LEMON CRUMB-TOPPED BROCCOLI

Steps:
- In a small skillet, saute garlic in oil for 30 seconds. Stir in bread crumbs and lemon zest; cook 1 minute longer. Remove from the heat. Stir in parsley; set aside., Place broccoli and water in a microwave-safe bowl. Cover and microwave on high for 2-3 minutes or until crisp-tender; drain. Drizzle with lemon juice; toss to coat. Sprinkle with crumb mixture.

BROCCOLI WITH BROWNED BUTTERED BREAD CRUMBS
This is so delicious! A neighbor brought a baking dish of this yummyness for dinner, I just loved it! She told me the ingredients of the topping, with no proportions, and I just decided to wing it! I don't think you can screw this up! LOL! So quick and easy! But Soooo Good!!!!

Steps:
- 1. Steam the broccoli florets, to your preferred tenderness.
- 2. While the broccoli is cooking, prepare the bread crumb topping.
- 3. Melt butter over medium heat. Add the minced garlic, and cook for one minute.
- 4. Next add the bread crumbs, stirring until the crumbs are golden brown, about three minutes or so. Remove from heat.
- 5. Place steamed broccoli in a serving bowl, dot with butter, and top with bread crumb mixture.
- 6. So quick and easy, you are ready to serve!

- Steam the broccoli, until cooked (6 - 7 minutes).
- Bread Crumbs: Heat the oil in a medium skillet over medium high heat. Add garlic and cook for 1 minute. Add bread crumbs, oregano, salt and pepper and cook, stirring until the crumbs are toasted and golden brown, about 2 minutes.
- Put the broccoli in a dish, and sprinkle with the bread crumbs.

Steps:
- In small bowl, combine bread crumbs, cheese, parsley, 1 tbsp oil and garlic; set aside.
- In 12 in skillet, heat remaining 1 tablespoon oil over med heat and cook broccoli, stirring frequently, 2 minutes.
- Stir in onion soup mix blended with water.
- Bring to a boil over high heat, reduce heat to low& simmer uncovered, stirring occasionally, 8 minutes or until broccoli is almost tender.
- Add tomato, simmer an additional 2 minutes.
- Spoon vegetable mixture into 2 qt broilerproof baking dish, top with bread crumb mixture and broil 1 1/2 minutes or until crumbs are golden and cheese is melted.
