Aglio Olio is a basic, quick pasta dish. You can use leftover chicken and veggies or cook as you go which will determine your prep time.

Steps:
- While the pasta (Angel Hair takes about 4 minutes) is cooking start aglio olio.
- In a heavy saucepan with a med/low flame, add 1/4 cup of oil and garlic.
- Lightly sauté garlic do not let the garlic get dark brown.
- Add chicken stock and stir.
- Add chicken.
- Add Broccoli Rabe.
- Do not drain pasta; use tongs to "pull" pasta out of pot and put in to pan with chicken and broccoli rabe.
- Toss and serve with fresh grated cheese.

Steps:
- Steam broccoli over a pot of boiling water, or in a veggie steamer, for about 5 minutes.
- Feel free to steam more or less, depending on how your family likes their veggies cooked.
- Keep in mind that you will also be sautéing the broccoli in the next step.
- In a large saute pan, heat olive oil over medium heat.
- Add the garlic and saute for about 45 seconds to impart its flavors into the oil.
- Before the garlic begins to brown, add the red pepper flakes and broccoli to the pan and cook for another 5 minutes, or until cooked to your liking.
- Season with salt and pepper and serve.

BRAISED BROCCOLI WITH GARLIC, ANCHOVIES & WINE
This recipe is from a great cookbook "How to cook everything" by Mark Bittman. I like to cook the broccoli for about 2 minutes less time so it is still very crisp and I serve it at room temperature. The recipe called of only 1 tsp of minced garlic but I love that garlic. Don't be afraid of the anchovies just think how good they are in a Caesar salad!!

- Put oil into a skillet that has a lid, turn heat to medium and saute the garlic& anchovies, stir occasionally 3-5 minutes or until the anchovies begin to break up and the garlic begins to color Add broccoli, stirring for 3-4 minutes, add wine and let it simmer for about a minute Cover, turn heat to medium low and cook for 2-3 minutes.
- Uncover turn heat to medium and continue cooking until the wine has evaporated apprx 5 minutes Season.
- Serve hot or at room temperature.

- Bring water to a boil and add salt to it.
- Now add in the pasta and cook till al dente or as per package instructions. Set aside.
- Now heat olive oil in a pan and add garlic immediately, so that garlic flavours the oil.
- When garlic turn light golden. Add chilli flakes and mix well.
- Now add in coriander leaves and switch off the flame.
- Add the pasta in and toss well.
- Serve immediately.

- In a heavy skillet, heat oil. Remove from heat and add the finely chopped garlic. Stir for 30 seconds, and return skillet to low heat. Add the broccoli and toss until broccoli is coated with oil. Add the Sauvignon Blanc, and salt and pepper, to taste. Simmer uncovered for 5 minutes. Cover and simmer 15 minutes. Transfer the broccoli to a heated bowl with a slotted spoon. Boil the liquid in the skillet over high heat until reduced to 1/2 cup. Pour liquid over broccoli and serve.

- Preheat oven to 400 degrees. Toss the broccoli with the 2 tablespoons olive oil plus salt and pepper to taste. Place the broccoli in the oven, and roast 25 to 30 minutes. The broccoli should be starting to brown and be easily pierced with a fork when it is ready. When done, set aside to cool a bit.
- Start the water boiling for the pasta shortly after the broccoli goes in the oven. Plan to add the pasta to the water after the broccoli has been roasting for 15 to 20 minutes.
- Heat the 1/4 cup extra virgin olive oil in a small sauté pan on medium low heat. When it starts to get warm after a few minutes, add the garlic. Cook for one to two minutes, letting the garlic briefly sizzle a bit and release that garlicky aroma. You want the garlic to just start to turn golden, but remove before it gets brown. When the garlic is done, remove the pan from the heat.
- Drain the pasta when cooked to your liking, following package instructions. Toss immediately with the garlic olive oil mixture, followed by the broccoli. Stir in the cheese, with a bit more olive oil if you like. Add salt and pepper to taste, and parsley if you are using it. Serve and enjoy!
