Superhealthy and lower in fat than a traditional lasagne, this version is also a lot quicker to assemble

1 tsp oil
4 courgettes , sliced lengthways
1 red chilli , deseeded and finely chopped
½ x 680ml jar passata with onion and garlic
400g bag seafood mix , defrosted if frozen
4 fresh lasagne sheets, halved
3 tbsp grated parmesan
3 tbsp dried breadcrumbs
350g green bean , to serve

Steps:

  • Heat a griddle and brush a little oil on the courgettes. Cook in batches until lightly charred. Season and scatter on the chilli, then set aside.
  • Heat oven to 200C/180C fan/gas 6. Pour a little passata in a medium-sized ovenproof dish. Place half the seafood over it, then season and top with a third of the courgettes.
  • Top with 2 sheets of pasta, then more tomato sauce, seafood, courgettes, another layer of pasta, more tomato sauce and finish with the rest of the courgettes. Mix the Parmesan and breadcrumbs, then scatter on top and cook for 25-30 mins until golden. Steam or boil the green beans and serve with the lasagne.

5 medium zucchinis ((2 lb. total weight))
Olive oil cooking spray
1 1/2 teaspoons Diamond Crystal kosher salt (divided)
1/2 teaspoon black pepper (divided)
1/2 teaspoon garlic powder
1 tablespoon olive oil
1 lb. lean ground beef ((85/15))
1 tablespoon minced fresh garlic
1 1/3 cup marinara sauce (divided)
15 oz whole milk ricotta cheese (room temperature)
2 large eggs
1/2 cup chopped fresh basil (packed (1 oz) )
8 oz shredded part-skim mozzarella cheese (divided)

Steps:

  • Preheat your oven to 350 degrees F and heat your grill to medium. Slice the zucchinis lengthwise, into 1/4-inch-thick strips, getting 6 slices out of each zucchini and discarding the ends.
  • Spray the zucchini slices with olive oil and sprinkle them with 1/2 teaspoon Kosher salt, 1/8 teaspoon black pepper, and 1/2 teaspoon garlic powder.
  • Grill the zucchini slices, in batches, 2-3 minutes on each side, or until golden and firm - not browned and crisp. Spread them on clean kitchen towels to soak up more moisture.
  • In a large skillet, heat the olive oil over medium-high heat, about 2 minutes. Add the meat, the minced garlic, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  • Cook, stirring with a wooden spoon to break up the meat, until the meat is no longer raw, about 5 minutes. Drain into a colander, then return the meat to the pot and mix in 1 cup of the marinara sauce. Turn the heat off and set aside.
  • In a medium bowl, with a fork, mix together the ricotta, eggs, basil, and the remaining kosher salt and black pepper.
  • Spread the remaining 1/3 cup of the marinara sauce on the bottom of a 9 X 13 baking dish. You can also use a slightly smaller baking dish such as a dish that measures 11 X 7 inches.
  • Top the marinara sauce with a layer of zucchini, then a third of the ricotta mixture, a third of the meat mixture, and a third of the shredded mozzarella cheese.
  • Repeat, arranging the zucchini slices in the opposite direction: zucchini, 1/3 ricotta, 1/3 meat mixture, 1/3 mozzarella.
  • Repeat one last time, adding one extra layer of zucchini: zucchini, ricotta, meat mixture, more zucchini, and mozzarella.
  • Bake, uncovered, until the cheese is golden, about 30 minutes. You can finish by broiling for 1-2 minutes on high to brown the cheese, if you wish and if your dish is broiler-safe. Let stand for 10 minutes before serving.

6 ounces tuna (canned) ((140 grams))
1 1/2 tablespoons bread crumbs
1 cup shredded firm mozzarella ((100 grams))
1 egg slightly beaten
1/4 cup freshly grated Parmesan cheese ((25 grams))
1 tablespoon olive oil
1/2 teaspoon salt
1-2 dashes black pepper
1/2 teaspoon parsley
2/3 cup white sauce homemade or storebought
HOMEMADE WHITE SAUCE**
1 tablespoons butter
1 tablespoon flour
1/2 pinch salt
1 1/4 cups milk ((280 grams))
1/4 cup freshly grated parmesan cheese ((25 grams))

  • Pre-heat oven to 350° (180° celsius), lightly grease a deep (8x6 inch / 20x15 centimeter) baking dish

Grilled Zucchini Lasagna made with layers of garden fresh zucchini sliced lengthwise; then grilled and layered with your favorite marinara sauce, Ricotta and Mozzarella cheeses.

