexico is a treat if you can find it. Fresh local shrimp from Maine or the Carolinas is an even rarer gem. (These are all preferable from a sustainability perspective.) A vast majority, of course, is farmed and frozen. If you buy it ''individually quick frozen'' in resealable bags, you can take out only as many as you want and thaw them by leaving the shrimp in the fridge for 24 hours or running them under cool water for an hour or less. Here, it is made Cajun with cayenne, paprika and garlic and quickly broiled.

  • Mash 1 garlic clove with 1 teaspoon salt until it forms a paste.
  • Add to it 1/2 teaspoon cayenne, 1 teaspoon paprika, 1 tablespoon lemon juice, 2 tablespoons olive oil and lots of black pepper.
  • Rub paste all over 1 1/2 pounds peeled shrimp.
  • Broil, 2 to 3 minutes per side.