2 lg. Zucchini
2 c. Marinara Sauce
1 c. Part Skim Ricotta Cheese
1 lg. Egg
1/8 tsp. Garlic Powder
1 tbsp. Fresh Parsley, chopped (plus more for garnish)
1 tbsp. Fresh Basil, chopped
2 c. Mozzarella Cheese, shredded; dived

Steps:

  • First, wash the skins on your zucchini really well to remove any excess dirt; then cut off both ends. Cut the zucchini in half horizontally; then stand it up on it's side and slice it in 1/2-inch slices vertically. Repeat for both zucchini.
  • Next, preheat your grill. (You can use either an outdoor or your indoor grill; which is what I used for this recipe. If using an indoor grill, spray the top and bottom grates with cooking spray.)Grill your zucchini until there are grill marks on both sides; approximately 2-3 minutes per side. Try not to cook it too long as you don't want them to be too mushy.
  • While the zucchini is grilling, you can make the cheese mixture by combining the ricotta cheese, egg, garlic powder, parsley, basil and some of the Mozzarella cheese. Mix will until the cheese is smooth.
  • Once your zucchini is grilled, it's time to assemble the lasagna. First, place some of the sauce on the bottom of your baking dish. (For this recipe, I used a 8x8x2 oven safe baking dish.) Next, place half of your grilled zucchini on top of the sauce.After the zucchini is in the pan, top it with half of the ricotta cheese mixture and some Mozzarella cheese. Repeat sauce, zucchini, ricotta cheese mixture for the second layer, but add the remaining Mozzarella cheese on top and sprinkle with some chopped parsley.
  • Finally, place the casserole dish in a preheated 350 degree F oven for 30 minutes or until the cheese is melted and bubbling hot.

2 cloves garlic, crushed
1 bay leaf
One 28-ounce can crushed tomatoes
One 15-ounce can tomato sauce
One 6-ounce can tomato paste
1/3 cup red wine
About 1/3 cup chopped fresh parsley
1 1/2 tablespoons sugar
1 tablespoon Italian seasoning
1/2 teaspoon ground fennel seed
Kosher salt and freshly cracked black pepper
2 summer squash (about 1 pound) sliced crosswise 1/4-inch-thick
2 zucchini (about 1 pound) sliced crosswise 1/4-inch-thick
2 tablespoons extra-virgin olive oil
16 ounces ricotta
1/2 cup whole milk
2 ounces Parmesan, freshly grated
1 large egg
1 1/2 pounds fresh mozzarella, grated
15 no-boil lasagna noodles (from one 8-ounce box)
10 fresh basil leaves

Steps:

  • Preheat the oven to 350 degrees F and position one of the racks in the center.
  • Heat the olive oil in a large saucepan. Add the garlic and bay leaf and cook for about 30 seconds, then add the crushed tomatoes, tomato sauce, tomato paste and wine. Season with parsley, sugar, Italian seasoning, ground fennel, salt and pepper. Simmer, covered, stirring occasionally, 15 to 20 minutes.
  • Heat a cast-iron grill pan over medium-high heat. Add the squash and zucchini to a large bowl, and toss with the extra-virgin olive oil, salt and pepper. Add the vegetables to the grill pan in a single layer, working in batches if necessary. Grill until softened and there are grill marks, about 4 minutes per side.
  • Mix the ricotta with the milk, Parmesan, egg, 1 cup mozzarella and a few pinches salt and pepper in a large bowl. Set aside.
  • Spread a thin layer of the pasta sauce (about a third) on the bottom of a 9-by-13-inch baking dish. Add a layer of noodles (about 5), breaking to cover the entire dish in a single layer. Layer on half of the grilled veg, then half of the ricotta mixture and another third of sauce. Repeat the layers, finishing with the veg on top. Sprinkle the remaining mozzarella on top in an even layer. Place the whole basil leaves on top.
  • Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking until lightly browned on top, another 15 to 20 minutes. Let rest for about 10 minutes before slicing.
